FOR SHRIMP:
1 lb. med.-lg. shrimp in shell, peeled and deveined
1 1/2 c. celery, chopped fine (3-4 ribs)
1 bunch scallions, sliced thin
FOR SAUCE:
1/2 c. Chili Sauce (Heinz)
1/2 c. vodka - Absolut Peppar + extra to correct consistency
3 Tbls. bottled horseradish (not drained)
1 1/2 tsp. Worcestershire sauce
1 1/2 tsp. Tabasco

Steps:

  • PREPARE SHRIMP: 1. Bring a lg. saucepan of salted water (2 Tbls. salt for 2 qts. water) to a boil. Add shrimp, then remove from head and let stand in water until cooked through ... about 5 min. 2. Drain in a colander and cool to room temp ... about 30 min. 3. Cut shrimp into thirds/quarters and transfer to a lg. bowl w/ celery and scallions. MAKE SAUCE: 1. Whisk together all sauce ingredients w/ 1/4 tsp. pepper + 3/4 tsp. salt (or to taste). 2. Just before serving stir sauce into shrimp mixture. Add extra vodka to correct consistency. SERVE: 1. Spoon 2-3 shrimp pieces w/ vegetables and sauce into shot glasses. Fill multiple shot glasses. 2. Set up serving bowl w/ serving spoon and stacked shot glasses ... allowing guests to self-serve.

2/3 cup olive oil
1/2 cup white balsamic vinegar
1 tablespoon chopped fresh cilantro
2 tablespoons grated lemon rind
1 teaspoon salt
1 teaspoon fresh ground pepper
1 teaspoon hot sauce
1 1/2 lbs peeled large cooked shrimp
romaine lettuce hearts, leaves

Steps:

  • To Make Vinaigrette:.
  • Whisk together olive oil, balsamic vinegar, and next 5 ingredients in a bowl.
  • For Shrimp:.
  • Place cooked shrimp and vinaigrette mixture in a large zip-top plastic freezer bag.
  • Seal and chill at least 8 hours or up to 24 hours, turning bag occasionally.
  • Arrange lettuce leaves in 8 (6- to 8-oz.) glasses.
  • Spoon shrimp mixture evenly into glasses.
  • Note: Vinaigrette may be prepared ahead and stored in an airtight container in the refrigerator up to 1 week. Let vinaigrette come to room temperature, and whisk before adding cooked shrimp.

SHRIMP STOCK FOR SEAFOOD SHOOTERS

2 1/2 pounds fish bones
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1 dried bay leaf
1 small sprig fresh thyme
1 fresh flat-leaf parsley
1 small sprig fresh tarragon
1/4 teaspoon coarse salt
8 cups water
1/2 cup dry white wine
4 large shrimp

Steps:

  • Wash the fish bones under cold running water, removing the gills from the heads.
  • In a medium stockpot, combine celery, onion, herbs, and salt. Add 1 cup of the water, cover, and sweat the mixture over low heat for 10 minutes. Be sure not to let it brown.
  • Add the fish bones, and the remaining 7 cups water. Bring to a boil over high heat. As soon as it comes to a boil, reduce the heat, and simmer for 20 minutes. Skim off any foam that rises to the surface.
  • Add wine, and simmer for 10 minutes more. Remove from heat, let stand for 5 minutes, and carefully ladle the stock through a fine sieve set over a large bowl. Be sure not to press down on the solids in the sieve. Discard solids.
  • Transfer 1 cup of the stock to a small saucepan. Reserve remaining stock for another use. Add shrimp, and bring almost to a boil over medium-high heat. Remove from heat, cover, and let stand for 5 minutes.
  • Remove shrimp; set aside until cool enough to handle. Peel, devein, and chill shrimp. Reserve shrimp for seafood shooters. Chop shrimp shells; add to stock. Bring to a boil over medium-high heat. Reduce heat, and simmer for 10 minutes. Strain, discarding shrimp shells.

vodka
tomato juice or bloody mary mix
1 to 2 tbsp. worcestershire sauce or to taste
1 to 2 tbsp. prepared horseradish, or to taste
8 drops tabasco sauce or to taste
pepper to taste
8 oz. peeled cooked shrimp with tails, butterflied, about 20 shrimp

Steps:

  • 1. Mix 1 part vodka to 4 parts tomato juice in pitcher. Add Worcestershire, horseradish, Tabasco sauce, and pepper. Mix well. Fill twenty funky and mismatched shot glasses with the Bloody Mary mixture. Put one shrimp in each shot glass and garnish each with a short celery stick. Arrange shot glasses on serving platter and serve at once. You may prepare several hours in advance and store in refrigerator. Serves 20

½ cup ketchup
½ cup chili sauce (I like Thai hot)
½ teaspoon fresh lemon juice, or more to taste
½ tablespoon horseradish
12 Shrimp, peeled and deveined (we recommend size 26/31)
Lemon wheels for garnish

Steps:

  • Combine all cocktail sauce ingredients in a serving bowl and stir to blend, set aside. Bring large pot of water to boil. Add shrimp and cook for 3-4 mins until pink. Drain and put shrimp in an ice bath. Use funnel to pour cocktail sauce into shot glasses. Garnish each shooter with one shrimp and one lemon wheel. Serve immediately.

JACK DANIEL'S SHRIMP SHOOTERS

8 jumbo prawns, peeled and de-veined, with tail on
1 cup BBQ sauce (recommended: Jack Daniel's BBQ Sauce), divided
8 lime or lemon peel twists

Steps:

  • Preheat grill to medium-high heat.
  • Skewer the prawns onto metal or wooden skewers (if using wooden skewers, soak them in water for 30 minutes before threading). Place skewers on grill and grill for 5 to 10 minutes, or until prawns become opaque; brush with about half of the BBQ sauce while grilling. Remove from grill; when cool enough to handle, remove prawns from skewers. While waiting for shrimp to cool slightly, fill 8 shot glasses about halfway full with sauce and then place 1 prawn in each shot glass, tail sticking out. Garnish with a lime or lemon peel twist.
