Broccoli Salad With Garlic and Sesame image

This salad is made from uncooked broccoli tossed with an assertive garlic, sesame, chile and cumin-seed vinaigrette slicked with good extra-virgin olive oil and red wine vinegar. The acid "cooks" the florets a little as ceviche does fish. After an hour, the broccoli softens as if blanched, turning bright emerald, and soaking up all the intense flavors of the dressing. You'll be making this one again.

1 1/2 teaspoons red wine vinegar
1 teaspoon kosher salt, more to taste
2 heads broccoli, 1 pound each, cut into bite-size florets
3/4 cup extra virgin olive oil
4 fat garlic cloves, minced
2 teaspoons cumin seeds
2 teaspoons roasted (Asian) sesame oil
Large pinch crushed red pepper flakes.

Steps:

  • In a large bowl, stir together the vinegar and salt. Add broccoli and toss to combine.
  • In a large skillet, heat olive oil until hot, but not smoking. Add garlic and cumin and cook until fragrant, about 1 minute. Stir in sesame oil and pepper flakes. Pour mixture over broccoli and toss well. Let sit for at least 1 hour at room temperature, and up to 48 (chill it if you want to keep it for more than 2 hours). Adjust seasonings (it may need more salt) and serve.

1 large head broccoli , cut into florets
1 large red onion , peeled and cut into chunky wedges
2 tbsp sesame oil
2 tbsp soy sauce
2 tbsp rice wine vinegar
½ tbsp honey
250g pouch microwavable brown rice , cooked following pack instructions and cooled a little
1 small avocado , stoned, peeled and sliced
½ small bunch coriander , roughly chopped
1 tbsp sesame seeds , toasted
1 red chilli , finely sliced

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Tip the broccoli onto a baking sheet along with the red onion and 1 tbsp of the sesame oil. Roast for 20 mins or until the broccoli is tender. Leave to cool a little.
  • Whisk the remaining sesame oil, soy, rice wine vinegar and honey in a small bowl. Toss the broccoli, rice, onion and dressing together in a large bowl, then gently mix in the avocado and coriander. Divide between bowls and top with the sesame seeds and chilli.

1 ½ pounds fresh broccoli, cut into bite size pieces
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons sesame oil
2 teaspoons white sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Toast sesame seeds for 3 to 5 minutes, or until the seeds begin to turn golden brown. Set aside.
  • Bring a large pot of water to a boil. Cook broccoli in boiling water for 3 to 5 minutes, or until desired tenderness. Drain, and transfer to a large bowl.
  • In a small bowl, whisk together the vinegar, soy sauce, sesame oil, sugar, and sesame seeds. Pour over broccoli, and toss to coat.

1 lb thinly sliced roast beef (cut in 1/2 inch strips)
1 large red bell pepper, cut into think strips
1/3 cup vegetable oil
1/4 cup sesame oil

2 tablespoons soy sauce
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
12 romaine lettuce leaves

Steps:

1/2 lb. whole wheat capellini, uncooked
1 Tbsp. olive oil
1 cup matchlike carrot sticks
2 Tbsp. grated fresh ginger
3 cloves garlic, minced
1 pkg. (16 oz.) frozen broccoli florets, thawed
1/2 cup KRAFT Lite Asian Toasted Sesame Dressing

Steps:

  • Heat grill to medium-high heat.
  • Score steak on both sides with shallow cross-cuts. Grill 5 to 6 min. on each side or until medium doneness. Cool.
  • Meanwhile, cook pasta as directed on package, omitting salt. While pasta is cooking, heat oil in small skillet on medium-high heat. Add carrots, ginger and garlic; cook and stir 2 min. or until carrots are crisp-tender. Remove from heat.
  • Drain pasta; place in large bowl. Cut steak across the grain into thin slices. Add to pasta along with the carrot mixture, broccoli and dressing; mix lightly.

All you do is mix it all up and let it sit out for an hour before it's ready to eat. If you don't have cumin seeds, you can use cumin powder.

2 tablespoons white-wine vinegar
1 tablespoon dark sesame oil
1 teaspoon Dijon mustard

2 large bunches broccoli (about 3 pounds)
1 tablespoon sesame seeds, toasted

Steps:

  • Bring a large pot of water to a boil; add salt. In a small bowl, whisk olive oil, vinegar, sesame oil, mustard, salt, and pepper; pack vinaigrette into 8 small airtight containers.
  • Cut off broccoli stems about 1 inch below the florets. Cut florets into flowerettes by slicing through stem and pulling florets apart. You should have 8 to 9 cups of flowerettes.
  • Fill a large bowl with ice and water; set aside. Add broccoli to boiling water; stir for 1 minute. Drain, then plunge into ice bath to stop cooking. When cool, drain well; toss with sesame seeds. Pack into containers with a small container of vinaigrette.
