4 bamboo skewers, soaked in water for 20 minutes

Steps:

  • Stir shrimp, olive oil, cilantro, lime juice, garlic, tequila, cayenne pepper, and salt together in a bowl. Cover the bowl with plastic wrap and refrigerate shrimp in marinade for 30 minutes.
  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Remove shrimp from bowl and thread onto skewers; discard marinade.
  • Cook on the preheated grill until shrimp turn pink, 2 to 3 minutes per side.

1 cup water
1/2 cup sugar
1/2 cup lime juice
3 tablespoons tequila
3 tablespoons Triple Sec
4-1/2 teaspoons grated lime zest, divided
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon ground oregano
1/2 teaspoon salt
1/4 teaspoon ground chipotle pepper
16 uncooked medium shrimp, peeled and deveined

Steps:

  • In a large saucepan, bring water and sugar to a boil. Cook and stir until sugar is dissolved. Remove from heat; stir in lime juice, tequila, Triple Sec and 3 teaspoons lime zest., Transfer to an 11x7-in. dish; cool to room temperature. Freeze 1 hour; stir with a fork. Freeze 4-5 hours longer or until completely frozen, stirring every 30 minutes., In a small bowl, combine cumin, paprika, oregano, salt and chipotle pepper; add shrimp, tossing to coat. Thread shrimp onto eight soaked wooden appetizer skewers., Lightly oil grill rack. Grill shrimp, covered, over medium heat or broil 4 in. from heat 3-4 minutes on each side or until shrimp turn pink., Stir granita with a fork just before serving; spoon into small glasses. Top with remaining lime zest; serve with shrimp.

1 pound (about 20) medium-size shrimp
1/4 cup fresh lime juice
Salt and freshly ground pepper to taste
1 small ripe avocado
2 tablespoons butter
1 tablespoon finely chopped shallots
1/4 cup tequila
3/4 cup half-and-half
1 tablespoon finely chopped cilantro or Chinese parsley (optional)

Steps:

  • Shell and devein shrimp. Butterfly shrimp by splitting them partly down the back, starting at the head and stopping short of the tail. Flatten them lightly. Place shrimp in a bowl and add lime juice, salt and pepper. Let stand briefly until ready to cook.
  • Peel the avocado, and cut it into half-inch slices. Discard pit. Use as soon as possible or the flesh will discolor.
  • Heat butter in a skillet; when it is quite hot but not smoking add shrimp, stirring rapidly. Cook about two minutes. Sprinkle with shallots and cook, stirring, about 10 seconds. Carefully add the tequila, which may flare up. Add half-and-half and cook over high heat about 1 minute. Add salt and pepper to taste. Add avocado, and cook just until the slices are piping hot.
  • Using a slotted spoon, transfer the shrimp and avocado pieces to hot serving dishes. Bring the sauce to a full rolling boil for about 1 1/2 minutes and add the chopped cilantro. Spoon the sauce over the shrimp and avocado. Serve with rice.

4 limes, juiced
2 tablespoons extra-virgin olive oil
4 tablespoons gold tequilla
1 tablespoon orange flavored liqueur (recommended: Triple Sec)
2 tablespoons finely chopped cilantro leaves
Pinch salt and freshly ground black pepper
12 (U-15) shrimp and 6 very large sea scallops, cut in 1/2 or 12 smaller sea scallops
12 bamboo skewers, soaked in water for 30 minutes
1/4 cup pomegranate seeds
1 medium mango, peeled and flesh diced
1 tomato, seeded and diced
2 scallions, green part only, diced
1 jalapeno, seeded and diced
1 tablespoon freshly chopped cilantro leaves
1 tablespoon diced Vidalia onion
10 mint leaves, chopped
2 limes, juiced
2 tablespoons extra-virgin olive oil, plus more for garnish
1 tablespoon mirin
Pinch salt and freshly ground black pepper
Pink salt, for garnish

Steps:

  • First preheat the grill to medium.
  • Add all the marinade ingredients to a large bowl and stir to combine. Add the shrimp and scallops and set the bowl aside. Next, add all the salsa ingredients to a serving bowl and mix well.
  • Remove the shrimp and scallops from the marinade. Put a scallop in the "U" (curved part of the shrimp) of the shrimp and skewer, first through the scallop and then through the shrimp. Arrange the skewers on the hot grill and cook approximately 2 1/2 to 3 minutes on 1 side, then turn and grill for 2 1/2 minutes on the other side. When done, remove the skewers from the grill to a serving dish. Drizzle with some extra-virgin olive oil and sprinkle with pink salt. Serve with the salsa and enjoy!

1 lb elbow macaroni
2 cups mayonnaise
2 tablespoons apple cider vinegar

1 lb jumbo shrimp, peeled and deveined, tails on
1 teaspoon kosher salt
1 ½ cups margarita mix
4 tablespoons blanco tequila, divided

1 lime, zested
Lime wedge, for serving
2 tablespoons unrefined coconut oil
1 clove garlic, thinly sliced
1 small red onion, thinly sliced

Steps:

  • Make the macaroni salad: Bring 3 quarts of water to boil in a Dutch oven over high heat. Add 1 tablespoon of salt and the macaroni. Cook al dente according to the package directions. Drain the pasta and return to the Dutch oven. Cool for 5 minutes.
  • Add the mayonnaise, apple cider vinegar, onion powder, sugar, and remaining 1 teaspoon of kosher salt to the pasta fold to thoroughly combine. Set aside to cool completely, about 30 minutes.
  • Marinate the margarita shrimp: Add the shrimp and kosher salt to a large bowl. Toss to combine. Pour the margarita mix over top. Cover and refrigerate for 15 minutes while you prepare the braised greens.
  • Make the braised coconut greens: Heat the oil in a medium saucepan over medium-low heat. When the oil is shimmering, add the garlic and onion. Season with salt and pepper. Cook for about 3 minutes, stirring often, until fragrant and just starting to soften.
  • Add ¼ cup of coconut milk plus the sugar and lime juice to the saucepan, stirring to dissolve the sugar.
  • Add the kale leaves and snow peas, and season again with salt and pepper. Cover the saucepan and simmer for about 5 minutes, until the leaves are wilted and soft and the snow peas are tender.
  • Cook the shrimp: Pour the marinade liquid into a 10-inch skillet, leaving the shrimp in the bowl. Bring the liquid to a boil over high heat and simmer for about 10 minutes, until the liquid is reduced by two-thirds to about ½ cup.
  • Add the shrimp and 2 tablespoons of tequila to the skillet. Cook, tossing occasionally, for about 3 minutes, until the shrimp are bright pink and opaque.
  • Add the remaining 2 tablespoons of tequila plus the cilantro and lime zest. Simmer for about 1 minute, tossing the shrimp to thoroughly coat. Serve immediately alongside the macaroni salad and braised greens.
  • Just before serving, fold in the carrots, scallions, and buttermilk into the cooled macaroni salad. Add the remaining 2 tablespoons of coconut milk to the greens and garnish with toasted coconut flakes.

MARGARITA SHRIMP WITH PICO DE GALLO COCKTAIL SAUCE

1/2 bunch cilantro, chopped fine
1 serrano pepper, minced
2 tomatoes, small dice
1 small onion, small dice
Juice of 1 lime
1 (8-ounce) bottle ketchup
1/2 tablespoon Worcestershire sauce
1 teaspoon salt
4 drops hot sauce
2 ounces canola oil
2 cloves garlic
2 medium shallots
1 jalapeno, stem removed
1 bunch cilantro
Juice of 3 limes
2 ounces tequila
32 pieces shrimp, 16/20 count, peeled and deveined

Steps:

  • Combine all ingredients in a medium bowl. Fold together. Cover and refrigerate until needed.
  • In blender, add in canola oil, garlic, shallots, jalapeno, cilantro, lime juice and tequila. Blend into a smooth puree. In the refrigerator, marinate shrimp in a large bowl in puree for 1 hour. Grill over an open flame or in a grill pan or saute in 1 tablespoon oil. Serve shrimp warm with Pico De Gallo Cocktail Sauce.

SHRIMP SCALLOP & VEGGIE KABOBS WITH A MARGARITA BUTTER SAUCE

This is a great dish. Now, I do prefer an outside grill for this, but an inside grill pan or even the broiler will work. Because vegetables and seafood cook differently, I make separate kabobs so the seafood will not get overcooked. My favorites are to use zucchini, summer squash and grape tomatoes which are a nice compliment to the seafood. I brush the creamy Margarita Butter Sauce over both the seafood and the vegetables right after they come off the grill and then serve a little sauce on the side for each person to dip in. I serve my Recipe #389419 and some Jasmine rice for a great dinner. My beans by the way can easily be made ahead and just reheated, but honestly, they don't take more than a few minutes to make.

24 jumbo shrimp, peeled tails left on
24 medium sea scallops
2 zucchini, cut in 1/4-inch maybe a bit thicker slices
2 summer squash, cut in 1/4-inch maybe a bit thicker slices (yellow squash)
12 -16 cherry tomatoes
bamboo skewer
1 teaspoon chili powder
1 teaspoon minced garlic
3 tablespoons olive oil
1 tablespoon orange juice
salt (don't add to the marinade, season before grilling)
pepper (don't add to the marinade, season before grilling)
1 cup butter (2 sticks)
1 large shallot, fine chopped
1/2 cup white wine
1/2 cup heavy cream
3 tablespoons tequila
1 lime, juice of
1 teaspoon olive oil (to saute the shallot)
salt (go easy)

Steps:

  • Marinade -- In a large baggie or medium size bowl, add the chili powder, garlic, olive oil and orange juice. Add in the vegetables and marinade 15 minutes. After 15 minutes, in the same bag or bowl, add in the seafood. Marinade another 5-10, no more.
  • Skewers -- I use bamboo skewers. To make sure they don't burn, soak these in water for about the same time as you marinate the seafood and vegetables - about 20-30 minutes.
  • Sauce -- As the seafood marinades I like to start the sauce. It takes about 10 minutes and your skewers cook very quickly. Once the sauce is made, I just put it on the back burner as I finish the skewers.
  • In a small sauce pan on medium high heat, add the olive oil and cook the shallot until tender. Should take just a minute or so. Add in the wine and on medium heat, cook until reduced by half, another 3-4 minutes if that. Then add in the cream and again, cook 3-4 minutes until reduced by half. Slowly stir in the butter and cook another minute until creamy and slightly thickened. Add in the tequila, lime juice, and season with salt. Reduce the heat to low and put on the back burner so you can finish your skewers. This is a butter dipping sauce, it is not supposed to be too thick.
  • KABOBS.
  • Vegetables -- I like to skewer them from end to end vs. through the center of the squash, this way they sit flat and cook quicker and more evenly. I alternate zucchini, summer squash and tomatoes.
  • Shrimp and Scallops -- Same as the vegetables. I lay mine out right on the counter which makes it easy to run the skewer through. I wrap the shrimp (slightly curled around the outside of the scallop). They don't go all the way around, but close. This way, the skewer goes through the tip of the shrimp, then through the scallop end to end and comes out through the tail of the shrimp. Again, this way the shrimp and scallops lay flat and cook more evenly and quicker.
  • Cook -- Whether you use your outdoor grill, inside grill pan make sure to lightly oil. If using your boiler, I cook mine on foil. but either way, there is oil in the marinade, so you should not have to add any oil. to your seafood or vegetables. Just season lightly both the seafood and vegetable skewers with salt and pepper.
  • I start the vegetables first as they will take a minute or two longer than the seafood. Grill the vegetables until slightly tender and the tomatoes start to burst. And for the seafood, you want the scallops lightly firm and the shrimp will just begin to turn pink and curl. DON'T overcook.
  • Serve -- Plate up the kabobs on a big serving platter and brush each skewer lightly with some of the butter sauce. Add a small cup or dish on each plate with a little extra of the sauce for dipping, you don't need much. Black beans and rice are the perfect side dish to this meal. ENJOY!

2 tablespoons chopped fresh cilantro
2 garlic cloves, minced
1 serrano chili, stemmed, seeded, and finely diced
1/3 cup tequila
2 tablespoons triple sec or 2 tablespoons Grand Marnier
1/4 cup freshly squeezed lime juice
1 teaspoon ground cumin
1 lb large shrimp, peeled and deveined (16-20 count per pound)
1/4 cup olive oil
salt & freshly ground black pepper, to taste
vegetable oil, for frying tortillas
4 (6 inch) corn tortillas, cut into julienne
1 teaspoon chili powder
1 tomatoes, cored, seeded, and diced
1 yellow bell pepper, cored, seeded, and diced
6 cups torn romaine lettuce leaves, washed and thoroughly dried

Steps:

  • Shrimp: Combine the cilantro, garlic, chili, tequila, triple sec, lime juice and cumin in a nonreactive bowl.
  • Add the shrimp, turn to coat, and refrigerate for at least 1 hour.
  • Drain the shrimp and reserve the marinade.
  • In a small saucepan over high heat, bring the reserved marinade to a boil; reduce heat and simmer until reduced by half.
  • Remove from heat, transfer to a small bowl, and cool.
  • Whisk in the olive oil and season to taste with salt and pepper; set aside.
  • Prepare a barbeque grill or preheat a broiler (I prefer to BBQ the shrimp).
  • Grill or broil the shrimp until just pink, about 1 minute per side; keep warm.
  • Salad: Fill a small skillet with oil to a depth of about 1 inch and place over medium heat.
  • When oil is about 375°, fry the tortilla strips in batches until light brown and crisp; drain well on paper towels.
  • Sprinkle with chili powder while still warm.
  • In a large bowl, mix together the tomato, bell pepper and lettuce.
  • Toss with enough of the marinade/oil dressing to coat lightly and divide among 4 large plates or shallow bowls.
  • Top with the grilled shrimp and tortilla strips and serve immediately.

1 1/2 lb medium shrimp with shells (26 to 30 shrimp)
4 cups water
2 teaspoons salt
1 1/2 cups dry white wine or nonalcoholic wine
2 tablespoons lime juice
5 black peppercorns
Handful of fresh cilantro
1/2 cup orange juice
1/2 cup ketchup
1/4 cup chopped fresh cilantro
1/4 cup lime juice
1/4 cup lemon juice
2 tablespoons tequila, if desired
2 tablespoons vegetable oil
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
Dash of red pepper sauce

Steps:

  • Remove shells from shrimp, leaving tails intact. Set shells aside for the stock. Using a small, pointed knife or shrimp deveiner, make a shallow cut lengthwise down the back of each shrimp, then wash out the vein.
  • In 4-quart Dutch oven, heat shrimp shells, 4 cups water and 2 teaspoons salt to boiling over high heat. Add wine, 2 tablespoons lime juice, the peppercorns and handful of cilantro. Reduce heat to medium. Cover and cook 30 minutes.
  • Strain stock through strainer into large bowl and discard shells, peppercorns and cilantro. Return stock to same pan and heat to boiling over high heat. Add shrimp; remove pan from heat. Cover and let stand 8 to 10 minutes until shrimp are pink and firm.
  • Meanwhile, fill large bowl half full with ice and water. Strain stock through strainer and plunge shrimp into ice bath. (Strain stock over large bowl if you want to keep for another purpose.) Shrimp can be refrigerated in ice water for several hours.
  • In medium bowl, mix all sauce ingredients. (Don't use aluminum bowl because the acid in the sauce may react.) Stir in cooked shrimp to coat. Cover and refrigerate at least 30 minutes but no longer than 3 hours. (After 3 hours the acid in the sauce causes the shrimp to become chewy.) Serve cold.

  • 3. Chop avocado and toss with lime juice. Leave to soak for 3 to 5 minutes. This will slow down the browning process of the avocado.
  • 4. Add avocado lime juice to mixture and toss.
  • 5. Serve with tortilla chips.
  • 6. **NOTE** For a very impressive presentation, I like to serve this in a margarita glass placed on top of a dessert sized plate with some of the avocado mixed in and some sprinkled on top. A lime wedge on the edge of the glass and tortilla chips around the plate. Makes a great appetizer for a dinner party or a great dip for a big party!

2 lbs shrimp, peeled and deveined
1/4 cup tequila
1/4 cup fresh cilantro, chopped
1/4 cup olive oil
2 garlic cloves, minced
1 jalapeno, minced
2 tablespoons triple sec
2 tablespoons lime juice
lime wedge
salt

Steps:

  • Sample the tequila to make sure it has not gone bad! lol.
  • Mix all marinade ingredients in a medium mixing bowl.
  • Add shrimp, cover and let marinate in refrigerator for about 30 minutes.
  • Sample the tequila AGAIN to make sure it has not gone bad since you tasted it in step 1! lol.
  • Remove shrimp and discard marinade. Thread shrimp onto skewers or just put them in a grill wok or basket and grill for 5-6 minutes. Turn when they begin to turn pink on the bottom. Do NOT overcook.
  • Remove from grill and serve immediately.
  • BUT NOT before you SAMPLE the tequila AGAIN! hehehe.
  • Enjoy!
