1 lb beef chuck roast, trimmed of fat, cut into 3/4-inch pieces
2 tablespoons Gold Medal™ all-purpose flour
1 tablespoon vegetable oil
1 bottle (12 oz) dark beer, room temperature
1 large onion, chopped (1 cup)
3 cloves garlic, finely chopped
2 cans (14.5 oz each) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 can (16 oz) pinto beans, drained, rinsed
1 can (15 oz) Progresso™ red kidney beans, drained, rinsed
2 tablespoons tomato paste
2 tablespoons chili powder
1 tablespoon unsweetened baking cocoa
1 teaspoon salt
1 cup shredded sharp Cheddar cheese (4 oz)

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In large resealable food-storage plastic bag, place beef and flour; seal bag and shake to coat. In 12-inch skillet, heat oil over medium-high heat. Cook beef in oil, stirring occasionally, until browned on all sides. Place beef in slow cooker.
  • Add beer to skillet, stirring and scraping to loosen brown particles. Cook 1 minute. Pour over beef in slow cooker. Add remaining ingredients except cheese.
  • Cover; cook on Low heat setting 8 hours. Sprinkle individual servings with cheese.

I believe this one carries a good challenge to all of those out there. This has been a favorite always of my family and friends, so let me know what you think and let's create a melting pot for the perfect slow cooker chili dish. Serve topped with sour cream, shredded Cheddar cheese, chopped chives, hot sauce, and sliced jalapenos (or habanero if you like the heat).

½ large onion, coarsely chopped
2 teaspoons finely chopped fresh garlic
1 ½ pounds ground beef
2 tablespoons chili powder

1 pound lean ground beef
1 tablespoon olive oil
1 1/2 cups chopped onions (1 medium to large onion)
2 bell peppers, diced
2 cloves garlic, chopped
3 cups crushed tomatoes
1 jalapeno pepper, chopped
1/4 cup chili powder
1 teaspoon ground cumin
3 cups kidney beans
1 cup beer

Steps:

  • Prepare the ingredients: Chop the cloves of garlic, onion, peppers, and cilantro. Set them aside. Heat 1 tablespoon olive oil in a skillet over medium-high heat.
  • Once the skillet is hot, add the ground beef and reduce the heat to medium. Cook the beef breaking it up into pieces until it begins to turn brown.
  • Add the peppers and onions and cook for a few minutes until the vegetables begin to soften.
  • Stir in the chili powder and ground cumin. Reduce the heat and cook the mixture for a few minutes longer.
  • Place the beef mixture into the crockpot and add the beans, beer and crushed tomatoes.
  • Gently stir the ingredients together, cover and cook on low for at least 4 hours.

1 lb ground pork
1 lb boneless pork shoulder, cut into 1/2 inch pieces
3 cups chopped onions
1 3/4 cups chopped green bell peppers
3 garlic cloves, minced
3 tablespoons tomato paste
1 cup beer, lager-style
1/2 teaspoon salt, divided
3 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons dried oregano
3/4 teaspoon freshly-ground black pepper
6 tomatillos, quartered
2 bay leaves
2 (12 1/2 ounce) cans plum tomatoes, undrained and chopped
1 (15 ounce) can pinto beans, no-salt, drained
1 (7 3/4 ounce) can mexican hot tomato sauce
1 smoked ham hock, about 8 oz
1 1/2 tablespoons sugar
1/2 cup finely chopped cilantro
1/2 cup finely chopped green onion
1/2 cup crumbled queso fresco, about 2 oz
8 lime wedges

Steps:

  • Heat a large non-stick skillet over medium-high heat and coat with cooking spray.
  • Add ground pork and cook for 5 minutes or until browned, stirring to crumble. Drain well and transfer to slow cooker.
  • Recoat skillet with cooking spray. Add pork shoulder and cook 5 minutes or until lightly browned. Transfer pork to slow cooker.
  • Recoat skillet with cooking spray. Add onion and bell pepper, and saute 8 minutes, stirring frequently.
  • Add garlic, saute 1 minute, then add tomato paste and cook 1 minute, stirring constantly.
  • Stir in beer, cook a minute or two, then pour all over the meat in the slow cooker.
  • Add 1/4 tsp salt, chili powder, cumin, oregano, black pepper, tomatillos, bay leaves, tomatoes, pinto beans, tomato sauce and ham hock to the slow cooker.
  • Cover and cook on HIGH for 5 hours until meat is tender or on LOW for 8 hours.
  • Remove and discard ham hock and bay leaves.
  • Add 1/4 tsp salt and the sugar, stir well.
  • Top each serving with 1 tbl each of cilantro, green onions and queso fresco. Serve with a lime wedge.
  • This can also be done on the stove, using 12 ozs beer and simmering, covered, for 2 1/2 to3 hours or until the pork is tender.
