2 tablespoons vegetable oil
4 pork chops (1/2 inch thick), trimmed
2 tablespoons all-purpose flour
⅓ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon pepper
4 Yukon Gold potatoes, thinly sliced
2 medium onions, sliced
3 cubes beef bouillon
¾ cup hot water
1 tablespoon lemon juice

Steps:

  • Heat oil in a large skillet over medium heat. Coat the pork chops with flour, and place in the skillet. Brown about 4 minutes on each side.
  • In a small bowl, mix the Parmesan cheese, salt, and pepper. Sprinkle 1/2 the Parmesan cheese mixture over the pork chops. Layer chops with the potatoes. Sprinkle with remaining Parmesan cheese mixture. Top with onion slices.
  • In a small bowl, dissolve the beef bouillon cubes in hot water. Stir in the lemon juice. Pour over the layered pork chops.
  • Cover skillet, and reduce heat. Simmer 40 minutes, until vegetables are tender and pork chops have reached an internal temperature of 145 degrees F (63 degrees C).

1 onion, chopped
1 small head cabbage, coarsely chopped
¼ cup water
3 large potatoes, scrubbed and sliced
1 dash seasoning salt
1 dash paprika
2 cups cubed cooked ham

Steps:

  • In a large skillet over medium heat, saute onions in the margarine. When tender add cabbage and stir. Pour water over, cover and simmer gently on medium low for ten minutes.
  • Add potatoes and mix. Cover again and allow to simmer for ten more minutes. Additional water may be needed. Sprinkle seasoning salt and paprika over cabbage and potatoes. Allow to simmer covered for an additional 5 to 10 minutes until cabbage is soft and potatoes are nearly cooked. Mix ham in and finish cooking until ham is hot and potatoes are done.

1 lb potato (4 or 5)
2 tablespoons dark brown sugar

Steps:

  • Dice potatoes into small pieces. I use thin skinned potatoes and don't bother to peel, but if you prefer, peeled potatoes work well too. (The potatoes can be cooked in advance, or, of you want a really speedy meal, you could use the pre-cut pre-cooked diced potatoes from the produce section).
  • Boil potatoes in lightly salted water until soft, about 25 minutes. Drain.
  • Fry ham in heavy skillet over medium heat for about 3 minutes, flip and cook for a few more minutes, until there's a nice bit of juice in the pan. Add brown sugar to the pan, and turn ham to coat. simmer for about 5 minutes, turning occasionally, until ham is heated through.
  • Add potatoes to pan (you don't have to remove the ham, just lift it with a fork and put the potatoes underneath). Stir to coat evenly.

Four boneless pork loin chops, 3/4-inch thick, excess fat trimmed
1/4 cup pitted Kalamata olives, roughly chopped
4 teaspoons drained capers
3 cloves garlic, peeled and smashed
3 sprigs of thyme
1 cup halved cherry tomatoes (about 1 pint)
1/2 cup white wine
1/2 cup low-sodium chicken broth
1/4 cup packed fresh parsley leaves, roughly chopped

Steps:

  • Drain the potatoes. Heat 2 tablespoons of the olive oil in a 12-inch cast-iron skillet over high heat until very hot, about 2 minutes. Add the potatoes and cook, stirring occasionally, until they start to become tender and are just beginning to brown around the edges, about 5 minutes.
  • Sprinkle the pork chops with salt and pepper. Move the potatoes to the far edge of the pan, leaving a space to brown the pork chops. Add the pork chops to the pan and cook until browned, 2 to 3 minutes per side. As the pork chops cook, give the potatoes an occasional stir so they continue to brown evenly. Place the pork chops on top of the potatoes, shingling them to leave as much room in the pan as possible. Reduce the heat to low and add the remaining tablespoon of oil to the bare area of the pan. Add the olives, capers, garlic and thyme and cook, stirring continuously, until fragrant and golden, 1 to 2 minutes.
  • Increase the heat to medium, add the tomatoes and wine and cook until reduced by half, 2 to 3 minutes, then stir in the chicken broth. Put the pork chops in the sauce and carefully nestle the potatoes around them. Cook 3 to 5 minutes more until the pork chops register 145 degrees F in the center on an instant-read thermometer. Remove the pork chops from the sauce and transfer to shallow bowls or a serving platter. Taste the sauce and season with additional salt and pepper if needed. If most of the liquid in the pan evaporates while you are cooking the pork, stir in tablespoons of water at a time to get it back to a saucy consistency. If the sauce is a little thin and weak, after you take the chops out, turn the heat up and cook 1 to 2 minutes more to thicken and concentrate the flavors. Stir the parsley into the sauce, remove the thyme sprigs, spoon the sauce over the chops and serve.

1 tsp. finely chopped fresh thyme leaves

2 cans (14-1/2 oz. ea.) whole new potatoes, drained and thinly sliced

Steps:

  • 1.Melt butter in 12-inch nonstick skillet over medium-high heat and cook onion, stirring occasionally, 2 minutes or until onion is tender. Stir in sun-dried tomatoes, thyme, salt and pepper. Stir in potatoes, tossing to coat. Cook over medium heat, stirring occasionally, 25 minutes or until potatoes are golden brown. Remember, potatoes are cooked!(Potatoes will begin to stick and break apart.)

8 tablespoons (1 stick) butter
4 cloves garlic, chopped
2 russet potatoes, skin left on
Salt
3 sprigs fresh thyme leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a 10-inch cast-iron or nonstick skillet over low heat. Add the butter; when melted, add the garlic and cook until soft but not browned, 3 to 4 minutes.
  • Slice the potatoes on a mandoline set to 3mm (about the thickness of 3 credit cards). Place the potatoes in a large bowl; add the melted garlic butter and sprinkle with salt. Toss well to ensure all the slices are coated.
  • Place the skillet used for the butter over low heat. Carefully layer the potato slices in the skillet, overlapping them in a circular pattern starting from the edge of the skillet and working towards the center. Continue until you have about five layers of potatoes.
  • Set a medium pot lid (6 to 8 inches wide) on directly on top of the potatoes. Then place a heavy pot on top of the lid to weight it down. Adjust the heat to medium-low and cook for about 15 minutes on the stovetop, then transfer to the oven and bake until the bottom is golden brown and crispy, another 15 minutes. (You can use a spatula to peek at the bottom to make sure it's golden brown.)
  • Remove the skillet from the oven and let the potatoes rest for 15 minutes. Remove the pot and lid, and place a plate upside down on the skillet. Using oven mitts, carefully turn the skillet over to release the potatoes onto the plate. Garnish with thyme leaves and serve.
