Time 1h30m

Number Of Ingredients 9

120 gr (1/2 cup) Butter (soft, at room temperature)
15 gr (2 tbsp) Powdered Sugar (Or icing sugar)
1 Egg
40 gr (1/3 cup + 2 tbsp) Almond Meal
1 pinch Salt
200 gr ( 1 1/3 cup) Plain Flour
350 ml (12 oz) Applesauce (preferably homemade)
3 large Apples
2 tbsp Lemon Juice

Steps:

  • Cream the soft Butter and Powdered Sugar in the bowl of your mixer for about 2 to 3 minutes or until pale and fluffy. Mix in the Egg, Almond Meal and Salt until combined.
  • Mix in the Flour on the lowest speed and stop as soon as the dough comes together to avoid overworking the pastry.
  • Place the pastry between two sheets of baking paper and roll into a thin circle, larger than your tart pan. Place over a flat tray in the fridge to rest for at least 30 minutes to 1 hour, then line your tart pan with the pastry (see note 1). Prick the bottom with a fork and place back in the fridge to rest for 30 minutes to 1 hour.
  • Preheat your oven on 160'C/325'F. While the over is preheating, place the pastry in the freezer. Blind bake for 20 to 25 minutes, or until the pastry is dry to the touch (see note 2). Set aside to cool down completely.
  • Thinly slice the Apples, using a Mandoline or a sharp knife. Place in a tray with the Lemon Juice amd mix with your fingers to insure there is lemon juice all over the sliced apples.
  • Fill the pastry crust with the Applesauce, using a spatula or the back of a spoon to spread it evenly.
  • Place the sliced apples in circle over the applesauce, starting from the edges and finishing in the center of the tart.
  • Bake for another 10 minutes, just to soften up the apple slices.
  • Optional: you can brush some Apricot Jam (or any fruit jam/preserve) over the baked apples for a shiny finish
  • Leave to cool down a bit then serve warm with a scoop of Vanilla Ice Cream

Time 1h15m

Yield 6 servings

Number Of Ingredients 12

1/2 cup butter
1/3 cup sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
8 ounces cream cheese, softened
1/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
3 apples, peeled and thinly sliced
1/2 teaspoon cinnamon
1/4 cup sugar
1/4 cup slivered almonds or chopped walnuts

Steps:

  • Preheat the oven to 400 degrees F.

Alternately, put the butter, sugar, vanilla, and flour in the food processor and pulse to crumbs. Pour them into your pan and press into place. Press into the bottom of an 8-inch springform pan, giving it about a 1-inch rim. Bake 15 minute, or until lightly golden. Remove the tart shell from the oven.
  • While the crust bakes, beat together the cream cheese, sugar, egg and vanilla for the cream filling until smooth. Make the topping by tossing the apple slices with the cinnamon, sugar, and nuts.
  • Remove the tart shell from the oven. Spread over the cream mixture. Arrange the apple slices on top, and then scatter over the nuts. Bake until the apples are tender and golden, about 40 minutes.

Time 1h

Yield 8 servings

Number Of Ingredients 7

1 (9-inch/23 cm) baked sweet tart shell*
6 applesauce apples, unpeeled (recommended: Braeburn)
1/4 cup/55 g brown sugar
1/4 teaspoon ground nutmeg
1/4 cup/60 ml water
2 baking apples (recommended: royal gala apples, or other variety that keeps shape during cooking)
2 tablespoons melted butter

Steps:

  • Heat the oven to 400 degrees F. Chop the applesauce apples and put them in a saucepan with 2 tablespoons of the brown sugar, the nutmeg, and 1/4-cup/60 ml water. Cook, stirring occasionally, until very soft. Put the apple mixture through a food mill to remove the skins and seeds. You should have about 1-1/2 cups/375 ml applesauce.
  • Peel and very thinly slice the royal gala apples. Toss with the remaining brown sugar and melted butter. Spread the applesauce in the base of the baked tart shell and arrange the sliced apples over top. Brush the apple with any butter and sugar remaining in the bottom of the bowl. Bake until the apples slices are very soft and golden, about 20 minutes, depending on their thickness. Remove the tart from the oven and let cool slightly. Unmold. Serve warm or completely cool for a firmer tart with vanilla ice cream or a spoonful of creme fraiche.
