2 garlic cloves
1/4 cup Thai sweet chili sauce
1 teaspoon ginger, fresh grated
3 dill pickles, sliced
1 lime, juice and zest
1 tablespoon rice vinegar
1 tablespoon soy sauce or 1 tablespoon fish sauce
1 -2 teaspoon sesame oil
1/2 cup peanut butter
2 teaspoons sugar or 1 1/2 teaspoons honey
4 cups cabbage, finely shredded
5 ounces fresh asparagus (tough ends discarded and cut into 1/2 inch pieces blanched or microwaved for 1 minute)
1 cup frozen green pea
1/3 cup scallion, sliced
1 cup carrot, grated
1/2 cup celery, diced
1 red bell pepper (sliced very thin or diced)
1/2-1 cup fresh basil (Choose one or a mix) or 1/2-1 cup of fresh mint (Choose one or a mix)
fresh herb (optional)
dry roasted peanuts (optional)
sesame seeds (optional)
cucumber, diced (optional)

Steps:

  • Place th' dressin' in'redient in a blender 'n blend 'til smooth.
  • In a large bowl toss all th' salad in'redients wit' th' dressin'.
  • Dressin' may seem thick but th' cabbage gunna exude liquid 'n be perfect.
  • Chill fer 1 hour fer flavors to meld.
  • Toss before servin', place in a servin' bowl toppin' wit' garnishes 'o ye likin's.

This is going to become your favorite cole slaw! This is so tasty! Cabbage, kissed by lime juice, add in some freshly roasted peanuts, and you have a numero uno dish! Serve it with BBQ's, pot lucks, picnics, or just when you want to impress someone! No mayo to have to worry about sitting outside for hours. Make this at your next family get-together! If you would rather not use the jalapeno pepper, offer ground cayenne or your favorite hot sauce.

1 1/2 cups unsalted raw peanuts
1/2 medium heads of cabbage or 1/2 large head of cabbage
1 pint cherry tomatoes, washed and quartered
1 jalapeno pepper, seeded and diced
3/4 cup cilantro, chopped
1/4 cup lime juice, freshly squeezed
2 tablespoons olive oil
1/4 teaspoon sea salt
fine-grain sea salt

Steps:

  • In a skillet or oven (350°F.) roast the peanuts for 5 to 10 minutes, shaking the pan once or twice along the way, until golden and toasted.
  • Cut the cabbage into two quarters and cut out the core. Using a knife, shred each quarter into whisper thin slices. The key here is bite-sized and thin. If any pieces look like they might be awkwardly long, cut those in half . Combine the cabbage, tomatoes, jalapeno,(if using), and cilantro in a bowl.
  • In a separate bowl, combine the lime juice, olive oil and salt. Add to the cabbage mixture and gently stir to combine. Just before serving, fold in the peanuts (add them too early and they'll lose some of their crunch). Taste and adjust the flavor with more salt if needed.

1 3/4 cups water
1 cup jasmine rice
1/2 teaspoon salt, divided
1 tablespoon peanut oil
2 cups chopped green onions, cut into 1/2-inch slices
2 garlic cloves, minced
1/2-1 teaspoon sambal oelek (depending on how spicy you want it)
1 1/2 tablespoons rice vinegar
1 1/2 tablespoons sugar
1/2 cup coarsely chopped roasted peanuts, salted, coarsely chopped or 1/2 cup coarsely chopped roasted cashews, coarsely chopped

Steps:

  • If necessary, lightly roasted the peanuts and coarsely chop. You want the peanuts coarsely chopped, not ground!
  • Place the water, jasmine rice and 1/4 teaspoon salt in a rice cooker and cook. Once done, keep warm.
  • In a saute pan, heat up the peanut oil on medium-low heat and saute the green onions, garlic and sambal oelek for about 2-3 minutes or just until softened. Stir occasionally.
  • Increase the heat to medium and add the rice vinegar, sugar and remaining salt. Cook, stirring constantly until the mixture starts to caramelize, about another 3-4 minutes. Do not burn!
  • Lastly, add the cooked jasmine rice and coarsely chopped peanuts; mix well.

1 small onion, chopped
2 garlic cloves
1 teaspoon grated fresh ginger
1/2 small jalapenos or 1/2 small green chili pepper, seeded and finely chopped
1/4 cup packed fresh cilantro
1/2 cup panko breadcrumbs
1 tablespoon lime juice
1 teaspoon sea salt
1 -2 tablespoon canola oil, to pan-fry patties
1 (6 ounce) can tomato paste
1 tablespoon olive oil
2 tablespoons water
2 tablespoons agave nectar
1 teaspoon white wine or 1 teaspoon apple cider vinegar
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon sea salt
hamburger bun, lightly toasted
sliced avocado
cilantro
lettuce

Steps:

  • To make the Chickpea Patties: Place all ingredients except for the olive oil into a food processor and pulse until just combined, stopping frequently to scrape down the sides. Using the palms of your hands, form the mixture into 6 burger patties.
  • In a large non-stick skillet, heat some of the oil over medium-high heat. Once hot, carefully add the patties in batches, making sure they don't overcrowd. Add a little more oil with each batch. Allow patties to cook about 4-6 minutes on each side. Once the patties are nicely browned and holding their shape a little better, remove from the heat.
  • To make the Sweet 'n' Spicy Sauce: In a blender or Magic Bullet, puree all the ingredients together. It should be a nice thick ketchup consistency, but add a tiny bit more water to loosen if needed. Adjust the salt to taste.
  • To serve: Layer the Chickpea patties, Sweet 'n' Spicy Sauce, sliced avocados and some leafy lettuce or fresh cilantro (if desired) on toasted buns.

¼ cup lime juice
¼ cup rice wine vinegar
1 tablespoon fish sauce

Steps:

  • Pour the coleslaw mix into a large bowl. Pour in the lime juice, rice vinegar, fish sauce, sesame oil, honey, and peanuts. Stir until well blended.
