1 package (6 ounces) chow mein noodles, divided
2 cups cubed cooked chicken
4 celery ribs, chopped
1 large onion, chopped
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup milk
1 can (8 ounces) sliced water chestnuts, undrained
1 jar (4-1/2 ounces) sliced mushrooms, undrained
1/2 cup cashews

Steps:

  • Sprinkle half of the chow mein noodles into a greased 13-in. x 9-in. baking dish. In a bowl, combine the chicken, celery, onion, soups, milk, water chestnuts, mushrooms and cashews. Spoon over the noodles; top with remaining noodles. Bake, uncovered, at 325° for 35-40 minutes or until heated through.

1 tablespoon cornstarch
2/3 cup reduced-sodium chicken broth
1 teaspoon reduced-sodium soy sauce
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 pound sliced fresh mushrooms
2/3 cup thinly sliced celery
1/4 cup sliced onion
1/4 cup thinly sliced green pepper
2 tablespoons julienned carrot
1 teaspoon canola oil
1 garlic clove, minced
1 cup cubed cooked chicken breast
1 cup cooked brown rice
2 tablespoons chow mein noodles

Steps:

  • In a small bowl, combine the cornstarch, broth, soy sauce, salt and ginger until smooth; set aside., In a large skillet or wok, stir-fry the mushrooms, celery, onion, pepper and carrot in oil for 5 minutes. Add garlic; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken; heat through. Serve with rice; sprinkle with chow mein noodles.

I caught a cold a couple of days ago and was craving chicken soup but wanted something a little different than chicken noodle soup. I looked through my cabinets and refrigerator and came up with this soup. It hit the spot very nicely!

Number Of Ingredients 15

2 c cooked, cubed chicken breast
2 celery stalks, sliced thin
1 c sliced fresh mushrooms
1 c fresh bean sprouts
1-1/2 c chinese cabbage or bok choy, sliced, or shredded
1/2 c shredded carrot
1/4 c sliced green onion, green & white parts
4 c low-sodium chicken broth or stock
4 oz vermicelli pasta, broken into small pieces
1 8 oz can bamboo shoots, drained
3 Tbsp soy sauce, low sodium
1 Tbsp mccormick's perfect pinch asian seasoning
pinch ground ginger
1 pkg dry chow mein noodles, optional for topping
1 Tbsp sesame oil

Steps:

  • 1. In large soup pot, over medium-high heat, add sesame oil, chicken, celery. mushrooms, green onion and shredded carrot. Stir fry for a couple of minutes.
  • 2. Add bean sprouts, Bok Choy cabbage, chicken broth,, soy sauce, Asian seasoning and ginger. Stir in broken vermicelli and drained bamboo shoots. Let everything come to a boil.
  • 3. Reduce heat to medium-low, cover and continue cooking, stirring occasionally, for 15 minutes. Ladle into bowls and serve w/ dry, chow mein noodles.
