No cans here! Fresh mushrooms, onion, and herbs with frozen green beans, sour cream, and cheddar cheese make this a delightfully tasty twist on the traditional casserole. I developed this recipe, longing for a 'no cans' version of the classic dish. I made this one year for my husband's family at Christmas time, and now they ask for it every year! My husband asks me to make it for dinner throughout the year.

2 (12 ounce) packages frozen French cut green beans
8 ounces crimini mushrooms, quartered
3 tablespoons butter
1 small onion, halved and thinly sliced
1 tablespoon chopped fresh parsley
2 tablespoons all-purpose flour
½ teaspoon lemon zest
½ teaspoon salt
1 pinch ground black pepper
½ cup milk
1 cup sour cream
½ cup shredded Cheddar cheese
1 (2.8 ounce) can canned French fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place green beans into a saucepan and fill with about 1/2 inch of water. Bring to a boil and steam until beans are tender but still bright green, about 5 minutes. Drain and toss with the mushrooms. Set aside.
  • Melt the butter in a large skillet over medium heat. Add the onion and parsley; cook and stir until onion is tender. Whisk in flour until blended, then mix in the lemon zest, salt, and pepper. Gradually whisk in milk, stirring constantly, so that no lumps form and then stir in sour cream. Warm over medium heat until the sauce begins to bubble. Dump in the green beans and mushrooms, stirring to coat.
  • Remove from the heat and toss briefly with some of the Cheddar cheese and French fried onions, saving some of each to sprinkle over the top. Spoon into a 1 1/2 quart casserole dish and top with the reserved onions and cheese.
  • Bake in the preheated oven until the cheese melts, about 15 minutes.

1/2 c diced onion
1-1/2 c chopped fresh button mushrooms
2 tsp olive oil
1 Tbsp butter
2 can(s) 10.5 oz each, cream of mushroom soup
1 bag(s) frozen, 14.5 oz , cut green beans, i used birds eye brand
salt & pepper to taste
1 c soft cream cheese w/ chives
1/4 c milk
1-1/2 c french's fried onions

Steps:

  • 1. Heat oven to 350. Lightly spray a 9" x 13" casserole dish w/ cooking spray. Place oil & butter in large skillet over low-med heat. Once butter is melted, add onions.
  • 2. Stir & cook 5 minutes. Add the mushrooms and cook, stirring another 5 minutes. Stir in both cans of soup. Pour in the milk and stir until combined.
  • 3. Spoon in the cream cheese, stirring until melted. Add salt & pepper to taste. Gently fold in green beans. Pour or spoon into the casserole dish, smooth out so that it's evenly distributed. Top w/ the fried onions. Bake uncovered for about 30 minutes, or until bubbly & top is light brown.

Except for French fried onions, there's nothing canned in this green bean casserole recipe. The green beans are fresh and crispy. Super creamy, the sour cream sauce has a little zing from lemon zest. Shredded cheddar adds that bit of cheesy goodness to the casserole. It's not green bean casserole without fried onions on top and they add a nice crunch. 1/2 cup(s) onions, diced
1/2 teaspoon(s) thyme
1/2 teaspoon(s) parsley
1/2 teaspoon(s) garlic powder
2 tablespoon(s) butter
1/2 teaspoon(s) salt and pepper
1 1/2 tablespoon(s) all-purpose flour
1/2 tablespoon(s) lemon peel zest
1 cup(s) sour cream
1 tablespoon(s) cooking sherry
1 pound(s) green beans, fresh
1 cup(s) cheddar cheese, shredded
3/4 cup(s) French fried onions
1/2 cup(s) sliced mushrooms, fresh

Steps:

  • Boil your green beans for about ten minutes until cooked through. Drain. Set aside.
  • In a medium saucepan over low heat sauté diced onions, thyme, parsley, and garlic in butter for 5 minutes.
  • Blend in salt, pepper, flour, and lemon peel. Add sour cream and sherry. Cook on low for 3 minutes.
  • Grease a medium/large casserole dish with butter. Add cooked and drained beans along with sliced mushrooms to the dish. Pour the sour cream and spice mix over the beans, stir gently to coat. Sprinkle shredded cheese over the top.
  • Bake at 350 degrees for 20 minutes. Remove and top with friend onions. I like to cover the top completely with fried onions. Then bake another 10 mins until golden. Then serve and enjoy!
