VIETNAMESE STYLE SPINACH & SHRIMP SOUP



Vietnamese Style Spinach & Shrimp Soup image

This spinach and shrimp soup is delicious.

1 Tbsp olive oil
1 Tbsp each grated ginger and minced garlic
10 oz package frozen spinach thawed
8 c chicken or shrimp stock
3 star anise
2 Tbsp fish sauce
16 peeled and deveined shrimp
4 oz rice noodles cooked according to directions and drained
3 green onions chopped
1/2 c cilantro chopped

Steps:

  • 1. Add the oil to a large pot. Stir in the garlic & ginger and cook 1 minute. Stir in the spinach and cook about 3 minutes. Add the chicken stock, fish sauce, star anise. Bring to a boil. Reduce to a simmer.
  • 2. Stir in the shrimp and noodles. Cook 3 minutes. Add the green onions and cook 5 more minutes. Remove the star anise before serving and garnish with cilantro.

This quick simple-to-make soup is clock full of shrimp and spinach. The only time consuming part of making this is peeling all the shrimp (which isn't included in the prep time but takes about 30 - 45 minutes). Recipe adapted from Bon Appetit (September 2004)

6 cups chicken broth or 6 cups vegetable broth (I used the lower sodium broth)
1/4 cup soy sauce (I used the low sodium soy sauce)
2 tablespoons mirin
1 tablespoon ginger, peeled and minced
3 carrots, shredded
5 tablespoons miso
2 lbs small shrimp, peeled
4 cups spinach, trimmed and chopped roughly
1 shallots, chopped or 1/2 cup green onion, sliced
1/2-1 teaspoon chili oil

Steps:

  • In a large pot, place first four ingredients (broth- ginger) and bring to a boil over medium-high heat.
  • Add carrots and reduce heat to low and simmer for 5 minutes.
  • Place miso in a bowl and whisk in 1/2 cup of the hot broth.
  • Return all to pan.
  • Return to a boil and add shrimp, spinach and shallot (or green onion).
  • Simmer for 5 minutes or until shrimp is pink.
  • Stir in chili oil and remove from heat.

SHRIMP AND SPINACH SOUP WITH ROASTED GARLIC

1 pound large shrimp
4 cups cooked white rice
1/2 teaspoon grated lemon rind
1 teaspoon fresh lemon juice
4 cups chicken broth (see recipe)
1 1/2 teaspoons salt
Freshly ground pepper to taste
4 cups stemmed fresh spinach leaves, finely chopped
12 cloves roasted garlic, peeled

Steps:

  • Bring a large pot of water to a boil. Reduce heat so the water simmers. Add the shrimp and cook until they turn pink, about 3 minutes. Drain, peel and devein the shrimp. Cut them in half, crosswise and set aside.
  • Place the rice in a mixing bowl and toss with the lemon rind and lemon juice. Pour the chicken broth in a saucepan and bring to a simmer. Season with the salt and pepper to taste.
  • Mound the rice mixture in the center of 4 soup plates. Top with the chopped spinach. Place the shrimp over the spinach. Divide the roasted garlic among the bowls and ladle the broth around the rice. Serve immediately.

2 teaspoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 pinch crushed red pepper
2 quarts chicken broth
1 cup peeled, diagonally sliced carrots
1 cup diagonally sliced celery
2 cups snow peas
12 ounces fresh shrimp, peeled and deveined
4 ounces rice vermicelli
2 tablespoons soy sauce
ΒΌ teaspoon ground black pepper

Steps:

  • In a large saucepan over medium heat cook onion, garlic, ginger and crushed red pepper in oil for 2 minutes. Pour in broth, carrots, and celery and bring to a boil. Reduce heat, cover, and simmer for 5 minutes. Stir in snow peas and shrimp, cover, and cook for 3 minutes. Break noodles into 2-inch pieces and stir into soup; cover and cook 3 minutes more, until vegetables are tender and shrimp is pink. Stir in soy sauce and pepper and serve.

2 tablespoons vegetable oil
1 onion, chopped
3 green onions, chopped
1 tablespoon chopped garlic
1/2 teaspoon dried thyme
1/2 teaspoon ground allspice
1 whole scotch bonnet peppers or 1 whole jalapeno pepper
4 cups chicken broth
1 bunch spinach, cleaned and sliced
1/2 cup coconut milk
8 ounces peeled shrimp
1 tablespoon lime juice, to taste
salt & freshly ground black pepper

Steps:

  • Heat veg oil in large soup pot on med-high heat.
  • Add onions and saute for 3 mins or til softened slightly.
  • Add green onions,garlic,thyme,allspice and hot pepper of choice.
  • Saute for 1 more minute.
  • Add broth and bring to boil.
  • Add spinach and coconut milk.
  • Reduce heat and simmer for 10 to 15 mins or til spinach is limp.
  • Remove hot pepper and discard.
  • Add shrimp and cook for another 2 minutes or til pink and curled.
  • Add lime juice, season well with salt and pepper.
