TOMATO-BASIL PASTA SALAD
I got the basis for this recipe from my cousin's wife, who absolutely adores the taste of fresh basil! This is a great, simple summer pasta salad, with a nice light blend of flavors. FRESH basil is a must on this one!! This salad is great alongside BBQ chicken. Easy, and yummy!! Prep. time includes marinating time.

Steps:
- Mix together the tomatoes, garlic, salt, pepper, olive oil, and basil.
- Refrigerate 2 hours.
- Meanwhile, cook pasta according to package directions, and rinse under cold water; drain.
- Mix pasta with tomato mixture until well-combined.
- Sprinkle with Parmesan cheese.
- Serve with additional Parmesan, if desired.
CHICKEN, BASIL AND TOMATO PASTA SALAD
This is a nice refreshing pasta salad to serve in the summer, and is also delicious served as a vegetarian pasta salad by omitting the chicken. The time listed below does not include the time needed to chill the salad.

- Cook pasta according to package directions, adding green beans the last 5 minutes of cooking; drain. Rinse with cold water; drain again.
- Mix together the oil, vinegar, salt, garlic, mustard and pepper with a whisk until thoroughly combined.
- In a very large bowl toss together the pasta mixture, chicken cubes (if using), dressing, tomatoes, shredded cheese and olives. Cover and chill for 4-24 hours. Add basil and toss gently before serving. Top with shaved Parmesan cheese, if desired.

CHICKEN, TOMATO, AND PASTA SALAD WITH BASIL VINAIGRETTE

- In a blender, add the Dijon and vinegars and blend. Drizzle in the oils to emulsify. In a large salad bowl, toss the chicken, pasta, tomatoes and basil. Season with salt and black pepper. Check for flavor.
- In a large pasta bowl, plate the entire salad and garnish with basil tops.
- In a blender, puree garlic, ginger, lime juice, salt, and sugar and oil until smooth. Do not overmix thereby heating the mixture. Add the basil and puree smooth. Check for seasoning.

A great pasta salad! It is kid friendly and a real crowd pleaser. This recipe is from the Washington Post. This salad employs one of the best combos in summer food: tomatoes, mozzarella and basil. Even better, it takes about 30 minutes to make, from start to finish. It's always good to use the freshest ingredients, but here it's essential. Fresh mozzarella can now be bought in almost every supermarket. And choose the ripest tomatoes you can find: plum tomatoes are easy to peel and seed, but you can use your favorites.

- In a large pot of boiling salted water, cook the pasta until it is done, but still a little firm to the bite. Drain and rinse with cold water until the pasta is completely cool. Let it drain for a few minutes and transfer to a large bowl. Add the mozzarella, tomatoes, basil, scallions, olive oil and balsamic vinegar. Add salt and pepper to taste, adding more vinegar if desired. Serve immediately, or cover and refrigerate until ready to serve.
- *NOTE: To peel plum tomatoes:
- Bring a small pot of water to a boil. Have ready a bowl of ice water. Cut an "X" in the bottom of the tomato and remove the stem. Place in the boiling water for 10 or 15 seconds -- no longer. Use a slotted spoon to quickly transfer to the ice water. The skin should simply slip off.

- Cook pasta according to package directions, adding asparagus, cut into 2" pieces, during the last 2 minutes of cooking time. Drain and rinse under cool water.
- Stir together 1 cup bottled lemon vinaigrette and chopped basil. Pour 3/4 cup of dressing over pasta mixture. Stir in tomatoes, and salt and pepper to taste. COver and chill 1 hour. Toss with remaining dressing just before serving. Garnish with additional freshly basil.

- Thinly slice tomatoes (if Cherry tomatoes, cut in half) and toss with onions, basil and garlic in a large bowl. Cook pasta according to package instructions. TOMATO BASIL PASTA SALAD

- 1.In a pot of salted boiling water, cook pasta until very tender throughout, 2 to 3 minutes longer than al dente stage according to package. Drain in a colander, then chill under cold running water. Let drain well, then drizzle lightly with olive oil and toss to coat. Set aside. 2.Meanwhile, in a medium skillet, heat 3 tablespoons olive oil with garlic over medium heat until garlic begins to sizzle lightly. Increase heat to high and add tomatoes. Cook, tossing frequently, until tomato skins split, burst, and release some juices, about 5 minutes; you can gently press on some of the tomatoes with a wooden spoon to help them along, but avoid mashing them. Once cooled, add mozzarella, if using, and toss to combine. Serve at room temperature, adding additional olive oil as necessary to refresh noodles. Pasta salad can be made up to 1 day in advance without basil and kept refrigerated; return to room temperature, toss in basil, and refresh with more olive oil before serving.
SUSAN'S TOMATO BASIL CHICKEN PASTA SALAD
Most pasta salads are a side dish but this salad is hearty enough for a meal thanks to the chopped chicken. It's filled with Mediterranean flavors like olives, tomatoes, and artichoke hearts. There's no mayonnaise in this pasta salad recipe. It's dressed with fresh pesto a zesty Caesar dressing. Serve with an extra sprinkle of fresh chopped basil and grated Romano cheese. A great salad for summer cookouts.

- COOK PASTA: Add 2 Tbsp salt to the boiling water.
- Cook pasta to al dente, according to package directions. Strain in a colander, and rinse briefly with cold water to cool the pasta. Allow to drain thoroughly.
- PREPARE BASIL PESTO: Place basil leaves, garlic, pine nuts, Parmesan cheese, and salt into a food processor. With the processor running, add the oil and process until smooth.
- CHIFFONADE THE BASIL LEAVES: Stack the leaves, then roll up tightly. With a SHARP knife-cut across in 1/8" slices to form "ribbons."
- Seed and chop tomatoes and red onion. Cut chicken into small chunks.
- Place pasta into a LARGE bowl and add all remaining ingredients (START WITH 1c DRESSING).
- Mix gently to combine. Add more dressing as desired.
- Refrigerate until chilled. After it sits overnight I add a little more dressing before serving to perk up the flavors.
