1 ½ pounds cubed beef stew meat
salt and ground black pepper to taste
1 onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
¼ cup water
1 tablespoon dried chives
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 cube beef bouillon
½ cup red wine
1 tablespoon cornstarch
1 tablespoon all-purpose flour
1 (8 ounce) container sour cream
1 (8 ounce) package sliced fresh mushrooms
4 ounces cream cheese
½ cup chopped fresh parsley

Steps:

  • Spread beef stew meat into bottom of slow cooker crock; season with salt and pepper. Layer onion over the beef. Pour mushroom soup and water over the beef; add chives, garlic, Worcestershire sauce, and beef bouillon.
  • Whisk red wine, cornstarch, and flour together in a small bowl; pour over the mixture in the slow cooker.
  • Cook on Low for 6 to 7 hours. Stir sour cream, mushrooms, cream cheese, and parsley into the beef mixture; continue cooking for 1 hour more.

2 pounds beef chuck, trimmed of excess fat and cut into thin slices (about 1/2 inch thick and 3 inches long)
1 large onion, chopped (about 2 cups)
1 pound white mushrooms, trimmed and halved (or quartered, if large)
Coarse salt and ground pepper
2 tablespoons cornstarch
1/2 cup reduced-fat sour cream
2 tablespoons Dijon mustard
Cooked thin egg noodles, for serving
Chopped fresh dill, for garnish (optional)

Steps:

  • In a 5- to 6-quart slow cooker, toss beef, onion, and mushrooms with 1 1/2 teaspoons coarse salt and teaspoon pepper. Cover, and cook on low until meat is tender, about 8 hours (or on high for 6 hours).
  • In a 2-cup glass measuring cup, whisk cornstarch with 2 tablespoons water. Ladle 1 cup cooking liquid into measuring cup; whisk to combine. Pour into a small saucepan, and bring to a boil; cook until thickened, about 1 minute. With slow cooker turned off, stir in cornstarch mixture, then sour cream and mustard. Serve beef over noodles; sprinkle with dill, if desired.

1 1/2 pounds beef chuck roast
2 tablespoons all-purpose flour
1 teaspoon sweet paprika
1 teaspoon dried thyme
Kosher salt and freshly ground pepper
1 onion, chopped
2 cloves garlic, minced
8 ounces sliced mushrooms
1 1/4 cups mushroom or vegetable broth
12 ounces whole-wheat egg noodles
1 tablespoon unsalted butter
3/4 cup sour cream
Chopped fresh parsley, for serving

Steps:

  • Trim the excess fat from the chuck roast, then cut the meat into quarters. Transfer to a 6-quart slow cooker and toss with the flour, paprika, thyme, 1/2 teaspoon salt and a few grinds of pepper. Slow Cooker Beef Stroganoff with a Twist image

I came across this recipe from a Face Book post BUT I put my own twist on it as I do almost everything that I cook. The non-traditional addition of the frozen peas to this stroganoff really makes it pop! I tried it and LOVED it! Hope you do too!

1-2 lb beef stew meat
2 can(s) condensed golden mushroom soup
1 large onion
2 Tbsp worcestershire sauce
1/2 c water
4 oz cream cheese
3 tsp garlice powder
1 pkg white mushrooms (quartered)
3 tsp dried parsley
2 tsp white sugar (to cut the sourness)
3 Tbsp (heaping) spoonfuls of sour cream (i usually just use a big spoon)
2/3 c frozen peas
4 c egg noodles or broad dumplings

Steps:

  • 1. Cut onion into decent sized slices and wash & quarter mushrooms. In the slow cooker, stir all of the ingredients together (except the meat, cream cheese, sour cream and dried parsley)
  • 2. Once combined, add the meat and mix together. I made sure that my cubes of meat were smaller than normal, in order to cook better. Cook on Low for about 8 hours.
  • 3. Cut up or cube the cream cheese & add to the slow cooker (stir the cream cheese until pretty well combined & melted), add the 3 spoonfuls of sour cream & dried parsley and add the frozen peas just before serving and turn the slow cooker on High (replace lid) and cook for an additional 10-15 minutes. Serve over cooked egg noodles and Enjoy!
