SHRIMP POT PIE

1 egg
1 tablespoon water
4 sheets puff pastry, thawed (recommended: Pepperidge Farm)
Flour, for dusting
8 large (21 to 25) shrimp, shelled and deveined
1/4 teaspoon cayenne pepper
1 tablespoon olive oil
2 tablespoons unsalted butter
1 small carrot, diced
1 celery stalk, diced
6 mushrooms, sliced thin
2 sprigs fresh thyme
1/2 cup white wine
2 cups heavy cream
Salt and freshly ground white pepper
Special equipment: 3 and 4-inch metal ring

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, whisk egg and water until well blended. Lightly dust work surface with flour. Unfold puff pastry and dock dough with a fork. Using a 4-inch ring, cut 16 circles. Set 4 circles on a nonstick baking sheet. These are the base of the pot pies. Discard scraps. Using a 3-inch metal ring, cut circles in the center of the 12 remaining circles. Remove 4 of the 3-inch circles to the prepared baking sheet. These are the tops. Brush the outer edge of the 4-inch circles with the egg wash. Lay 1 of the 12 rings on top. Brush egg wash on that ring and place another ring on top. Repeat 1 more time until you have 3 rings stacked on top of each other. Repeat with remaining circles until you have 4 assembled. Brush the edges and tops with egg wash and bake in the middle of the oven until golden, about 20 minutes.
  • Meanwhile, season the shrimp with cayenne pepper, salt and black pepper. In a medium saucepan over medium-high heat, add oil and 1 tablespoon butter. Saute the shrimp, 1 minute per side. Remove shrimp and set aside. Add remaining butter to the pan and saute carrots, celery, mushrooms, and thyme, until softened about 10 minutes. Add wine, bring to a simmer and cook until most of the wine has evaporated. Add the cream and bring back to a simmer until the sauce thickens to a gravy consistency, about 12 to 15 minutes. Place the shrimp back into the sauce to coat. Remove thyme and season with salt and white pepper. Ladle the shrimp mixture into the pastry puff bowls and top with the smaller puff circles.

1 1/2 lbs flour
1 1/2 cups margarine
1 egg
1/2 tablespoon baking soda
1 lb shrimp (30-50 count)

6 ounces lobster bisque
2 tablespoons corn starch dissolved in 4 tbsp water
1 cup mozzarella cheese
garlic powder
salt

1 egg yolk
2 tablespoons olive oil

Steps:

  • How to prepare the crust:.
  • In a large bowl add the flour, margarine, egg and baking soda. Mix with your hands until you get an even dough.
  • Put the dough in the fridge for 30 minutes (the secret for a flaky crust). After 30 minutes remove the dough from the fridge and place half of the dough over a wax sheet to flat the dough with a roller ( the crust should be very thin) after flattening the crust place on a baking pan 13x9 inches Without the baking sheet ( no need to grease the pan) Now do the same with the rest of the dough that you're going to use to cover the pie with.
  • How to prepare the filling:.
  • In a large sauce pan cook the shrimp with garlic, salt and pepper let it cook for about 3 minutes then add the fish sauce and soy sauce then add the lobster bisque and cream cheese.
  • Cook until you get a creamy sauce that will be about 10 minutes.
  • Let it cool down and then put the filling over the crust already on the baking pan.
  • Cover the pie with the rest of the dough and brush with an egg yolk mixed with olive oil.
  • Bake for about 30-40 minutes or until the crust turn golden brown.

1 large green bell pepper, chopped
3 stalks celery, chopped
1/2 cup butter
1 (14 1/2 ounce) can tomatoes, crushed
4 slices white bread, crumbled

10 drops Tabasco sauce
1 tablespoon Worcestershire sauce

  • Preheat oven to 350 degrees F. Sauté onion, bell pepper, and celery in butter. Process tomatoes and crumbled bread in your blender. In a bowl add sautéed vegetables to the processed tomato-bread mixture. Stir in 1 1/2 cups grated cheese, shrimp, and all of the seasonings. Pour the mixture into a greased 1 1/2 quart casserole dish and top with the 1/2 cup grated cheese. Bake in oven for 30 minutes or until bubbling. Serves 8.

3 lbs meaty chicken pieces
1 tablespoon peppercorn
2 stalks celery & leaves, chopped
1 carrot, chopped

4 -5 sprigs parsley
1/2 lb frozen uncooked shrimp
1/2 cup dry white wine
1/2 cup butter
1/2 cup flour
1 cup whipping cream
2 egg yolks
1/2 cup parmesan cheese
pepper
nutmeg
lemon juice
2 tablespoons fresh parsley, chopped
1/4 cup dried breadcrumbs
2 tablespoons parmesan cheese
2 tablespoons slivered almonds
1 tablespoon butter, melted

Steps:

  • Put chicken in a large pot with 8 C of water.
  • Add pepper, parsley and vegetables.
  • Bring to boil and simmer for 45 minutes or until tender.
  • Let cool, discard skin and cut into bite-sized pieces.
  • Strain stock and reserve 2 cups-save the rest for other uses.
  • In small pot combine shrimp, wine and a pinch of salt.
  • Cover and bring to boil; remove from heat.
  • Drain, reserving 1/2 of cooking liquid.
  • Sauce: In heavy saucepan melt butter.
  • Whisk in flour and cook about 1 minute.
  • Add reserved chicken stock and shrimp liquid.
  • Bring to boil stirring and add 3/4 C of whipping cream sirring often for 5 minutes.
  • Remove from heat.
  • Whisk together egg yolks and remaining cream and add to mixture.
  • Stir in parmesan.
  • Season with pepper, nutmeg, and lemon juice Add parsley.
  • Combine sauce with chicken and shrimp and mix lightly.
  • Turn into 8 C dish sprayed with no-stick spray.
  • Combine crumbs, 2 T parmesan, almonds and butter.
  • Sprinkle over top.
  • Bake in 400 oven or until golden and bubbling.

3-4 ripe avocadoes - mashed until smooth and lump-free
juice of half a large lemon
sea salt and fresh cracked pepper to taste
4-6 green onions - finely sliced
1 and 1/3 cups small cooked shrimp - rinsed, drained, and dried
6 large eggs - hard-boiled, peeled and finely chopped
1/2-2/3 cup cream cheese - softened and whipped
1/2-2/3 cup sour cream
fine zest of half a large lemon
GARNISHES
1/3 cup finely minced, fresh curly parsley
3-4 tablespoons black or red caviar - drained and dried
a few thin lemon slices - cut in half and twisted

Steps:

  • In a small bowl, combine mashed avocadoes, lemon juice, salt and pepper until well blended. Evenly spread in a 9-10 inch ceramic quiche pan or glass deep-dish pie plate. Evenly sprinkle the green onions over the avocadoes and press down gently. Layer the shrimp evenly atop the green onions and press down gently. Spread the eggs evenly over the shrimp and press down gently. Add the sour cream and lemon zest to the cream cheese and whisk until well blended/smooth. Carefully spread the cream cheese mixture evenly over the egg layer and seal to the pan edges. With the back of a spoon, make swirls in the cream cheese mixture. Cover with plastic wrap and refrigerate at least 3-4 hours. Just before serving (to prevent unsightly bleeding), evenly sprinkle minced parsley and caviar on top of the pie and arrange the twisted lemon slices. 16 jumbo shrimp, peeled in center, head and tail intact, about 2 pounds
2 teaspoons seafood seasoning
1 teaspoon finely chopped rosemary
1 tablespoon finely chopped garlic
1 teaspoon cracked black pepper
4 to 6 tablespoons unsalted butter
1/4 cup beer
1 tablespoon Worcestershire sauce
1 lemons, juiced
1/2 cup seafood stock
2 pounds sweet potatoes, roasted and peeled
2 oranges, zested and juiced
1/2 cup light brown sugar
Pinch of ground cloves
1 teaspoon vanilla extract
1 teaspoon cinnamon
Pinch Salt

Steps:

  • BBQ Shrimp: Brown small amount of butter in skillet, add pepper, rosemary and shrimp; add seasoning, and garlic; saute over high heat until shrimp are pink. Add Worcestershire, beer and stock; bring to a boil and allow liquid to reduce. Finish sauce by emulsifying butter into it.
  • Sweet Potato Filling: Process ingredients until blended. Taste for salt and sugar. Keep warm until ready to serve.
  • To Serve: Fill the tart shells with the warm sweet potato mixture; arrange shrimp on top and then pour the sauce over and around the pie. Garnish with a sprig of fresh rosemary.

EZ SHRIMP PIE

A fast and easy recipe when you don't want to take the time to make homemade pie crust. You may use fresh or frozen shrimp, but parboil frozen shrimp before assembling. Pie may be made ahead and refrigerated until needed, then reheated. (9/15/07 Note: This recipe is over 20 years old and was made when my kids were little. Now I'd be more adventurous and use perhaps pepper jack shredded cheese or green chiles, or other add-ins,but this recipe pleased my family at the time. Of course, pinch the crescent rolls together when you put them in the pan, so they won't separate. Have fun experimenting with this easy and versatile dish.)

2 ¾ flour
6 T butter
pinch of salt
Cold water to bind
Cut butter into flour. Add water to bind. Roll out crust and line a 10" pie pan
Filling
1 ¼ lb shrimp
2 cloves garlic minced
2 T parsley, chopped
1 small onion chopped
2 cups chopped green pepper
3 T butter
Salt and pepper to taste
Basil to taste
2 medium tomatoes - juiced and cut into chunks
1 egg yolk
1 whole egg
3 T mayonnaise
12 oz Jarlsberg cheese - shredded
Bread crumbs and paprika for topping

Steps:

  • Cook shrimp. Shell and devein. Squeeze out excess juice and cut into large pieces. Saute garlic, parsley, onion and green pepper in butter. Add salt pepper and basil. Let cool. Mix eggs and mayo in a bowl. Combine shrimp and vegetables. Add the egg mixture. Toss in cheese and mix thoroughly. Pour filling into pie crust. Sprinkle with bread crumbs and paprika. Bake at 425 degrees for 8 to 10 minutes, reduce heat to 350 and rotate pie to cook evenly. Bake another 15 to 20 minutes until done.

1 large onion
6 teaspoons minced garlic
1 pound fresh shrimp, peeled and deveined
6 puff pastry shells
4 tablespoons butter
1 8oz package of cream cheese
2 eggs
1/2 cup heavy cream
16 ounces white cheddar
2 teaspoons salt
chopped fresh chives for garnish

Steps:

  • Preheat oven to 350 degrees F. In a large skillet over medium heat, heat oil and saute onions and garlic until onion are tender, set aside to cool. When cool, pour off oil and keeping only onion and garlic. Cut shrimp in half . In the same skillet over medium heat, melt butter and add all the shrimp, garlic and onions, cook shrimp for 2 to 4 minutes or until done. In a medium bowl, beat cream cheese until creamy, add one egg at a time and beat until well blended. Add cream, cheddar cheese, onion, shrimp and salt. Divide mixture among six Pot Pie aluminum cups on a baking sheet. Place one puff pastry shell over each cup. Bake in preheated over for 20 to 25 minutes or until pastry's start to brown. Garnish with chopped chives.

1 lb. medium shrimp
4 medium potatoes
1 stoke celery
1/3 C. lump crab meat
1/3 C. chopped onions
1/3 C. sweet peas
1/3 C. sweet corn
1 egg, beaten well
2 ready made pie crust
1/3 C. small scallops
salt to taste
pepper to taste

Steps:

  • Preheat oven to 375 degrees. Brush beaten egg inside one of the pie crust, and put in oven for 2 min. Cut your onions into small pieces. Run cold water and in bowl, put shrimp and scallops to thaw and be cleaned. After let set and drain, take pie crust out of oven after 2 min. and set aside. Cut potatoes into bite sizes and cook until well done or soft. Add salt and pepper to taste. Take corn and peas after thawed if frozen and pour in with potatoes and shrimp, scallops, crab meat, and onions. Mix together well with spoon into already baked pie crust. Brush edges with egg. 2 Tbsp bacon drippings or shortening
1/2 c finely chopped onion
2/3 c finely chopped bell pepper
1/2 c finely chopped celery
2 lb raw or frozen shrimp chopped fine or ground
1 101/2 oz. can of cream of mushroom
1 Tbsp all purpose flour
1 tsp salt
1/2 tsp red pepper
3 drops tabasco sauce
1/2 tsp worchestshire sauce
2 Tbsp finely chopped parsley
pastry for 2 crust pie

Steps:

  • 1. Saute onion,green pepper, and celery in hot fat until soft but not brown.
  • 2. Add shrimp; stir and simmer 5 min.
  • 3. Add mushroom soup,flour and seasonings; simmer about 10 min.
  • 4. Remove from heat add parsley.
  • 5. Line small muffin pan with pastry.
  • 6. Fill with shrimp mixture and cover with top crust.
  • 7. Make cuts in topfor steam to escape.
  • 8. Bake in hot (400 degree) oven 20 to 30 minutes or until top crust is golden brown.
