½ cup peach schnapps
½ cup cognac
¼ cup white sugar
4 oranges, sliced into rounds
2 mangos, peeled and sliced
4 (750 milliliter) bottles dry white wine, chilled
1 liter ginger ale, chilled

Steps:

  • In a pitcher, combine peach schnapps, cognac, sugar, sliced oranges and sliced mangos. Chill for at least an hour.
  • Pour fruit mixture into a large punch bowl. Stir in white wine and ginger ale.

1 cup unsweetened pineapple juice
1/4 cup lemon juice
2 medium oranges, washed and sliced
1 medium lemon, washed and sliced
1 bottle (750 ml) Riesling or other sweet white wine
1 medium tart apple, thinly sliced
1/4 cup Triple Sec
2 cups lemon-lime soda, chilled
Ice cubes

Steps:

  • In a large pitcher, combine the pineapple juice, lemon juice and orange and lemon slices; mash gently with a wooden spoon until fruit is partially crushed. Add the wine, apple slices and triple sec. Refrigerate for 2-4 hours. , Just before serving, add soda. Serve over ice.

300ml ginger wine (we used Stone's)
80ml elderflower cordial
4 limes , thinly sliced into rounds
3 peaches , sliced
large handful raspberries
ice
1l sparkling water
edible flowers (optional)

Steps:

  • Put all the ingredients (except the ice, water and flowers) into two large jugs and put in the fridge for at least 1 hr to chill. Just before serving, top up with the ice and water. Pop a few edible flowers in the jug, if you like.

1 cup seedless green grapes, or to taste, frozen

This sangria takes five to 10 minutes to assemble in a large pitcher. Take the time to prepare it in the morning so the sangria has several hours to develop its fruity flavor. Pull it out when dinner is ready to serve that evening.

3 tablespoons sugar
3 shots Calvados or other apple liquor
1 lime, sliced
1 lemon, sliced
2 ripe peaches, cut into wedges
3 ripe green apples seeded and cut into wedges
1 bottle white Rioja Spanish wine or other dry white wine
1 pint raspberries
Sparkling soda water, for topping off glasses of sangria at table

Steps:

  • Combine sugar, Calvados, lime, lemon, peaches and apples in a large pitcher. Cover with 1 bottle of Rioja wine and chill sangria several hours. To serve, spoon fruits into glasses or goblets, adding a few fresh raspberries in each glass, pour wine over top of the fruit. Top glasses of sangria off with a splash of soda water and serve.
