This easy, slow-cooked chili is not your average "bowl of red." With chicken, sweet potatoes, tomatillo salsa, and pinto beans, it's more of a cross between chile verde (usually made with pork) and white chicken chili. Just a few ingredients and effortless prep gives you a flavorful and satisfying "bowl of green."

3 pounds boneless, skinless chicken thighs
2 large sweet potatoes, unpeeled, cut into 1" cubes (about 2 pounds)
1 (16-ounce) jar tomatillo salsa (salsa verde) (about 2 cups)
2 cups low-sodium chicken broth
2 teaspoons ground cumin
2 teaspoons (or more) kosher salt
1 teaspoon (or more) freshly ground black pepper
2 cans low-sodium pinto beans, drained, rinsed
Sliced avocado, cilantro leaves, sour cream, and/or finely chopped onion (for serving; optional)

A 6-quart (or larger) slow cooker

Steps:

  • Mix chicken, potatoes, salsa, broth, cumin, salt, and pepper in slow cooker. Cover and cook until chicken shreds easily with a fork and sweet potatoes are tender, about 4 hours on high or 6 hours on low. Add beans during last 30 minutes of cooking. Shred chicken in slow cooker with 2 forks. Taste and season with salt and pepper, if needed. Serve topped with avocado, cilantro, sour cream, and/or onion, if using.

I was looking for a quick and easy slow cooker soup that was hearty, flavorful, and satisfying, and I created this. I hope you enjoy it as much as my family does! Top with a dollop of sour cream, a little Monterey Jack cheese, and some broken up tortilla chips, if desired.

2 tablespoons canola oil
2 skinless, boneless chicken breasts, cut into cubes
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon ground cumin
½ teaspoon ground white pepper
¼ teaspoon cayenne pepper
1 (8 ounce) can tomato sauce
1 (4 ounce) can chopped green chilies
1 (15 ounce) can pinto beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
2 cups chicken broth
1 (10.75 ounce) can cream of chicken soup

Steps:

  • Pour canola oil into slow cooker and tilt to coat bottom of crock. Put chicken into bottom of slow cooker.
  • Mix salt, chili powder, onion powder, garlic powder, cumin, white pepper, and cayenne pepper together in a bowl; sprinkle about half the mixture over the chicken. Turn the chicken and sprinkle remaining spice mixture over the chicken.
  • Layer tomato sauce, green chiles, pinto beans, and diced tomatoes atop the chicken, respectively.
  • Whisk chicken broth and cream of chicken soup together in a bowl; pour evenly over the diced tomato layer.
  • Cook on High for 1 hour. Stir to spread ingredients evenly throughout the soup. Continue cooking, stirring occasionally, for 5 hours more.
