Shrimp and Pancetta Sausage Ravioli with Broccoli Rabe and Edamame or Fava Beans image

Sausage
1/2 pound medium shrimp, shelled
2 ounces pancetta
1 tablespoon finely chopped scallion, light green parts only
1/2 teaspoon grated or minced lemon zest
1/8 teaspoon kosher salt
Ravioli
24 square wonton wrappers
Kosher salt
2 ounces broccoli rabe or broccolini, sliced lengthwise into thin strips
1/2 cup shelled edamame or shelled and peeled fava beans
2 teaspoons grated or minced lemon zest
1/4 cup best-quality extra virgin olive oil

Steps:

  • To make the sausage, place the shrimp and pancetta in a food processor and pulse to chop. Add the scallion, lemon zest, and salt and pulse briefly until blended but not pureed. Use right away, or cover and refrigerate for up to overnight.
  • To make the ravioli, place 1 teaspoon of the sausage in the center of each wonton wrapper. Lightly brush the edges of the wrapper with water, and fold it over corner to corner to make a triangle. Press the edges together with a fork to seal. As the ravioli are made, transfer them to a plate. Cover with a damp cloth and set aside.
  • Bring a medium saucepan filled with 1 1/2 inches of water to a boil over high heat. Add a pinch of salt and then the broccoli rabe and edamame. When the water returns to a boil, cook until the broccoli is barely wilted and still bright green, about 3 minutes. Lift out the vegetables with a slotted spoon and rinse under cold running water. Set aside.
  • To cook the ravioli use the same pan of water and return it to a boil. Add as many ravioli as will fit without crowding and boil gently until they float to the top and plump up, about 3 minutes. Lift them out with a slotted spoon, shake to dry slightly, and transfer, still moist, to a platter. Set aside in a warm place and continue with another batch until all are cooked.
  • Arrange the broccoli and edamame over and around the ravioli. Sprinkle the zest over the top and drizzle the olive oil over all. Serve right away.

1 lb large shrimp, cleaned, tails on
6 cups broccoli rabe, - 2 heads stems removed
4 garlic cloves, minced
3 -4 tablespoons olive oil
1 (10 ounce) can chicken broth, more if needed
1 teaspoon red pepper flakes, pepperoncini
1 lb angel hair pasta
salt and pepper, to taste, if you like it soupier add more chicken broth
parmesan cheese, if desired

Steps:

  • In large saute pan, heat olive oil.
  • Add garlic till softened.
  • Add broccoli rabe and toss.
  • Add chicken broth and shrimp, simmer till shrimp are pink but not overcooked.
  • Add pepper flakes.
  • Meantime, boil the Angel Hair and drain.
  • Add to saute pan and toss well with tongs.
  • I serve it right from the saute pan. I prefer it without cheese but to each his own!

The original recipe I followed was an Emeril's recipe. I have tweaked the recipe to my husband and my taste, so now it is a little different than the original recipe. It is so simple, easy yet has a robust of flavors. It always pleases! All guest I have served this recipe to have loved it.

1 lb linguine, pasta- preferable dececco brand
1/4 cup olive oil
6 ounces pancetta, chopped
3 shallots, peeled thinly sliced
2 garlic cloves, minced
1/2 cup dry white wine
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1 1/2 lbs large shrimp, peeled, deveined
1/4 cup chopped fresh parsley leaves
3/4 cup parmesan cheese, -shredded
garnish with extra chopped parsley

Steps:

  • In a large pot of salted water, cook the pasta until just al dente. Drain and return to the pot.
  • Meanwhile, in a large skillet heat the olive oil over medium-high heat.
  • Add the pancetta and cook until golden brown, 5 minutes. Remove and set aside.
  • In same skillet add the shallots and cook, stirring, for 1 minute. Add the garlic and cook, stirring, for 30 seconds.
  • Add the wine, salt, red pepper, lemon juice, lemon zest, pancetta and shrimp. Bring mixture to a boil and cook about 4 to 5 minutes. Stir frequently. Shrimp should become pink and cooked through. DO NOT OVER COOK.
  • Add the parsley and stir to combine.
  • In a large bowl, combine pasta with shrimp mixture. Toss well to combine.
  • Add parmesan and toss well to thoroughly combine. Let set for 3 minutes until pasta absorbs all the liquid.
  • Garnish with parsley and serve immediately.

2 bunches broccoli rabe, trimmed
1 tablespoon extra virgin olive oil
4 garlic cloves, minced
1 cup low sodium chicken broth
1/4 teaspoon salt
1/2 teaspoon red pepper flakes
1 1/2 lbs extra-large shrimp, peeled and deveined
3/4 cup canned cannellini beans, rinsed and drained

Steps:

  • Fill a large saucepan two-thirds full with water and bring to a boil; add broccoli rabe, return to a boil, and cook until bright green but still firm, 3-5 minutes. Drain well in a colander.
  • Wipe out saucepan. Add oil and heat over medium-high heat. Add garlic and cook, stirring, until it just begins to color, about 30 seconds. Add broth, salt, and red pepper flakes; bring to a boil. Cook until reduced by half, about 4 minutes. Add shrimp and cook until shrimp just begin to curl. Add broccoli rabe and beans, and cook until eated through, 1-3 minutes. Season to taste with salt.

I came up with this recipe after I sampled a similar dish when my husband and I went out to dinner to celebrate our 25th anniversary. Now I make it at home often. When I'm not re-creating recipes, I'm busy quilting, crafting and keeping up with our four children and five grandkids.

1/2 cup chopped onion
2 tablespoons butter
2 tablespoons all-purpose flour
1 can (14-1/2 ounces) Italian stewed tomatoes
1 tablespoon brown sugar
1 bay leaf
1 whole clove
1/2 teaspoon dried basil
1/2 teaspoon salt
1/8 to 1/4 teaspoon pepper
2 packages (9 ounces each) fresh or frozen cheese ravioli
1-1/2 cups heavy whipping cream
1/2 pound cooked medium shrimp, peeled and deveined
1 tablespoon grated Parmesan cheese
1 tablespoon minced chives

Steps:

  • In a large skillet, saute onion in butter until tender. Stir in flour until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. , Place tomatoes in a blender, cover and process until pureed; add to onion mixture. Stir in the brown sugar, bay leaf, clove, basil, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. , Meanwhile, cook ravioli according to package directions. Remove and discard bay leaf and clove from the sauce. Reduce heat; gradually stir in cream. Add shrimp; heat through. Drain ravioli; top with the sauce, cheese and chives.

7 garlic cloves (3 quartered and 4 crushed)
1/4 cup plus 3 tablespoons extra-virgin olive oil
Coarse salt
1 medium bunch broccoli rabe (about 1 pound), trimmed
1/2 cup sun-dried tomatoes in olive oil, drained
1 small dried red chile, crumbled, or 1/4 teaspoon crushed red pepper flakes
1 pound sweet Italian sausages with fennel, cut into 1/2-inch-thick pieces
12 plum tomatoes, seeded and cut into 4 wedges (or 4 cups canned whole plum tomatoes, drained and seeded, cut into 4 wedges)
1 pound rigatoni, cooked
Freshly ground pepper

Steps:

  • Preheat the oven to 350°F. Place the quartered garlic in the center of a square of foil lined with parchment paper. Fold up the edges of the foil to form sides. Drizzle the garlic with 3 tablespoons oil, and season with salt. Fold the foil up over the garlic to seal, forming a pouch. Transfer to a baking sheet. Roast the garlic until soft and golden brown, about 20 minutes.
  • Bring a large pot of water to a boil; add salt. Add the broccoli rabe, and cook until bright green, 1 to 2 minutes. Drain. Cut crosswise into 1-inch pieces; set aside. Puree the sun-dried tomatoes in a blender. Transfer to a small bowl; set aside.
  • Cook the remaining 1/4 cup oil and the crushed garlic, the chile, and a pinch of salt in a large skillet over medium heat until fragrant, 1 to 2 minutes. Add the sausage; cook, stirring often, until browned, about 10 minutes.
  • Stir in the broccoli rabe, sun-dried-tomato puree, and plum tomatoes. Cook until the liquid has reduced, 10 to 12 minutes more.
  • Toss the cooked pasta with roasted garlic. Stir the pasta mixture into the sauce in the skillet. Season with salt and pepper.
