10 ounces grape tomatoes, halved
2 medium avocados, ripe, peeled, cored and diced
1.5 cups fresh corn
1 head Romaine lettuce, chopped
1/2 cup crumbled Cotija cheese
1 cup low-fat plain Greek yogurt
1/4 cup light mayo
1/4 cup buttermilk (add more if needed)
2 tablespoons fresh lime juice
2 chipotle chile peppers in abdob
1 clove garlic
2 teaspoons dried parsley
1/2 teaspoon onion powder
1/2 teaspoon dried dill
1/2 teaspoon dried chives
1/4 teaspoon paprika
1 salt and pepper

Steps:

  • Add all salad ingredients to a large bowl and gently toss. Plate and serve with Chipotle-Lime Ranch
  • Add all ingredients to a food processor and pulse until chipotle peppers are well minced. Add in a few more tablespoons of buttermilk to thin as needed. Store in refrigerator in an airtight container.

2 egg whites
2 boneless skinless chicken breasts (4 oz each)
1/2 cup Progresso™ plain panko crispy bread crumbs
1 teaspoon Italian seasoning
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon salt
2 tablespoons balsamic vinegar
1 teaspoon sugar
1/2 teaspoon ground black pepper
1/8 teaspoon salt
1 teaspoon olive oil
1/2 cup red onion, thinly sliced
4 cups baby arugula, from 5-oz container
1 1/2 cups quartered cherry tomatoes
2 tablespoons shaved Parmesan cheese

Steps:

  • Line cookie sheet with foil; top with wire rack. Spray rack with cooking spray.
  • In small bowl, lightly beat egg whites with fork; set aside. Place chicken between 2 sheets of plastic wrap, and pound to about 1/4 inch. Add to bowl with egg whites, and coat thoroughly.
  • Move oven rack 8 inches from heating element. Heat broiler to high. In small bowl, mix bread crumbs, Italian seasoning and pepper flakes. Let excess egg white drip from chicken, then sprinkle chicken with 1/8 teaspoon salt. Add chicken to bowl with bread crumb mixture, pressing onto chicken. Place on rack. Broil 5 to 6 minutes; turn, and broil 3 to 5 minutes on other side or until chicken is cooked through and coating begins to brown.
  • Meanwhile, in large bowl, mix vinegar, sugar, pepper, 1/8 teaspoon salt and the oil. Add onion, and toss to coat. Let stand until chicken is finished cooking, then add arugula, and toss to coat.
  • Divide salad between 2 plates. Top with chicken breast, then tomatoes, followed by Parmesan cheese. Serve immediately.

2 tsp olive oil
juice 1 lemon
1 large Romaine or Cos lettuce , chopped into large pieces
1 punnet salad cress
4 hard-boiled eggs , peeled and quartered
25g parmesan , finely grated
50g anchovy fillets, half chopped, half left whole
170g pot fat-free Greek yogurt

Steps:

  • Put the chicken breasts in a large bowl with the olive oil and 1 tbsp lemon juice, then season. Heat the grill to high. Put the chicken breasts on a foil-lined tray and cook under the grill for 10-12 mins until golden and cooked through, turning once during cooking. Transfer to a plate or board and slice.
  • Arrange the lettuce, cress and eggs on a platter or serving plates and top with the cooked chicken. Mix together the Parmesan, chopped anchovies, yogurt and remaining lemon juice, season to taste and pour over the salad. Arrange the whole anchovy fillets on top of each salad.

WALDORF SALAD:

1 cup seedless red grapes, halved
1 cup apple, unpeeled and diced
1 cup celery, diced

  • Ranch dressing: In a small bowl, add 1/2 cup ranch dressing. Mix in honey and mustard. Refrigerate for at least 1/2 hour before using. Refrigerate the remaining ranch dressing for other uses. 3 to 4 tablespoons lemon juice
3 to 4 tablespoons apple cider vinegar

1 teaspoon kosher salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
