SIMPLE PASTA WITH BUTTER SAUCE
Never mind the butter sauce. Whatever is your preference. If you are preparing a butter sauce, I think this is an excellent way to prepare the pasta.

Steps:
- First, to the pasta water, add 3 pinches of salt, 1 clove pressed garlic, 2 tsp of dried oregano, veggies.
- Bring to a full boil, then reduce heat to simmer for 15 minutes.
- Then bring it back to a full boil, and add the pasta.
- It works.
- Meantime, in a saucepan, add butter, parmesan cheese, 1 tsp dried oregano, 1 clove pressed garlic, 1/2 tsp black pepper, pinch of cayenne pepper, 1/2 tsp olive oil.
- Melt on simmer, and stir well.
- Drain the pasta, place in a service bowl, add the sauce, a generous sprinkling of parmesan cheese, and toss.
- Serve.
- Enjoy.
DELICIOUS AND SIMPLE RICOTTA AND TOMATO PASTA SAUCE
I just love this recipe! Mum used to make this for us when we were kids. It's apparently a traditional Roman dish, great for vegetarians and very easy and quick to whip up, an awesome dish with a real 'rustic' feel to it! The kids will love it! It is to be served on top of steaming, hot pasta...wholemeal pasta works quite well with this recipe too! Enjoy!

- Firstly, put on a large pot of salted water and bring to the boil, add pasta to water and cook until'al dente' approximately 8- 10 minutes.
- While pasta is on the go, finely dice your onion and crush your garlic.
- In a saucepan, put in the olive oil, when the oil is warm, add your garlic and onion and gently saute these until they are transparent.
- Add the ricotta to the pan, and stir through the onions and garlic well.
- At this stage, add your salt and pepper, parmesan, crushed tomatoes and tomato paste.
- Mix well and let simmer gently for 10 minutes.
- Drain pasta.
- Turn the ricotta sauce off from the heat, add your fresh basil leaves, roughly torn, into the sauce.
- Dish up some pasta into a bowl, put some of the ricotta sauce on top of the pasta, and finish off with some extra shavings of parmesan if desired.

SIMPLE ITALIAN SAUSAGE PASTA SAUCE
This is great on pasta or rice. It's very easy and doesn't use a lot of ingredients. You could even add a can of Cannellini or Pinto beans (drained and rinsed) when you add the tomatoes to make the foundation for a basic sausage stew.

- In a medum-sized sauce pan, brown sausage, bell pepper and onion. Make sure vegies are tender.
- Drain off grease.
- Add stewed tomatoes, green onion 1-2 Tbsp of flour (for thickening--I added this to the tomatoes in separate medium-sized bowl and mixed it vigorously with a whisk. Then I added it, along with the green onion to the pan. If you like a thin sauce, don't do this step).
- Bring to a boil over HIGH heat, stirring constantly.
- Reduce to low-med, simmer covered for 15 min and uncovered for 15 min, stirring occasionally.
- Serve over pasta or rice with a nice salad on the side with garlic bread.
PASTA AND SIMPLE WHITE SAUCE (LOW FAT)
It is similar to Fettuccine Alfredo, but an Alfredo sauce is made with heavy cream and this is made with milk. That makes if much less fattening. you can serve with really any kinda of pasta. Whole wheat pasta is great with it. Serve with good bread and salad.... thats it.

- Put your choice of pasta on to boil. (salt water).
- On low/med. heat Melt butter in sauce pan. Add milk with Baking powder mixed in it before you pour it in with your butter. Wisk it with a fork. Add salt, Parmesan cheese, and garlic powder.
- Stir almost constantly so Milk doesn't burn or clump (trust me it will if you don't stir!).
- after pasta is strained, pour sauce on the pasta in the pot you boiled the pasta in and mix up well. Let simmer for a minute.
- Serve with a little extra parmesan cheese on top.
SIMPLE PASTA SAUCE
This is a simple pasta sauce that you can use for more than just spaghetti. Puree this recipe for pizza sauce or a great dipping sauce. - In a small saucepan, heat oil over medium heat. Add onion; cook and stir until tender, 3-5 minutes. Add brown sugar and garlic; cook 1 minute longer. SIMPLE VEAL PASTA SAUCE

- If you are using fresh tomatoes, peel them by dipping them in boiling water for 1 minute, then squeeze off their skin. Halve the tomatoes, scoop out their seeds without squeezing, and chop up coarsely.
- Put 2 tablespoons of butter and the vegetable oil in a small saucepan and turn on the heat to medium high. Cook the onion, stirring from time to time, until it becomes colored a pale gold.
- Add the ground veal, and turn it over several times, using a wooden spoon, to brown it all over.
- Add the cut-up tomato, salt, and several grindings of pepper, and with your wooden spoon turn over all ingredients two or three times. Cook at a steady but gentle simmer for 15 to 20 minutes.
- Cook and drain the pasta and toss it immediately and thoroughly with the sauce, swirling into it the remaining tablespoon of butter and the grated Parmesan.
SIMPLE DELICIOUS PASTA SAUCE
This sauce is an easy and delicious alternative over what you buy in jars. I use lots of extra garlic in mine! Every time I cook stuffed pastas like asparagus ravioli, my guys asks for this sauce! Don't forget garlic bread and wine!

- Preheat oven to 400 degrees F (200 degrees C). Spread neck bones and onions out in the bottom of a roasting pan.
- Roast in the preheated oven until bones are browned and caramelized, 45 minutes.

- In a large pot with boiling salted water cook penne pasta until al dente. Drain well.
- Meanwhile, in a medium skillet cook the bacon strips until mostly cooked, but not crisp. Remove from pan, break into bite size pieces. Drain bacon grease from pan. Return cooked bacon to pan, add minced garlic, chopped red onion, olive oil and chili pepper. Saute until onion is soft, about 5 minutes. - Saute the diced onion in a little bit of olive oil, butter, or cooking spray, in a medium saucepan over medium heat. (If you like garlic, you could add a few diced garlic cloves too).
- Add the stewed tomatoes and the tomato paste. Stir to combine.
- Add the brown sugar. Start with just 1/2 a cup. If you like it sweet, keep adding more. Here is when you can add salt, pepper, and any herbs like basil and oregano.
- Turn the heat down to low and simmer for at least an hour. Stir every so often. The stewed tomatoes will keep breaking down the longer you cook it, so you can keep going for a less chunky sauce. The perfect sauce for any pasta that can also be used as a pizza sauce, or for meatballs, etc.
SIMPLE BUTTERNUT SQUASH CREAM SAUCE FOR PASTA
A great use for leftover butternut squash! A rich and decadent-tasting sauce that is loaded with vegetable goodness and less fat than other creamy pasta sauces. It's great on pasta -- especially if veggies are added to the pasta. I like it on pasta that's been tossed with spinach sauteed with bacon.

- (While you are making this sauce, prepare the vegetables and pasta you will dress with the sauce. It's a good back up plan to save a cup of the pasta water in case you need to loosen the sauce at the end.)
- In a small, heavy saucepan over medium heat, melt the butter or margarine.
- Add the flour to the butter, whisking to break up lumps. Allow the flour and butter to cook until the flour just starts to color -- about 2 minutes.
- Add the milk, whisking to avoid lumps. Turn the heat to medium-low and allow the sauce to come to a slow simmer. Stir frequently and keep the heat relatively low to prevent scorching on the bottom.
- Once the sauce has thickened to the consistency of heavy cream, whisk in the squash and heat through, stirring frequently.
- Add salt, pepper, and other herb or spice to taste. Freshly grated nutmeg, dried basil, or rubbed sage are likely candidates.
- Just before adding the sauce to the pasta (and vegetables), remove from the heat and whisk in the parmesan until smooth. Taste and do a final adjustment of the spices if necessary.
- Toss drained pasta and veggies in the sauce. If the sauce is too thick, add some pasta water and toss again. Serve immediately.
