2 tablespoons butter
1/3 cup olive oil
1 (20 ounce) package Simply Potatoes Red Potato Wedges
1/2 cup basil pesto
2 scallions

Steps:

  • Place butter and oil in a large frying pan on medium heat. Cook potatoes on all sides until golden brown.
  • When potatoes are browned, place potatoes in serving bowl, mix in pesto then sprinkle sliced scallions on top and serve. Enjoy!

1 tablespoon butter
3/4 lb russet potato, peeled and thinly sliced
1/2 cup thinly sliced red onion
1 1/2 teaspoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup milk
1 tablespoon chopped parsley

Steps:

  • In a heavy nonstick skillet, melt ½ tablespoon butter. Off heat, spread half of potato slices in skillet and top with red onion.
  • Sprinkle on half the flour, salt and pepper. Top with remaining potato slices, flour, salt and pepper and dot with remaining butter.
  • Pour milk over potatoes and bring to a boil over high heat. Reduce heat to medium-low, cover and cook until potatoes are tender, about 12 minutes.
  • Sprinkle with parsley before serving.

1/2 lb boneless skinless chicken breast
2 cups Brussels sprouts
1/4 cup fat-free low-sodium chicken broth
20 ounces Simply Potatoes Steakhouse Seasoned Diced Potatoes
1 cup asiago cheese

Steps:

  • Place potatoes in a microwave safe bowl and cook on defrost for 3 minutes, cube chicken in 1 ½ inch cubes, cut the Brussels sprouts in half and finely shred the asiago cheese.
  • In a deep nonstick oven proof pan sprayed with cooking spray on medium heat cook chicken 5 minutes turn chicken pieces and cook additional 3 minutes. Add Brussels sprouts and chicken broth cover and let simmer until Brussels sprout are fork tender add potatoes mix until well incorporated top with cheese.
  • Place skillet in oven turn oven on broil and broil until cheese has melted and has started to turn a golden color.

1 (20 ounce) package Simply Potatoes O'Brien Hash Browns
3 tablespoons reduced fat margarine or 3 tablespoons low-fat butter
6 links precooked breakfast turkey sausage, each link cut into about 4 pieces each
1 large sweet variety cooking apple, seeds and core removed, quartered and very thinly sliced
1/2 cup pecan pieces

Steps:

  • Mix Simply Potatoes O'Brien Hash Browns with melted margarine and place in a nonstick skillet.
  • Cover and cook over medium heat for about 10 minutes, or until they begin to brown, stirring occasionally.
  • Then press hash browns firmly down and evenly around the skillet with a spatula.
  • Next, evenly distribute the apple slices on top of the hash browns.
  • Add the sausage pieces.
