RATATOUILLE WITH SHRIMP AND OKRA

Ratatouille with Shrimp and Okra image

Hailing from southern France, ratatouille is a stewed vegetable dish usually consisting of tomatoes, eggplant and summer squash. It's a dish I love to make, and you know I've gotta add my Low Country spin. So, I saute shrimp and okra and stir it in at the end. You're going to love it.

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 15

3 tablespoons olive oil
1 medium-size sweet yellow onion, diced (1 cup)
1 green bell pepper, diced (1 cup)
2 cloves garlic, minced
3/4 pound eggplant, cut into large chunks
3/4 pound zucchini, cut into large chunks
3/4 pound yellow squash, cut into large chunks
Kosher salt and freshly ground black pepper
2 sprigs fresh thyme
1 pint red cherry tomatoes
1 bay leaf
1 pound medium shrimp, peeled and deveined
3/4 pound okra, cut into 1-inch-thick slices
Juice of 1/2 lemon (about 2 tablespoons)
1/4 cup packed chopped fresh basil leaves, plus more for garnish, optional

Steps:

  • Heat 2 tablespoons of the oil in a very large, deep skillet. Add the onion, bell pepper and garlic and cook until the vegetables are tender, about 5 minutes. Add the eggplant, zucchini and yellow squash and season with 1 teaspoon each salt and pepper. Cook until the vegetables begin to soften, about 8 minutes.
  • Stir in the thyme, tomatoes and bay leaf. Reduce the heat to low and simmer until the tomatoes begin to burst, about 12 minutes.
  • Meanwhile, heat the remaining tablespoon olive oil in a separate large skillet over medium-high heat until hot. Add the shrimp and okra and sprinkle with 1/4 teaspoon each salt and pepper. Cook until the shrimp turns pink and is cooked through, about 6 minutes. Stir in the lemon juice. (This removes the "slime" from the okra.)
  • Add the shrimp, okra and basil to the vegetables. Stir to combine. Season with salt and pepper. Remove the bay leaf, then sprinkle with additional basil before serving, if desired.

KARDEA'S OKRA SOUP WITH SHRIMP

Kardea's Okra Soup with Shrimp image

Okra soup is a traditional tomato-based soup that originated in West Africa. While you can add any protein to this dish, I like using shrimp when it's in season in the Lowcountry because it pairs really well with the okra.

Time 1h50m

Yield 10 servings

Number Of Ingredients 21

2 cups medium shrimp, peeled and deveined, shrimp reserved for the okra soup, shells cleaned in cold water and reserved for the shrimp broth
1 cup large-chopped carrot
1 cup large-chopped celery
1 cup large-chopped onion
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
1 bay leaf
2 tablespoons olive oil
2 garlic cloves, minced
1 large onion, chopped
1 medium green bell pepper, chopped
2 tablespoons unsalted butter
2 cups fresh or thawed frozen corn
2 cups thawed frozen lima beans
1 cup diced fresh Roma tomatoes
One 28-ounce can diced tomatoes
Kosher salt and freshly ground black pepper
2 1/2 cups sliced fresh or thawed frozen okra
1 teaspoon ground ginger
Juice of 1/2 lemon
Steamed rice, for serving, optional

Steps:

  • For the shrimp broth: Put the shrimp shells, carrots, celery, onions, butter, salt, bay leaf and 10 cups water in a large pot. Bring to a boil for 5 minutes. Reduce the heat and simmer, covered, for about 45 minutes, making sure to skim off and discard any impurities that rise to the top. Strain the liquid, reserving 3 cups of the broth for the okra soup. Reserve the additional broth for another use.
  • For the okra soup: Heat a large gumbo pot or Dutch oven over medium-high heat, add the olive oil, garlic, onions, green peppers and 1 tablespoon of the butter and saute until the vegetables soften. Next, add the corn, lima beans and Roma tomatoes and mix together. Add the canned diced tomatoes and reserved 3 cups shrimp broth, stir, cover, bring to a simmer and cook for about 20 minutes.
  • While the soup is simmering, melt the remaining tablespoon of butter in a medium skillet, add the reserved shrimp and season with salt and pepper. Cook until the shrimp begin to turn pink. Add the okra, ground ginger and lemon juice, stir to mix and then cook until the okra and shrimp are cooked through.
  • Once the soup has simmered for 20 minutes, add the shrimp and okra mixture to the soup. Cover and cook for an additional 10 minutes. Stir the soup, then serve over rice (or enjoy it without rice).

SHRIMP STEW WITH KABOCHA SQUASH AND OKRA

Shrimp Stew with Kabocha Squash and Okra image

Shrimp, okra, and kabocha-squash stew shows the African influences in northern Brazilian cuisine.

Number Of Ingredients 13

1 1/2 pounds medium whole shrimp, heads intact (do not peel)
2 teaspoons grated peeled fresh ginger
1/2 teaspoon paprika
Coarse salt and freshly ground pepper
4 tablespoons olive oil, plus more if needed
2 large shallots, coarsely chopped (about 1/3 cup)
2 garlic cloves, minced
1 serrano chile, thinly sliced
1 teaspoon ground cumin
1 medium kabocha squash (about 3 pounds), peeled, seeded, and cut into 1-inch cubes
1 can (14 ounces) coconut milk
12 okra (about 5 ounces), cut into 1/2-inch-thick rounds
1/4 cup finely chopped fresh cilantro, plus leaves for garnish (optional)

Steps:

  • Toss shrimp, ginger, and paprika in a large bowl; season with salt and pepper.
  • Heat 3 tablespoons oil in a large saute pan over medium-high heat until hot but not smoking. Working in batches, and adding more oil as needed, cook shrimp, turning once, until browned on both sides, about 4 minutes total. With a slotted spoon, transfer to a plate to cool; keep pan on stove with heat turned off.
  • Set aside 6 shrimp for garnish. Shell remaining shrimp, transferring shells and heads to a large square of cheesecloth as you work. Set aside shrimp; tie cheesecloth securely into a bundle.
  • Add remaining tablespoon oil to pan, along with shallots, garlic, chile, and cumin. Cook, stirring, over medium heat for 1 minute. Stir in squash; add cheesecloth bundle and 1 cup water. Reduce heat to medium-low. Cover; simmer until squash begins to soften, about 15 minutes.
  • Stir in coconut milk and okra. Simmer, covered, until squash is cooked through and soft and the sauce is thick, about 30 minutes. Transfer cheesecloth bundle to a sieve set over the pan; squeeze liquid into sauce, and discard bundle. Stir in reserved shelled shrimp and cilantro. Season with salt and pepper.
  • Divide among small serving bowls. Garnish with reserved shell-on shrimp, and, if desired, cilantro leaves.
