SKILLET HOME FRIES
Steps:
- Heat oil in a cast iron skillet over medium heat. Add onion and saute until soft. Add poblano, red pepper and garlic and cook for 1 minute. Add paprika and cook for 1 minute. Add potatoes and season with salt and pepper to taste. Cover and cook until almost cooked through. Remove cover and continue cooking for 5 to 10 minutes until golden brown.
FAT FREE SKILLET HOME FRIES
I love home fries but can't have them on my diet because they are fried. So, when I saw this recipe in the 'Eat Up, Slim Down' cookbook put out by Prevention magazine I wanted to put it here so I had it the next time the mood strikes.

Steps:
- In a large, heavy nonstick skillet, heat 1/2 cup broth to boiling.
- Add potatoes, scallions, onion salt, garlic powder, sage, pepper and paprika.
- Cover and cook over high heat 5 minutes, or until liquid is absorbed, turning potatoes occasionally.
- Reduce heat to low and cook 10 minutes, adding broth as needed until potatoes are tender and browned.

SKILLET HOME FRIES
Steps:
- Cook diced potatoes in boiling water for about 4 minutes, until just a bit tender but not cooked. Drain potatoes and toss with onions. Heat butter medium heat in a heavy skillet; add potatoes and onions. Fry, bringing potatoes up from bottom of pan with a spatula occasionally for even cooking and browning. Season to taste with paprika, salt and pepper. Serves 4.
