36 asparagus spears
1 1/2 teaspoons dark sesame oil
1 teaspoon low sodium soy sauce
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 450 degrees.
  • Snap off tough ends of the asparagus spears. Combine asparagus and the remaining ingredients in a jelly-roll pan, turning asparagus to coat.
  • Bake at 450 for 10 minutes or until the asparagus is crisp-tender, turn once.

1 teaspoon sesame oil
1 1/2 teaspoons kosher salt

Steps:

  • Preheat oven to 425 degrees.
  • Rinse asparagus and pat dry.
  • Place on jelly roll pan or a pan with sides.
  • Drizzle sesame oil onto asparagus, tossing to coat, then sprinkle with kosher salt.
  • Roast for 10 - 15 minutes, depending on the thickness of the asparagus. I like the ends to be a little crispy.

Steps:

  • Preheat oven to 450°F.
  • Spread asparagus in a single layer on a shallow baking pan or baking sheet.

1 tablespoon dark sesame oil
1 teaspoon soy sauce
1/2 teaspoon wasabi paste
1/4 teaspoon black or white sesame seed

Steps:

  • Heat oven to 450°F. Break off tough ends of asparagus as far down as stalks snap easily. In ungreased 15x10x1-inch pan, place asparagus spears in single layer.
  • In small bowl, mix remaining ingredients except sesame seed; pour over asparagus, turning asparagus to coat evenly.
  • Roast 8 to 10 minutes or until asparagus is crisp-tender (asparagus will appear slightly charred). Sprinkle with sesame seed.

1/4 cup rice vinegar
3 tablespoons low sodium soy sauce
2 teaspoons dark sesame oil
2 cloves garlic, smashed
1 lb asparagus
sesame seeds (optional)

Steps:

  • Combine first 4 ingredients in a small bowl and set aside.
  • Snap off tough ends of asparagus.
  • Place asparagus and 1/4 cup water in an 11 x 7 inch baking dish.
  • Microwave at high 3 minutes or until tender, drain, pour the vinegar mixture over asparagus, toss well.

I learned to roast my asparagus from Nina Simonds, the expert on health giving Asian foods, and after trying it the first time, I've never turned back. I buy a full 1/2 pound and extract about four spears before roasting, to save for a stir-fry. Leftovers make a wonderful BLA (see below) or just a salad.

Number Of Ingredients 8

1/2 pound asparagus
1/2 teaspoon toasted sesame oil
1/2 teaspoon olive oil
Pinch of salt
1 scant tablespoon soy sauce
2 teaspoons rice vinegar
1/2 teaspoon toasted sesame oil
3/4 teaspoon sugar

Steps:

  • Trim the tough ends off the asparagus. Lay the spears on a baking tray lined with aluminum foil or Silpat, and drizzle the sesame and olive oils over. Salt lightly. Roll the spears over to coat all sides. Put the pan in a preheated 475° oven, and roast the asparagus for 12 minutes. Meanwhile, prepare the vinaigrette, and when the asparagus is done, pour some of it over the spears.
  • If you have leftover asparagus, try making what, according to the food writer David Nussbaum, the natives in Massachusetts-in the Connecticut River Valley, where asparagus is grown-call a BLA: a bacon, lettuce, and asparagus sandwich with mayonnaise. It's delicious.

1/2 cup extra-virgin olive oil
8 cloves fresh garlic, minced
1 teaspoon onion powder
2 tablespoons fresh finely chopped parsley
2 pounds thin asparagus, ends trimmed
Fleur de sel or coarse sea salt
Freshly ground black pepper

Steps:

  • Preheat oven to 400°F.
  • Line a large jelly-roll pan with parchment paper. Set aside.
  • In a small pot, heat the oil, garlic, onion powder, and parsley on medium-low heat. Cook for 3 minutes, until the garlic mixture is fragrant but not browned.
  • Spread the asparagus in a single layer on the prepared pan. Lightly sprinkle with coarse sea salt and freshly ground pepper. Drizzle on the garlic-oil mixture.
  • Roast for 8-10 minutes, until the asparagus are bright green; do not overcook.
  • Transfer to a platter and serve hot.
