SYRNIKI (Сырники / FARMER'S CHEESE PANCAKES)
Classic Russian syrniki have a tangy-sweet flavor that goes well with a dollop of jam or sour cream on the side.

Steps:
- In a medium bowl, beat the egg yolks into the farmer's cheese, then stir in the sugar. Mix together 1⁄2 cup of the flour, the baking powder, and the salt and add to the cheese mixture. If the mixture seems dry, add a little heavy cream.
- Place the butter and oil over medium-low heat in a large nonstick skillet and melt the butter.
- Sprinkle the remaining 1⁄4 cup flour onto a plate and dust your hands with some flour, too. With your hands or a spoon, scoop out about 2 tablespoons of the batter and set the mound on the floured plate. Use your hands to gently shape it into a round patty about 2 inches in diameter and coat it lightly on all sides with flour. Repeat with the remaining batter.
- Carefully transfer the patties to the pan and cook them slowly until the undersides are browned, about 3 minutes. Turn with a spatula and cook until the other sides are browned, 3 to 4 minutes more. Serve immediately, with sour cream.
SIRNIKI (FARMER'S CHEESE PANCAKES)

Steps:
- Place the farmer's cheese into a food processor and pulse about 10 times until it's very fine. You can also use ricotta or cottage cheese instead of the farmer's cheese, just make sure to drain all the excess liquid and maybe even squeeze it out with a cheesecloth.
- Add the eggs, sugar, sour cream and vanilla. Pulse a few more times to combine.
- In a small bowl, mix ½ cup flour, baking powder and salt and then add the dry ingredients to the food processor. Pulse a few more times to combine.
- Add the raisins and mix them in with a spoon or spatula.
- Heat 1 Tablespoon of of butter or oil in a nonstick skillet on medium low heat. Make sure that the oil is hot enough before adding the Sirniki, otherwise they will soak up the oil and be very greasy.
- Place the remaining ½ cup flour into a shallow plate. I use a handy scoop to portion out this very delicate batter. It makes it MUCH easier to handle.
- Dredge each Sirnik in flour. You want to dredge the Sirniki and place them immediately into the skillet.
- Cook the Sirniki on medium low heat until they are golden on both sides.
- Serve warm with sour cream, jam, fruit, condensed milk or honey.

- Place farmer's cheese in food processor and pulse until smooth, add eggs, sour cream, sugar and vanilla, pulse until smooth.
- In a separate bowl, combine 1/2 cup flour, baking powder, salt, then add to the wet mix in the food processor and pulse until combined.
- Add raisins, if using, and mix with spatula.
- Heat 1 tablespoon butter or oil in a non-stick skillet on medium low heat. The oil has to become really hot, so be patient! If it's not hot enough, the pancakes will soak up too much fat and become greasy.
- Place remaining 1/2 cup of flour on a shallow dish, scoop about 1/4 cup of batter onto floured dish, dredge and then fry until golden brown.
- Serve warm with sour cream, fruit or jam.
