Sauteed shrimp gets tossed with farfalle, roasted red peppers, scallion and celery in a creamy dressing.

Kosher salt and freshly ground black pepper
1/3 cup mayonnaise
1/4 cup chopped fresh flat-leaf parsley
1/4 cup finely chopped scallions
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice
1 tablespoon olive oil
1/2 pound peeled, deveined medium shrimp
8 ounces dried farfalle
1 cup jarred roasted red peppers, drained and chopped
1/4 cup finely chopped celery

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, parsley, scallions, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Heat the oil in a medium skillet over medium-high heat until it shimmers. Add the shrimp, 1/4 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until just cooked through, about 3 minutes. Transfer to a plate and set aside.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the shrimp, roasted red peppers and celery to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

1 tablespoon extra-virgin olive oil
3 garlic cloves, minced
1/4 teaspoon dried crushed red pepper
12 ounces cooked large shrimp
4 plum tomatoes, cut into thin wedges
1 15-ounce can cannellini (white kidney beans), drained
8 ounces medium shell pasta
8 ounces green beans, trimmed, cut into 1-inch lengths
6 tablespoons chopped fresh basil

Steps:

  • Heat oil in large nonstick skillet over medium-low heat. Add garlic and red pepper and stir 1 minute. Add shrimp and tomatoes; cook until heated through, about 5 minutes. Add cannellini and stir until heated through, about 3 minutes. Season with salt and pepper. Cook pasta in large pot of boiling salted water until almost tender. Add green beans; cook until beans and pasta are just tender, about 3 minutes longer. Drain, reserving 1/2 cup cooking liquid. Return pasta and beans to pot. Stir in shrimp mixture, 4 tablespoons basil and enough pasta cooking liquid to moisten pasta. Season with salt and pepper. Transfer to bowl. Sprinkle with remaining basil.

1/4 c olive oil
2oz pancetta or bacon or country ham, finely minced
1/2 large onion, very finely minced (about 1 1/2c)
1 large red peppers, seeded, membranes removed, and very finely minced
3 plum tomatoes, very finely minced
2 cloves garlic, very finely minced, ½ tsp reserved for shrimp
1/4c vodka
Water, as needed
1 pinch red pepper flakes
2 T butter, softened
1 T fresh oregano, minced
1 lbs shrimp, peeled and deveined
1/2 T butter
1/2 T olive oil
2 Italian or Chicken with Basil sausage links
1/4 lb Pasta (spaghetti, penne, whatever you like-remember I'm not Italian)
Grated Parmesan or Romano cheese, optional

Steps:

  • # Get your pasta started: cook in hot water as per package directions, when cooked, drain and keep warm. # Prick your sausages with a fork and cook in skillet on stove or grill them. When cooked, slice. # In a medium saucepan with a lid, warm olive oil and add pancetta or bacon. Cook, stirring, on medium for a minute, then add onion. Cook on medium until onion is softened, but not browned. # Add red peppers and plum tomatoes. Turn heat to low and cook, covered, for about 15 minutes, stirring occasionally and adding a tablespoon or two of water if it starts to become dry. # Add vodka, garlic (reserving ½ tsp for shrimp), and red pepper flakes. Turn heat to medium, cook for a minute or two, stirring. # Cover, return heat to low, and cook on low for another 30 minutes or so, stirring occasionally and adding small amounts of water if needed. You want it to be somewhere between soupy and dry. # Remove lid, with a fork whisk in softened butter, and season with salt & pepper to taste. # Don't cook the shrimp until just before you're ready to serve. In clean skillet heat 1T butter and 1T olive oil on med high. Add shrimp, turn heat to high and cook for a minute, add garlic, cook for another minute or two, on both sides, until just cooked. # To serve, toss warm cooked pasta with sauce. Place sliced sausage and shrimp on top, and garnish with oregano. If you're not Italian, feel free to serve with cheese.

1 pound linguine
14 cup freshly squeezed lemon juice
1 14 pounds large shrimp, peeled and deveined
12 teaspoon salt, plus more for the pasta water
2 teaspoons Emeril's Original Essence or Creole Seasoning
18 teaspoon freshly ground black pepper
8 tablespoons (1 stick) unsalted butter
1 teaspoon crushed red pepper
1 tablespoon minced garlic
14 cup chopped green onion tops
12 cup dry white wine
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil and cook the linguine until al dente, about 9 minutes.
  • While the pasta is cooking, toss the shrimp with the Essence in a medium bowl. Place 4 tablespoons of the butter in a 14-inch skillet set over high heat. Add the shrimp, spreading them evenly in one layer. Cook for 2 minutes, and then turn them to the other side. Add the garlic and cook for 30 seconds. Add the wine, lemon juice, and 2 tablespoons of the remaining butter, and cook for 1 1⁄2 minutes. Season the shrimp with the 1⁄2 teaspoon salt and the black pepper.
  • Drain the pasta in a colander, reserving 1⁄2 cup of the cooking water. Add the pasta, reserved cooking water, crushed red pepper, and green onion tops to the sauce in the skillet. Toss until everything is heated through and the pasta is well coated, about 1 minute.
  • Remove the skillet from the heat, add the remaining 2 tablespoons butter and the parsley, and toss to combine. Serve hot.

3/4 c. commercial ranch-style dressing
1 3 oz. package shredded Parmesan cheese
8 ozs. dried angel hair pasta, uncooked
3 T. butter or margarine
1/2 lb. sliced fresh mushrooms
1 lb. peeled medium-size fresh shrimp
1 12 oz. jar roasted red peppers, drained and cut into strips
1/2 c. sliced fresh basil
1/4 t. pepper

Steps:

  • Combine salad dressing and cheese; set aside. Cook pasta according to package directions; drain. Meanwhile, melt butter in a large skillet or Dutch oven over medium-high heat; add mushrooms. Cook 2 minutes stirring constantly. Add shrimp; cook 3 to 5 minutes or until shrimp turn pink, sitrring often. Drain excess liquid. Combine hot cooked pasta, salad dressing mixture, shrimp mixture, red pepper strips, basil, and pepper in a large bowl; toss gently. Serve immediately.
