Beef and Baked Bean Stew | Slimming & Weight Watchers Friendly image

A quick and hearty one pot stew that's packed with slow cooked beef, plenty of veg and baked beans.

500 g diced beef (all visible fat removed)
2 410g tins of baked beans
1 large carrot (peeled and sliced)
1 onion (peeled and chopped)
2 medium potatoes (peeled and quartered)
1 beef stock cube
700 ml boiling water
1 beef stock pot
2 tbsp Henderson's Relish
1/2 tsp black pepper
low calorie cooking spray
salt and pepper, to taste

Steps:

  • Preheat the oven to 170°C.
  • Spray a lidded ovenproof frying pan with low calorie cooking spray and cook the beef for 2-3 minutes, turning halfway to ensure an even colour.
  • Dissolve the stock cube in the boiling water. Add the black pepper, carrots, onions, potatoes, beef stock, stock pot and Henderson's Relish to the pan.
  • Stir the baked beans into the pan, cover with a lid and put in the oven for 3 hours. Remove the lid and cook for a further half an hour.
  • Season to taste with salt and black pepper and serve.

1 medium onion, coarsely chopped (1/2 cup)
1 can (16 oz) baked beans, undrained
1 can (14.5 oz) stewed tomatoes with Italian herbs, undrained
1 box (12 oz) frozen cooked Italian-style meatballs
1 medium zucchini, halved lengthwise, sliced (2 cups)
1 cup frozen mixed vegetables, thawed

Steps:

  • In 3 1/2- to 4-quart slow cooker, mix onion, baked beans, tomatoes and meatballs.
  • Cover; cook on Low heat setting 6 to 7 hours.
  • Stir in zucchini and mixed vegetables. Increase heat setting to High. Cover; cook 20 to 30 minutes longer or until vegetables are tender.

1 pound dry great Northern beans
8 cups water
4 ounces diced salt pork
1 cup chopped onion
½ cup molasses
⅓ cup packed brown sugar
1 teaspoon dry mustard
⅛ teaspoon ground black pepper

Steps:

  • The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.
  • In the morning, drain off liquid, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker. Stir in the salt pork, onion, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving.

8 cups low-sodium chicken or vegetable broth
1 pound mix of dried beans, such as navy and pinto, rinsed
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 stalks celery, diced
2 carrots, diced
2 cloves garlic, minced
1 medium yellow onion, chopped
1 bay leaf
A few sprigs fresh thyme
8 ounces dried barley
8 ounces baby spinach
Toasted crusty bread or baguette, for serving

Steps:

  • Combine the broth, bean mix, salt, pepper, celery, carrots, garlic, onions, bay leaf, thyme and 2 cups water in a slow cooker. Cover and cook on low for 7 hours. Add the barley and, if the broth looks low, another cup of water. Cover and cook on low an additional 1 hour (8 hours total).
  • Just before serving, stir in the spinach to wilt. Serve in a big bowl with toasted crusty bread or baguette.
