3 tablespoons extra virgin olive oil
3 tablespoons rice vinegar (or balsamic vinegar)
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
1/2 teaspoon dry mustard
1/4 teaspoon crushed red pepper flakes
2 cups shredded red cabbage
2 cups sliced bok choy (or green cabbage)
16 pineapple slices (fresh or canned)
16 sugar snap peas, sliced lengthwise
1 cup thinly sliced button mushroom (2 ounces, or try enokie mushrooms)
1/2 cup thinly sliced radish
8 whole radishes

Steps:

  • For dressing:.
  • Combine olive oil, vinegar, sesame oil, soy sauce, mustard, and crushed red pepper in a screw-top jar. Cover and shake well to mix.
  • For Slaw:.
  • Stir together red cabbage and bok choy; divide among eight salad plates. Top each with pineapple slice, sugar snap peas, mushrooms, and cut up radishes. Drizzle dressing over salads. Garnish with whole radishes. Enjoy!
  • Makes 8 servings.

6 cups very thinly sliced green cabbage (about 1-pound head)
3 cups shredded peeled carrots
2 cups fresh spinach leaves, trimmed, thinly sliced
1/2 cup plus 1 tablespoon rice vinegar
1/4 cup oriental sesame oil
1/4 cup sugar
3 tablespoons minced peeled fresh ginger
2 teaspoons soy sauce
Additional fresh spinach leaves
1 1/2 tablespoons sesame seeds, toasted

Steps:

  • Combine cabbage, carrots and sliced spinach in large bowl.
  • Whisk vinegar, oil, sugar, ginger and soy sauce in medium bowl until sugar dissolves. Season with salt and pepper. (Cabbage mixture and dressing can be made 1 day ahead. Cover separately; chill.)
  • Toss cabbage mixture with dressing. Season coleslaw with salt and pepper. Line platter with additional spinach leaves. Mound coleslaw on platter. Sprinkle sesame seeds over and serve.

Japanese creamy coleslaw with a sweet sesame seed dressing. Great as a starter with miso soup, before sushi, or as a side. Just like at a Japanese restaurant. Sprinkle some toasted white or black sesame seeds on top before serving. You can eat it right away, but it does taste so much better the next day when the flavors meld and the veggies soften a bit from the vinegar. It will last for a week in the refrigerator.

3 tablespoons brown rice vinegar
2 tablespoons Japanese mayonnaise (such as Kewpie®)
1 ½ tablespoons honey
1 tablespoon sunflower seed oil

1 tablespoon freshly grated ginger
1 ½ teaspoons sesame oil
¼ teaspoon sea salt, or to taste
1 daikon radish, peeled and grated
2 cups shredded green cabbage
2 cups shredded red cabbage
1 large carrot, peeled and grated

Steps:

  • Whisk white rice vinegar, brown rice vinegar, Japanese mayonnaise, honey, oil, tahini, ginger, sesame oil, and sea salt together in a bowl to make dressing.
  • Combine daikon radish, green cabbage, red cabbage, and carrot in a large bowl; mix with your hands until evenly distributed. Pour dressing on top and mix to coat well. Cover with plastic wrap and chill before serving.

2 tablespoons rice wine vinegar

3 tablespoons sesame seeds
5 tablespoons toasted sesame oil
1/2 cup finely chopped scallions
2 tablespoons peeled, grated ginger
2 tablespoons lemon juice
2 tablespoons mayonnaise
1/2 teaspoon grated garlic
3 cups bean sprouts (about 6 ounces)
1 cup shredded cabbage (about 3 ounces)
1 cup shredded carrots (about 3 ounces)
1 can can chickpeas, drained and rinsed

Steps:

  • Heat oven to 425 degrees. Arrange salmon on a rimmed baking sheet. Rub with 1 tablespoon of the oil and season with salt and pepper. Roast until opaque and medium throughout, about 10 minutes.
  • Meanwhile, in a small skillet, toast the sesame seeds over low heat, stirring, until golden, about 3 to 4 minutes; scrape into a large bowl.
