A co-worker brought this casserole to one of our potlucks. After I got the recipe, I made it for one of my family's Thanksgiving dinners and it has been requested so often that it has become a staple at family gatherings.

½ cup chopped onion
½ cup chopped celery
¼ cup chopped green bell pepper
½ cup shredded mild Cheddar cheese
1 (11 ounce) can white corn, drained
1 (14.5 ounce) can French cut green beans, drained
1 (10.75 ounce) can condensed cream of celery soup
1 (8 ounce) container sour cream
¼ (16 ounce) package buttery round crackers, crushed
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine onion, celery, green pepper, cheese, corn, green beans, soup and sour cream. Spoon into a 2-quart casserole dish.
  • Combine crushed crackers with melted butter and sprinkle on top of vegetables.
  • Bake in preheated oven for 45 minutes.

3 cans (7 ounces each) white or shoepeg corn, drained
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped green pepper
3/4 cup crushed butter-flavored crackers (about 18 crackers)
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine the first seven ingredients. Transfer to a greased 2-qt. baking dish. Sprinkle with the cracker crumbs; drizzle with butter. Bake, uncovered, at 350° for 20-25 minutes or until bubbly.

1/2 cup sharp cheddar cheese, grated
1/2 cup sweet onion, finely chopped
1/2 cup celery, finely chopped
1/4 cup bell pepper, finely chopped (you can mix red and green)
1/2 pint sour cream
1 (10 1/4 ounce) can cream of celery soup (undiluted)
1 (11 ounce) can white shoepeg corn, drained
1 (14 1/2 ounce) can French style green beans, drained
1 (16 ounce) package buttery crackers, crushed (preferably Ritz crackers)
1/2 cup butter, melted

Steps:

  • Preheat oven to 325F and spray a 13 x 9 baking dish with cooking spray.
  • Mix first 8 ingredients together; add pepper to taste.
  • Pour into prepared baking dish.
  • Mix butter and Ritz crackers together; sprinkle evenly over top of casserole.
  • Bake uncovered for 45 minutes, or until bubbly and golden brown.

8 ounces sour cream

0.5 cups onion
1 cups cheddar cheese
0.25 cups almonds
1 sticks margarine
1 packages crackers

Steps:

  • Mix corn and beans. Pour into buttered dish. Mix sour cream, soup, onions and cheese. Pour over beans and corn.
  • Sprinkle almonds over top. Melt butter and mix with crushed crackers. Sprinkle over top of almonds.
  • Bake at 350 degrees for 30-40 minutes.

I have been making this for years. It is easy and very delicious and makes a very good looking dish to take to a covered dish social.

1/2 c chopped onion
1/2 c chopped celery
1/2 c grated sharp cheddar cheese
1-11 oz. can(s) shoepeg corn, drained
1-15 oz. can(s) french-style green beans, drained
1 can(s) cream of celery soup
1/2 pt sour cream
1 stick margarine, melted
1/4 box round buttery crackers, crushed

Steps:

  • 1. Mix all ingredients together except margarine and crackers.
  • 2. Pour into a sprayed 13x9x2-inch baking dish.
  • 3. Sprinkle crushed crackers on top and then evenly distribute margarine over crackers.
  • 4. Bake in a 350 degree oven for 35 minutes.
  • 5. NOTE: I use 1 stack of Town House or Ritz for the crackers.

This is one dish I look forward to every Thanksgiving. My husband's aunt used to make it every year at my request, but since she gave me the recipe, that job is now mine. She got the recipe from a fellow juror while she was on jury duty, but she doesn't know where it originally came from. My family has this every Thanksgiving, but it's so easy and quick, it makes a perfect dinner sidedish. It goes great with ham, chicken and steak. Be careful of this one - it's quite addicting and not for the diet conscious! It's rich, cheesy, a little spicy and absolutely delicious!! I hope you enjoy this as much as my family does.

2 tablespoons butter
1/2 cup onion, diced
2 (12 ounce) cans white shoepeg corn
2 (4 ounce) cans diced green chilies
8 ounces sour cream
16 ounces monterey jack cheese, shredded
salt
pepper, to taste

Steps:

  • Melt butter in a large saute pan on medium heat.
  • Add onions and saute until translucent.
  • Add corn and green chiles (including juices), stirring until warmed through.
  • Stir in sour cream, Monterey Jack, salt& pepper and mix well until cheese just starts to melt.

It is very important to use shoepeg corn (sweet, white, small kernel corn)...it really makes a difference. You can use green chilies if jalapenoes are to hot for your taste...but try it first with jalapeno - the flavor is great.

2-3 jalapenoes - seeded and chopped (depending on how hot you want)
8 oz softened cream cheese
1 stick butter
1/4 c sweet milk
1/2 tsp garlic salt

Steps:

  • 1. Melt butter, cream cheese, milk, and garlic salt. Bring to a boil to make a sauce.
  • 2. Add drained corn and jalapenoes. Mix
  • 3. Put in 2 quart buttered dish. Bake 30 minutes in 350 degree oven. Double recipe for a 9x13 pan.

1 small carton sour cream
1 can(s) cream of celery soup

1 c grated cheddar cheese
1 stack ritz crackers
1 stick margarine

  • 1. drain beans and corn mix add salt and pepper to taste, < Pour into 2-quart casserole. mix sour cream, celery and onions. Pour over beans an corn. Sprinkle cheese over top.
