CORNBREAD TOPPED SLOPPY JOE CASSEROLE
A hearty cornbread topping creates the "bun" for this delicious Sloppy Joe casserole.

Steps:
- Heat oven to 350°F. In 10-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain. Stir in tomato sauce, brown sugar, Worcestershire sauce and mustard. Cook 2 to 3 minutes, stirring frequently, until boiling; keep warm.
- In small bowl, stir corn bread mix, milk, oil and egg just until moistened (batter will be lumpy).
- Spoon hot beef mixture into 8-inch square (2-quart) glass baking dish. Sprinkle with 3/4 cup of the cheese. Spoon corn bread batter evenly over top.
- Bake 25 to 35 minutes or until toothpick inserted in center of topping comes out clean. Sprinkle remaining 1/4 cup cheese over hot casserole.

I had a craving for sloppy joes, but I didn't want to deal with my kids making a mess by doing this sandwich style. A no mess casserole.

Steps:
- Brown beef with onion, and garlic make sauce according to package directions (adding tomato paste and water); mix into beef.
- Mix cornbread mix, eggs, butter, salt, and canned corns.
- Pour corn bread mixture into prepared 9X13 inch casserole.
- Top with meat mixture.
- Sprinkle with cheese.
- Bake at 350°F until done, 45 minutes, until bread at the edges begin to brown.

- Heat oven to 400°F. Spray 12 muffin cups with cooking spray.
- In large bowl, mix Corn Muffin ingredients until moistened (batter will be lumpy). Pour batter into muffin cups, filling each half full. Bake 15 to 17 minutes or until golden and toothpick inserted in center comes out clean. Cool completely.
- Meanwhile, in 10-inch skillet, heat olive oil over medium-high heat. Add beef; cook 5 to 7 minutes, stirring frequently, until browned. Add salt, pepper, onion, bell pepper and garlic; cook about 5 minutes or until onions are translucent. Stir in ketchup, mustard and brown sugar.
- To assemble, cut tops off cooled muffins. Top each muffin with approximately 1/3 cup of sloppy joe mixture, some cheese and chives. Serve immediately.

- 1. Spray 8" square dish with Pam. Cook and stir beef in skillet for 7 minutes or until done. Drain, add Manwich heat until hot. Spoon into dish.
- 2. Stir together muffin mix, milk, Fleischmann's and Egg Beaters in bowl. Spoon over beef mixture, Bake at 400F for 15 minutes or until set.
SLOPPY JOE CORNBREAD
My mom used to make this and I have no idea where she got the recipe. Its a good, quick supper, and economical, too. Mom was able to make a pound of hamburger serve 6 in so many ways. NOTE: Picture shows this recipe before adding cheese topping.

- 1. Preheat oven to 350 degrees. Grease bottom only of a 9 by 13 inch pan. Prepare cornbread mix as directed on package using the milk and egg. Spread in prepared pan. Batter will be thin. Bake for just about 8 minutes or until golden brown.
- 2. While cornbread is baking brown beef and onions in a skillet. Drain. Stir in tomato paste, seasoning mix, drained kidney beans, and water. Bring to a boil. Reduce heat and cook at a simmer for about 10 minutes. Add salt and pepper as desired.
- 3. Pour meat mixture over warm cornbread. Sprinkle cheese on top. Broil just long enough to melt cheese. Serve by cutting in squares.
