ENGLISH FRUIT CAKE image

Number Of Ingredients 21

2 1/2 cups brown sugar
1 lb butter
8 eggs separated
3/4 tsp soda
1 1/2 tsp molasses
1 1/4 lb sultana raisins
1 1/4 lb currants
1 1/4 il muscat raisins (puffy, seeded)
3/4 lb glanced cherries ( red and green ) halved
1/4 lb glanced pineapple
3/4 lb glanced mixed fruit
3/4 lb blanched almonds
1 1/4 cup strawberry jam, jelly or grape.
1 Tbsp pastry spices
6 cups flour
Beaten whites of eggs (above)
3/4 cup chopped dates
3/4 cup chopped figs
4 oz red wine
4 oz dark rum
8 oz beer

Steps:

  • Grease pans. Line with heavy paper and grease again. Mix soda and molasses. Mix sultana raisins and currants. Rinse with hot water and drain. Cream butter, sugar and yolks of egg. Mix all fruits. Add flour and mix well. Add to butter mixture. Add wine, rum and beer. Fold in egg whites. Bake @ 275F. --- 3 - 3 1/2 hrs for large cake. Makes 2 large cakes or 1 large cake and 2 medium.
