SEVEN-LAYER BEAN DIP
Every host and hostess knows that it just isn't a party if you don't have 7 layer bean dip on hand. This creamy, spicy, flavorful appetizer is a celebration-on-a-platter that combines everyone's favorite Tex-Mex ingredients in one handily dippable space.

Steps:
- In medium bowl, mix refried beans and taco seasoning mix. Spread mixture on large platter.
- In another medium bowl, mix cream cheese and chiles. Carefully spread over bean mixture.
- Top with salsa, lettuce, cheese, olives and tomato. Refrigerate until serving time. Serve with tortilla chips.

SANDIE'S SEVEN-LAYER BEAN DIP
At every family gathering, I am asked to make this dish. It's so yummy, it's always the first thing to go. Serve dip with chips or spread onto tortillas. It's great when topped with guacamole!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix sour cream, cream cheese, and taco seasoning mix together in a bowl.
- Heat a large skillet over medium-high heat. Cook and stir beef with the cumin, oregano, garlic powder, salt, and black pepper in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Spread refried beans into the bottom of a 9x13-inch baking dish. Layer ground beef mixture over refried beans, lightly pressing beef into beans; top with sour cream mixture.
- Stir salsa and salsa con queso together in a bowl; pour over sour cream mixture layer. Spread Mexican cheese blend, tomato, olives, and green onions, respectively, over sour cream mixture layer.
- Bake in the preheated oven until heated through and bubbling, about 30 minutes.

Assemble this classic dip in glass jars for a single-serving appetizer.

Steps:
- Heat oil in a large pan. Add 1 cup onion and the garlic, and cook over low heat until translucent, about 2 minutes. Stir in beans, and cook for 3 minutes. Roughly mash with the back of a spoon, adding reserved liquid as needed to attain desired consistency.
- Mix tomatoes with remaining 2 tablespoons onion and the salt. Mash avocados with jalapenos, 2 tablespoons sour cream, and the lemon juice.
- Spread 1/2 inch mashed beans into bottom of each jar. Top with 2 tablespoons cheddar, 1 tablespoon scallions, 1/4 cup tomato mixture, 3 tablespoons avocado mixture, 2 tablespoons sour cream, then 2 1/2 tablespoons olives. (Alternatively, layer all ingredients in a large bowl.) Serve with chips.

This Christmas was the first time I prepared this dip. Everyone (adults and kids) loved it. I will make it again for my Super Bowl party.
