SENSATIONAL SHRIMP MOLD

This mold is so creamy and so good - yum! It is easy to prepare and can be done in advance. This is originally courtesy of Ms. Paula Deen but have tweaked it a bit here and there.

1 teaspoon salt
1 teaspoon fresh ground black pepper
1 lb medium shrimp
1 (8 ounce) package cream cheese, softened
1/2 cup mayonnaise
2 green onions, finely chopped, white & green parts
2 teaspoons Dijon mustard
1 dash hot sauce, Tabasco
1 teaspoon lemon juice
1 lemon, thinly sliced garnish
parsley, sliced & chopped, garnish

Steps:

  • Bring 2 cups water with 1 teaspoon salt, 1 teaspoon lemmon juice & dash of black pepper to boil in a medium saucepan and add the shrimp.
  • When the water returns to the boil, turn off the heat, cover the pot, and allow the shrimp to sit for 5 minutes.
  • Drain, peel and devein.
  • Place the shrimp in processor and pulse about 8-10 times, until finely chopped but not mushy.
  • Mix together cream cheese, mayonnaise, green onions, mustard, pinch of black pepper and hot sauce, if using; in a bowl mix, until well combined - then stir in shrimp.
  • Line a 2-cup mold or glass bowl with plastic wrap, leaving lots of overhang.
  • Place the shrimp mixture into the mold, packing tightly with a spatula.
  • Cover with plastic wrap overhang and chill in the refrigerator for at least 2 hours or overnight.
  • When ready to serve, unwrap the overhang and invert the mold onto a plate.
  • Remove the plastic wrap.
  • Garnish with parsley and lemon slices.
  • Allow to come to room temperature before serving with water crackers or any other favorite snack cracker.

3 tablespoons Miracle Whip
1 (4 1/2 ounce) can baby shrimp, drained and finely chopped
1 tablespoon minced onion
1/2 teaspoon Worcestershire sauce

  • In medium bowl, combine cream cheese and miracle whip; mix well.
  • Stir in remaining ingredients.
  • Cover; refrigerate 2-3 hours for flavors to blend.

1 bag uncooked shrimp (no shells, tail off)
Garlic
Onions
Mozzarella Cheese
Pizza Dough (or you can make it yourself, I just find it easier to purchase at trader joe's or whole foods)
Olive Oil
Pan
Salt and Pepper

Steps:

  • 1. Spread the pizza dough into a nicely sized circle, about the size of a phone book. preheat the oven to 350 2. To prepare the shrimp, put the pan on the stove, Turn the temperature to 5 or 6. 3.Pour a layer of olive oil onto the pan, adding chopped garlic, salt, and pepper to the oil. 4. Place the shrimp onto the pan, cooking until they are no longer gray or clear. 5. Spread a VERY thin layer of olive oil on the pizza dough. 6. Sprinkle a bit of mozzarella cheese onto the pizza, and add the shrimp, fresh onions, and fresh garlic. 7. Put in the oven. (May need a wooden pizza "plate") 8. Cook for about 10 mins, or until cheese is melted and onions and garlic are a nice brownish color.

1 (12-ounce) package frozen shrimp peeled, deveined medium
1 3/4 cups water
1 (4 1/2-ounce) envelope seasoned rice and pasta mix seasoned rice and peas with sauce mix
1/3 cup white wine sweet
3 tablespoons butter or margarine
1 clove garlic minced
1/8 teaspoon black pepper

Steps:

  • Thaw shrimp Meanwhile, in a medium saucepan over high heat, bring water, rice mix, wine and 1 tablespoon of the butter to a boil. Reduce heat to low and simmer, uncovered, for 10 minutes or until no free liquid remaining but mixture is still saucy, stirring occasionally. Cover and keep warm.Drain shrimp. In a large skillet over medium heat, melt remaining 2 tablespoons butter. Add shrimp and garlic. Cook and stir for 3 minutes or until shrimp is opaque and tender (do not overcook).Add rice mixture and pepper to shrimp. Gently stir to mix before serving.Serve with green beans and biscuits or rolls.* A (4.5 oz.) seasoned herb and butter rice mix can be used if preferred. Both mixes cook in about 10 minutes.

SENSATIONAL BOILED SHRIMP



Sensational Boiled Shrimp image

This method can be used for both raw & precooked shrimp, fresh or frozen. I prefer to use raw (frozen) shrimp. If making precooked shrimp, submerge them in the seasoned boiling water for a minute or so just long enough to tighten them up. The timing is based on using large shrimp. If you use small shrimp, the boiling time will be less. Timing does not include 2 hours to cool them completely. Ingredient amounts can be easily adjusted up or down.

2 lbs jumbo shrimp, raw, fresh, deveined, shelled, tails on
4 cups water, just enough to cover the shrimp
1/8 cup white vinegar, adjust amount depending on the amount of water used
2 tablespoons Old Bay Seasoning, heaping
1 bay leaf
1 stalk celery & tops
1 -2 ziploc bag, large enough to put cooked shrimp inside
ice
water, for ice water bath

Steps:

  • Tips & Tricks: The trick to great shrimp is to not use too much water when boiling them, season the water well and DO NOT RINSE them after boiling or you'll wash away all the flavor !
  • Estimate how much water you will need to cover the shrimp. If you find that there is too much water after dumping the shrimp in the water, ladle out the excess. Remember, all you need is enough to cover the shrimp to keep the flavors strong.
  • Boil water with seasonings, celery tops, bay leaf(s) and vinegar. Careful not to boil over!
  • In the mean time prepare a large bowl of ice water and have 2 (med - large) zip lock bags handy for the shrimp, one bag inside the other.
  • When seasoned water reaches a full boil, add the shrimp. Continue on high heat until the shrimp turn opaque & pink and tails begin to curl, this will only take approximately 5-7 minutes, depending on the size of the shrimp. After boiling is complete, prepare to remove from water but DO NOT RINSE, or you will rinse away all teh good flavors!
  • Quickly remove the shrimp with a large slotted spoon and place into DOUBLE zip lock bag, close securely. Place the bags of shrimp in the ice water bath to halt the cooking, being careful not to let any water seep into the bags. I like to put a plate over the bags to keep them submerged while they cool. Turn the bags over a time or 2 to insure shrimp are getting cooled down.
  • Once shrimp have chilled, place in the fridge until ready to use. Chill in fridge for a minimum of 2 hours before serving.
