HAWAIIAN CHEESECAKE BARS

Steps:
- 1. Combine flour, 1 cup sugar and 1 cup butter. Pat mixture into ungreased 9 X 13 pan. Bake at 350 oven for 14-19 minutes. Cool slightly.
- 2. Mix together cream cheese, 4 TBS sugar, milk and eggs. Fold in vanilla, and drained pineapple. Spread over baked crust.
- 3. Combine coconut and 2 TBS melted butter. Sprinkle over pineapple layer filling. Bake 350 for 15-20 minutes.

I adapted this from a recipe for apple bars made from a cake mix. We like it served warm with ice cream.

Steps:
- 1. Preheat oven to 350 degrees. In a medium mixing bowl use a fork to cut butter into dry cake mix, making a mixture that looks like crumbs. Set aside 1 cup of this mixture and press the remaining mixture into the bottom of a 9 by 13 inch baking pan.
- 2. Spoon pineapple pie filling over the bottom crust in the pan. Set aside for a moment. Mix remaining crumb mixture with coconut, nuts, and cherries. Sprinkle over pie filling. Bake for 45 minutes. Cool slightly before cutting.
