1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley

Steps:

  • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.
  • In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.
  • Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

This lightly creamy and incredibly comforting soup is all about the almost-austere interplay of chicken, broth, white rice and lemon. It's also a great way to use up leftover rice: Any variety will work. Tempering the yolks (slowly whisking hot broth into them) ensures that they will emulsify and thicken the soup, and not scramble. Use a half cup of lemon juice for an assertively tart soup, but, for a gentler effect, use the smaller amount. If you prefer, you can use an equivalent weight of chicken legs instead of thighs.

1 large yellow onion, peeled and quartered
2 carrots, peeled, trimmed and halved
2 celery stalks, halved
5 large garlic cloves, peeled
1 bay leaf
3 1/2 to 4 pounds bone-in, skin-on chicken thighs (about 8 thighs)
6 cups chicken broth or stock
Black pepper
Kosher salt
2 cups cooked white rice
1/3 to 1/2 cup fresh lemon juice (from about 2 large lemons), more as needed
4 large egg yolks
1/2 cup sour cream
1 small bunch dill, chopped

Steps:

  • Combine the onion, carrot, celery, garlic and bay leaf in a 5- to 8-quart slow cooker. Pull the skin off half of the thighs and discard it (or save to render the fat at another time). Add the chicken to the slow cooker and top with broth. Season generously with pepper. Add 1/2 teaspoon salt if you are using low-sodium broth or 1 teaspoon salt if using homemade unsalted stock. (Do not add salt now if you are using fully salted broth.) Cover and cook on low for at least 4 hours and up to 6 hours. If it's more convenient, you can let the slow cooker switch to warm after 6 hours. The soup will hold on warm for about another 2 hours before the chicken starts to dry out.
  • With a spoon or ladle, skim and discard any obvious foam and fat from the top of the soup. With tongs or a slotted spoon, remove the chicken and vegetables to a bowl and strain the broth. Discard the vegetables (or if they still have flavor, set them aside for a snack) and let the chicken cool while you finish the soup. Return the broth to the slow cooker, and switch the heat to high. Stir in the rice, cover and let the soup heat up until it is at least steaming hot, or bubbling a bit around the edges, about 10 minutes.
  • Whisk the lemon juice, egg yolks and sour cream in a medium bowl until creamy and combined. Dip a liquid measuring cup into the hot broth. While whisking constantly, very slowly drizzle about 2 cups of hot broth into the lemon juice mixture until fully combined and smooth. Pour this mixture into the slow cooker with the rest of the soup and whisk for another minute or so, until the soup starts to thicken enough to lightly coat the back of a spoon. Coarsely shred the chicken meat and add it into the soup, discarding the bones and skin. Stir in the dill and taste the soup. Add salt if necessary, and more lemon juice and black pepper if you like. If the soup isn't hot enough, cover and let heat on high for another 10 minutes.

This is a lemon herb garlic chicken dish which is made in a slow cooker to contain it's natural flavours. When we served it the meat fell away from the bone. If you wish to increase the celery and carrot you may do so without dramatically change the flavour of the dish. I normally remove the skin off the drumstick, which I recommended with this dish but feel free to leave it on. Everyone enjoyed it in our house hold, hope you will enjoy it.

1 kg chicken drumstick, with bone
1 stalk celery, chopped
1 carrot, chopped
1 1/4 cups chicken stock, liquid stock

  • In a hot non-stick pan, add butter and melt.

2 teaspoons coriander seed
1/2 cup flour

2 onions, chopped
2 cloves garlic, minced
1/2 cup white wine
1 1/2 cups chicken broth

1 preserved lemon, homemade or purchased, finely chopped

Steps:

  • Heat a medium skillet, preferably cast-iron, over medium-high heat. Add the cumin seed and stir until aromatic, about 30 seconds. Turn off the heat, add the coriander seed, and stir for 30 seconds. Scrape the spices into a mortar with a pestle or into a spice grinder and grind until the cumin and coriander are coarsely ground. Mix with the flour, salt, and pepper in a medium large mixing bowl and dredge the chicken pieces in the seasoned flour mixture; pat off the excess flour and reserve the mixture.

Keep warm for as long as 4 hours.

I couldn't find a slow cooker recipe for chicken that was quite right at the time, so I made one up, and it has been a hit! Browning the chicken first avoids the strange pale chicken common to slow cooked chickens.

2 tablespoons olive oil
1 (3 pound) whole chicken
salt and pepper to taste
2 lemons
1 onion, coarsely chopped
1 teaspoon dried thyme
½ cup dry white wine
1 teaspoon crushed garlic

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then fry in the hot oil until browned on all sides.
  • Meanwhile, chop one of the lemons into chunks and place into a slow cooker along with the onion, thyme, white wine and garlic. Cut the remaining lemon into quarters and stuff into the cavity of the chicken. Place the chicken into the slow cooker breast side down on top of the onion and lemon mixture. Cover and cook on Low for 6 hours, or for 3 hours on High. Chicken is done when the legs move easily in their sockets and the internal temperature of the breast has reached 160 degrees F (70 degrees C).

1 (28 ounce) can diced tomatoes (do not drain)
1 (16 ounce) bag baby carrots
1 onion (diced)
4 Tablespoons flour
1 Tablespoon garlic powder
2 teaspoons paprika
3 teaspoons lemon pepper
1/4 teaspoon salt
3 Tablespoons olive oil
8 chicken drumsticks

Steps:

  • Lightly grease slow cooker with non stick cooking spray.
  • Place the quartered potatoes in the bottom of the slow cooker. Pour diced tomatoes over the top.
  • Add in baby carrots and sliced onion pieces.
  • In a medium bowl combine the flour, garlic powder, paprika, lemon pepper, salt, and olive oil.
  • Rub each chicken piece with the spice mixture and place in the slow cooker.
  • Cook on low setting for 6-7 hours.

Steps:

  • Place beans and shallots in slow cooker. Top with chicken pieces; sprinkle with dill weed and pepper. Mix broth and lemon juice; pour over chicken. Cover with lid.
  • Cook on LOW 4 to 5 hours (or on HIGH 2 to 2-1/2 hours).

1 large head broccoli, chopped into florets (or 1 lb. bag frozen florets)

  • 1. Cut chicken into large chunks. Dredge in flour and shake off excess, 2. Brown chicken in a skillet with olive oil. (The chicken does not have to be cooked through; just browned on the outside.) 3. Place chicken into crockpot. Mix the rest of the ingredients (except for broccoli and rice) in a separate bowl and pour over the top of chicken pieces. Stir. 4. Cover and cook on high for 4 hours or low for 6-8 hours. 5. 2 leeks white part only sliced
6 clove garlic minced
1 large onion chopped
1 large fennel bulb chopped
1/2 c chicken broth
1/2 c white wine
2 meyer lemons quartered
2 Tbsp rosemary minced
salt and pepper to taste
2 tsp butter
1/2 tsp ground coriander
3/4 c panko bread crumbs
16 oz cooked and drained noodles

  • 2. Melt butter in pan add panko and coriander. Brown a couple of minutes.

Steps:

  • 1-Peel and slice red onion and add to the bottom of the slow cooker in one layer.
  • 2-Add chicken thighs on top in one layer.
  • 3-Wash and half baby potatoes and add to slow-cooker.
  • 4-In a small bowl mix zest of 1 lemon, juice of that same lemon, olive oil, honey, thyme, sea salt, pepper and finely chopped garlic and then pour over ingredients in slow cooker.
  • 5-Put lid on and secure, then set to high for 3-4 hours or low for 6-8 hours (depending on your schedule. 3 hours on high being the minimum and 4 the maximum and 6 hours being the minimum and 8 hours the maximum when set on low).
  • 6-15-20 minutes before the time is over, set slow cooker to high and add asparagus on top and put lid back on. The thicker the asparagus, the longer it will take.
  • 7-optional but recommended: 5 minutes before the time is over, remove the chicken thighs, place on a baking sheet and put under the broiler on high for 3-5 minutes or until the skin is golden.
  • 8-Enjoy!

Bring to boil and pour over chicken. Cook in slow cooker on high for 3 hours or low for 6 hours. (Best to start before work and add brown rice at lunch) Add parsley 15-30 minutes before end of cook time.
