Steps:
- In a food processor, fitted with a metal blade, combine the chickpeas, lemon juice, tahini paste, and garlic.
- Process until smooth.
- With the machine running, add the olive oil, a little at a time.
- Season with salt and pepper.
- Spoon the humus in the center of a large platter.
- Drizzle the hummus with olive oil.
- Arrange the black olives and fresh pita bread around the hummus.

- To make the salad:
- Position rack in top third of oven and preheat to 450°F. Spray large heavy baking sheet with nonstick vegetable oil spray. Combine eggplant, peppers, garlic and oil in large bowl. Toss well. Transfer to prepared sheet. Bake until eggplant is brown and vegetables are tender, stirring every 10 minutes, about 50 minutes. Remove garlic and reserve. Scrape vegetables and all pan juices into bowl.
- Combine vinegar, cumin, salt, pepper and cayenne in processor. Peel roasted garlic; add to processor. Puree until smooth. Toss vegetable mixture with 1/4 cup garlic dressing. Cool, tossing occasionally. (Can be made 1 day ahead. Cover and chill vegetables and remaining dressing separately. Bring to room temperature.)
- Mound salad in center of large platter. Surround with pita wedges. Serve, passing remaining dressing and Sesame Spread separately.
- To make the sesame spread:
- Beat margarine, sesame seeds and salt to blend in small bowl. (Can be prepared 2 days ahead. Cover and refrigerate. Bring to room temperature before serving.)

SESAME SOY CREAM CHEESE SPREAD.
I got this from a friend years ago. Super simple to make. The combination sounds weird, but it works. Use more or less soy sauce to you taste. I like to serve this with Triscuit crackers. This needs to be made at least 4 hours ahead of serving time, but overnight is best. This will last a week in the refrigerator, covered. Enjoy!

- Put cheese in a container just big enough to hold it.
- With a fork, poke holes in top and bottom of cheese.
- Slowly pour soy sauce over cheese. Cover and refrigerate for at least 4 hours, turning several time to let the flavors blend.
- When ready to serve, sprinkle the sesame seeds over top covering completely.
- Serve with triscuits or your favorite crackers.

ROASTED CAULIFLOWER AND SESAME SPREAD

This recipe is by it's very nature a great candidate for Gluten Free Diets. My husband (who has Celiac Disease) loves this as a snack for TV watching, or it would make a great Greek appetizer, too. IMPORTANT NOTE: This recipe is usually eaten with Pita Bread (cut in quarters) in the Greek Style, but for Gluten Free Diets, that is changed to Rice Crackers (or any Gluten Free bread or crackers you prefer).
