SESAME SALT ROAST SEA BASS WITH GINGER SOY DRESSING
This is a really glamorous dish. Apart from some careful chopping, it's really easy to prepare. Serve with my simple wok noodles.

Steps:
- Preheat the oven to 200°C.
- Mix together the sesame seeds and salt. Season the cavity of the fish then make 3 diagonal slashes across each side of the bass so it cooks evenly.
- Transfer the fish to a large roasting tin and brush with a little oil. Scatter over the sesame salt and roast for 25-30 minutes until the fish is cooked and lightly golden.
- Meanwhile, splash a little sunflower oil into a small pan and cook the ginger, garlic and chile for 2 minutes, without browning. Add the soy sauce, vinegar and sesame oil and remove from the heat.
- When the fish is cooked, transfer to a large serving platter. Pour over the ginger dressing, then scatter over the salad onions and coriander leaves. Serve immediately with lime wedges for squeezing over.

Steps:
- Preheat oven to 350 degrees F. Lay two sheets of aluminum foil on a flat surface. Lightly spray top foil sheet with cooking spray. Place sea bass fillets on foil skin side down. Sprinkle green onion on the fish. Peel and shred 1/2 tsp. ginger one the fish. Drizzle sesame oil over the top of the fish and top with butter. Salt and pepper to taste. Close foil to make a packet and put in 350 degree F. oven for 15-20 minutes. Fish is done when it begins to flake. Use caution when opening packet to avoid a steam burn.
GINGER AND SESAME SEA BASS

- Combine ingredients 2 - 4 for marinade
- On each side of fish make 3 diagonal cuts, 2 inches long and 1/2 inch deep.
- Spread marinade over the fish, making sure it seeps into the cuts. Let the fish stand uncovered at room temperature for an hour.
- Preheat oven to 400.
- In small saucepan, melt butter and sauce sesame seeds one minute or until golden.
- Stir in ginger and garlic; cook one minute.
- IN a small bowl, combine soy sauce, lemon juice, cornstarch and water; stir until combined.
- Stir mixture into butter mixture and heat to a simmer, stirring.
- Cook a few minutes until its thickened; set aside. Warm before serving.
- Arrange fish in a baking pan and bake until it flakes easily, about 20 - 30 minutes.
- When its done, stir any drippings and the scallions into the sauce.
- Place fish on a platter and spoon sauce over the fish.
