A copycat of Skyline Chili, true Cincinnati chili, except it's less greasy! I combine all the dry spices times ten and keep the "Skyline Spice Mix" in a jar cannister. One batch of chili will use 3/8 cup of spice mix. The spice mix is also tasty as a meat rub for steak, pork and chicken.

2 lbs ground beef
2 cups chopped onions
4 cups beef stock
2 (8 ounce) cans tomato sauce
2 -3 tablespoons chili powder
2 tablespoons apple cider vinegar
2 teaspoons Worcestershire sauce
1/2 ounce grated unsweetened chocolate or 2 3/4 tablespoons cocoa
2 teaspoons instant minced garlic
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground red pepper or 1/2 teaspoon cayenne pepper
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 bay leaves or 1/8 teaspoon bay leaf powder
chopped onion (optional)
finely shredded cheddar cheese (certainly NOT optional)
kidney bean (optional)

Steps:

  • Brown ground beef and onion.
  • Drain.
  • Add beef stock to beef mixture and simmer 10 minutes.
  • Add remaining 13 ingredients, simmer uncovered 1 hour.
  • Remove bay leaf, skim off extra fat.
  • Serve over hot spaghetti, or hot dogs in buns for chili dogs.
  • Top with plenty of cheese and other optional toppings.

2 pounds lean ground beef
1 onion, chopped
2 (8 ounce) cans tomato sauce
1 clove garlic, crushed
1 dash Worcestershire sauce
1 pinch ground cinnamon
1 teaspoon distilled white vinegar
3 tablespoons chili powder
1 pinch cayenne pepper
salt and pepper to taste
1 pound uncooked spaghetti
1 cup shredded Cheddar cheese
1 cup kidney beans
½ cup olives
¼ cup chopped onion

Steps:

  • Brown beef and onion in a large skillet over medium high heat. Place browned mixture in a large pot and stir in the tomato sauce, garlic, Worcestershire sauce, cinnamon, vinegar, chili powder, cayenne pepper, salt and pepper. Simmer, uncovered, over low heat for 1 1/2 hours.
  • When meat mixture has about 20 minutes cooking time left, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
  • Serve meat mixture over cooked spaghetti topped with cheese, beans, olives and chopped onion.

2 pounds ground chuck
2 medium onions, finely chopped
5 cloves garlic, minced in a garlic press
1 (15 oz.) can tomato sauce
2 Tablespoons cider vinegar
1 Tablespoon Worcestershire sauce
10 peppercorns, ground
8 whole allspice, ground
8 whole cloves, ground
1 large bay leaf
2 teaspoons salt
2 teaspoons cinnamon
1 teaspoon cumin
1 and 1/2 teaspoons cayenne pepper
1/2 oz. unsweetened chocolate, grated

Steps:

  • Bring water to boil in a 4-6 quart pot. Add the ground chuck (don't brown it first, just add it to the boiling water raw.) Stir until seperated and reduce heat to simmer. Add onions and garlic tomato sauce apple cider vinegar Worcestershire sauce pepper allspice, cloves, bay leaf, salt, cinnamon and cumin cayenne pepper and grated chocolate Return to a boil. Reduce to a low simmer for 2 and 1/2 hours, uncovered. Stir frequently. Cool uncovered and refrigerate over night. Skim most of the fat off the top and discard. Discard bay leaf. Reheat and serve over hot spaghetti noodles, cooked al dente. 1 (8 ounce) package shredded cheddar cheese
1/4 cup onion, diced (optional)

Steps:

  • Spread cream cheese on bottom of casserole dish.
  • Sprinkle diced onions (optional).
  • Pour Skyline chili over onions (opt.) and cream cheese.
  • Cover with cheddar cheese.
  • Conventional oven: Heat at 350 degrees until cheese is bubbling but not brown, about 10 minutes.
  • Microwave oven: Heat on high for 2 minutes or until cheese is melted.
  • Serve warm with Corn chips or Fritos corn chips.

When I went vegetarian I came up with this Skyline lentil chili to give me that Skyline taste. I use green or black lentils as the protein where standard Cincinnati-style would use ground meat. Even though I've gone back to eating meat this is still my preferred way to get my Skyline fix.

1 can of skyline chili (10.5oz)
1-2 c shredded mild cheddar cheese

Steps:

  • 1. Spread cream cheese to cover bottom of pie plate or shallow 8x8 dish.
  • 2. Pour chili over cream cheese.
  • 3. Cover with shredded cheddar. Microwave for 3-5 minutes or until cheese is melted. People also cook this in the oven but I never have since the microwave is much faster and usually when I'm making this people are ready to eat it:). Serve with tortilla chips. Enjoy!!

•2 lbs ground beef
•2 cups crushed tomato
•2 yellow onions, diced
•4 garlic cloves, minced
•1 tbsp worcestershire sauce

•1 tsp ground cumin
•2 tbsp cider vinegar
•1 whole bay leaf

Steps:

  • 1. 1.Add beef and water to a 4-quart pot. Bring to a simmer while stirring until the ground beef is in very small pieces. Simmer for 30 minutes and add all the rest of the ingredients. 2.Simmer on low, uncovered, for 3 hours. Add water as needed if the chili becomes to thick. 3.Refrigerated the chili overnight, and the next day remove the layer of fat from top before reheating and serving. Recipe is from my grandmother. It's all part of a family tradition. Every year on Thanksgiving, our entire extended family gets together at a state park and stay in cabins; usually in West Virginia, Kentucky, or Indiana. Instead of turkey on Thanksgiving day, we all have Cincinnati Chili. Although this recipe calls for ground beef, it can be made with ground turkey instead. If you've ever had Skyline Chili or Goldstar from Cincinnati, this recipe is a little different. It has a kick behind it that Skyline and Goldstar don't have.

  • Directions: In a Dutch oven over medium-high heat, heat oil until shimmering. Add onions and cook until soft and browned around edges, about 8 minutes. Add garlic, tomato paste, chili powder, oregano, cinnamon, cocoa powder, salt, pepper, and allspice and cook until fragrant, about 1 minute. Add chicken broth, tomato sauce, vinegar, and sugar; stir until combined. Add beef. Crumble the meat with the edge of a wooden spoon to break apart into tiny pieces so no clumps remain. Cincinnati Chili is a unique blend of spices and ground beef, cooked without beans, and typically served atop a pile of spaghetti noodles with a heap of shredded cheese to finish it off. This is a copycat of the famous Skyline Chili recipe!

1 1/2 pound lean ground beef
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 onion, diced
4 cups water
1 (6 ounce) can tomato paste
1/4 cup chili powder
2 Tablespoons apple cider vinegar
1 Tablespoon Worcestershire sauce
1 Tablespoon cocoa powder
1 teaspoon cinnamon
1 teaspoon cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon allspice
1/4 teaspoon cloves
3 cloves garlic, minced
1 bayleaf
2 Tablespoons sugar
Grated cheddar cheese, is a must. Other optional toppings are diced onion, kidney beans, oyster crackers and hot sauce. Serve in a bowl, on a hot dog or over spaghetti noodles. Optional side: a traditional Greek salad.

Steps:

  • In a large Dutch oven, whisk together water and tomato paste.
  • Add the raw ground beef to the mixture by breaking it apart and crumbling it with your fingers.
  • Add in all of the other ingredients, and stir to combine. Bring it to a boil and reduce the heat to a low simmer, cover the pot and let simmer for 2 hours, stirring occasionally.
  • Remove the chili from the stove, and cool. Transfer the covered pot to the refrigerator, and chill overnight.
  • The next day, skim the grease from the top of the chili, before warming it to serve.

The greatest way to make chili with deer meat. You can adjust this recipe to suit your preferences, but the key is using the pork sausage to give you the fatty flavor that you miss with the lean deer meat. I don't add beans, but some people (like my dad) add red kidney beans as well.

1/2 lb jimmy dean premium pork hot sausage (comes in 1 lb rolls of breakfast sausage)
1/8 cup butter
4 (15 ounce) cans of skyline chili
1 lb angel hair pasta (or any type of pasta or macaroni)
mild cheddar cheese, finely shredded
oyster crackers
1 onion, minced
Frank's red hot sauce

Steps:

  • In a large pot, put in about a quarter-stick of butter and let it melt. Turn the pot over and tilt it around so that the butter coats the entire bottom of the pot, and all around the sides as it melts. This will make it so that the Chili won't crust up and burn to the sides of the pot. Once the butter is melted, begin to heat up Cans of Chili on medium/high heat. Add Venison and Jimmy Dean sausage immediately (no need to brown it first, as the boiling chili will cook it). The meat can even be frozen when you add it, which is what makes this recipe so fast and easy.
  • Keep this pot over medium heat until it begins to boil. When the chili begins to boil, reduce the heat slightly so that it just barely does not boil.
  • Stir the pot regularly and leave it at this heat (just barely not boiling) for about 20 to 30 minutes or until it reaches desired thickness.
  • Boil a separate pot of water and add pasta. Cook pasta until it is done.
  • Chop up an onion into small pieces.
  • To serve, fill a bowl with pasta, then cover with chili, then cover the chili with cheese immediately so that it melts, then add onions (if desired) then oyster crackers. If you want it to be spicier, add Frank's Red Hot sauce.

2 tablespoons cider vinegar
2 tablespoons chili powder
1 tablespoon brown sugar
2 teaspoons unsweetened cocoa

1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1 teaspoon salt
1/2 teaspoon pepper
3 cloves garlic, (chopped)
1 large onion, (diced)

1 qt water
2 med onions
16oz tomato sauce
1/2 teas ground allspice
1 1/2 teas red pepper
1 tsp cumin
3-4 TBSP chili powder
1/2 oz unsweetened chocolate
2 lbs ground beef
4 garlic cloves
2 TBSP cider vinegar
1 bay leaf
5 whole cloves
2 teas worcestershire
1 1/2 teas salt
1 teas cinnamon

Steps:

  • Boil beef in water for 30 minutes. Add all other ingredients. Bring to boil. Reduce heat and simmer uncovered for 3 hours. Serve over spaghetti with cheddar cheese and onions. Beans if desired.

2 lbs lean ground beef
1 large onion, finely chopped
15 ounces tomato sauce
32 ounces beef stock
2 tablespoons chili powder
1 tablespoon minced garlic
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon ground peppercorn
2 teaspoons cinnamon
1 teaspoon cumin
1 teaspoon salt
1 teaspoon allspice
1/2 teaspoon red pepper (cayenne)
1/2 teaspoon seasoned pepper
1/2 teaspoon ground cloves
2 ounces unsweetened chocolate
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 bay leaf
1 tablespoon vegetable oil

Steps:

  • 1 - simmer oil, onion and minced garlic in dutch oven until softened, approx 5 minutes after oil is sizzling.
  • 2 - add beef stock and ground beef, break up beef & onion with a wisk into fine texture, simmer uncovered for 20 minutes.
  • 3 - add all remaining ingredients and simmer uncovered for 2 hours. stir frequently.

  • 2-way: serve over spaghetti.
  • 3-way: serve over spaghetti and top with cheddar cheese.
  • 4-way: serve over spaghetti and top with cheddar cheese and onion.
  • 5-way: serve over spaghetti and top with cheddar cheese, onion, and beans.
  • note: this chili tastes even better after refrigerating overnight.
