CHEESY & SEEDY JALAPENO BREAD (ABM)

I made and *LOVED* recipe #381617 - absolutely loved it! So, I wanted to combine my favourite other bread, multi-grain, with this recipe, as well as tweak it a bit, because I and several reviewers found it not quite hot enough - almost as if the finely chopped jalapenos were lost in the loaf! I hope you like what I came up with!

2 1/2 teaspoons bread machine yeast or 2 1/2 teaspoons fast rising yeast
3 cups bread flour
2 tablespoons poppy seeds (plus 1 tsp for topping, if desired)
2 tablespoons sesame seeds (plus 1 tsp for topping, if desired)
2 tablespoons old-fashioned oatmeal (large flake, plus 1 tsp for topping, if desired)
2 tablespoons sunflower seeds (plus 1 tsp for topping, if desired)
3/4 teaspoon salt
1 tablespoon sugar
1 tablespoon oil
10 ounces warm water
1 cup cheddar cheese, sharp, cubed or 1 cup cheddar cheese, sharp, shredded
1 (13 ounce) jar jalapeno peppers, drained (use 1/2 to 1 full jar, based on your heat preference)
2 tablespoons cheddar cheese, sharp, shredded

Steps:

  • Place yeast, flour, seeds, oatmeal, salt, sugar, oil, and water in bread machine according to manufacturer's directions.
  • When cycle is complete, remove dough, and knread 1 cup cheese and jalapenos (well drained and dried) into dough. I make the process easier by taking chunks of the dough and placing them into a bowl, a couple at a time, topping with cheese and jalapenos, and repeating until all dough, cheese, and jalapenos are gone - and then gently kneading.
  • Form into a loaf, and place into a lined 9x5 bread pan (I line mine with parchment paper.) Alternatively, you could grease and flour the pan - just be aware that the cheese can stick really well, so it's best to line the pan! Top with shredded cheddar and additional grains/oatmeal.
  • Allow loaf to rise until doubled, approximately 45 minutes. Set oven to 375°F When loaf is doubled, bake for 35-45 minutes, until browned and until the loaf sounds hollow when you knock on the bottom of it.

½ cup applesauce
2 large eggs
¼ cup butter, melted and cooled
½ cup white sugar

2 teaspoons vanilla extract

½ cup sour cream
1 ½ teaspoons baking soda
¾ cup all-purpose flour
¾ cup whole wheat flour
½ cup chopped roasted almonds
¼ cup teff
¼ cup poppy seeds
¼ cup chia seeds
¼ cup flax seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans with the coconut oil.
  • Beat applesauce, eggs, and butter together in a large bowl until smooth. Add white sugar, raw sugar, vanilla extract, and salt; mix well.
  • Whisk bananas, sour cream, and baking soda together in a separate bowl until smooth; stir into the applesauce mixture until evenly combined.
  • Gradually stir all-purpose flour, 1/4 cup at a time, into banana mixture until well mixed. Gradually stir whole wheat flour, 1/4 cup at a time, into banana-flour mixture until batter is well mixed. Fold almonds, teff, poppy seeds, chia seeds, and flax seeds into the batter. Pour batter into the prepared loaf pans.
  • Bake on the middle rack of the preheated oven until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Cool bread in the pans for 15 minutes before transferring to a wire rack to cool, about 20 minutes.

1 tablespoon sugar
3 cups whole wheat flour
2 tablespoons sesame seeds
2 tablespoons flax seeds

1 teaspoon dill seed
1 teaspoon dry yeast

Steps:

  • Place water and seeds in the bread machine basket.
  • Add the flour.
  • Make a well in the center and put the sugar and yeast in it.
  • Sprinkle the salt around the edges of the basket so it isn't mixed with the yeast and sugar.
  • Select a setting for 1 1/2 pound loaf.
  • Try this recipe for making delicious bread sticks too.
  • Just stop the machine at the end of kneading and shape the dough into thick long rolls, brushing with oil.

This homemade healthy sandwich bread recipe is soft, hearty, and made with simple ingredients like whole wheat flour, seeds, oats, and honey.

For the bread:
1 ¼ cup milk (feel free to use unsweetened almond milk)
1/3 cup old-fashioned rolled oats
1 tablespoon honey
2 1/4 teaspoons quick rise yeast
3 tablespoons butter, melted
2 cups bread flour
3/4 cup whole wheat flour, plus more if necessary
2 tablespoons flaxseed meal
1 teaspoon salt
2 tablespoons sunflower seeds
1 tablespoon sesame seeds
1 tablespoon poppyseeds
Oil, for coating
For the egg wash:
1 egg, beaten
For topping:
2 tablespoon old-fashioned rolled oats
1 tablespoon sunflower seeds
Optional: extra poppyseeds and sesame seeds

Steps:

  • Heat milk in a small saucepan over low heat until milk is warm (about 115 degrees F). It should be warm to the touch like warm bathwater but not hot. Remove from heat and pour into a large bowl and stir in oats, yeast and honey. Let the mixture sit for 5 minutes.
  • Next, stir in melted butter into the bowl with the oats/yeast/honey. Immediately add in bread flour, whole wheat flour, flaxseed meal and salt mix with a wooden spoon until a dough begins to form.
  • Add in sunflower seeds, sesame seeds and poppyseeds and gently mix into the dough. At this point I like to get the dough to come together with clean hands. Place dough onto a well-floured surface and knead the dough with your hands for 10 minutes. Another option is to use the dough hook on your electric mixer to knead the dough (I prefer this method because it's easier).
  • Once done kneading, form dough into a ball and place in a large bowl coated with about 1 tablespoon oil, turning the dough over to coat with oil. Cover with plastic wrap and a warm towel and allow the dough to rise for about 90 minutes, or until doubled in size. This may take more of less time depending on the weather or temperature in your home.
  • Next, grease a 8x4 inch loaf pan. After dough has risen, knead it just a few more times on a clean surface coated with whole wheat flour for about 1 min then shape dough into an 8-inch long log and place in prepared pan, tucking the ends underneath.
  • Cover the loaf with plastic wrap and a warm towel and allow it to rise again for 60-90 minutes or until the loaf has risen an inch above the brim of the pan as demonstrated in the video. This may take more or less time depending on how warm it is in your home. Watch carefully because you don't want the dough to rise too much.
  • Once dough has risen the second time, preheat oven to 350 degrees F. Beat egg in small bowl and brush over the top of the dough. (Please note that you won't need to use all of the egg wash, but only a small amount.) Sprinkle a few more oats, sunflower seeds, sesame seeds and poppyseeds on top of the dough.
  • Bake for 35-40 minutes or until loaf is slightly golden brown on top and the loaf sounds hollow when tapped. Transfer pan to wire rack to cool for 10 minutes, then remove bread from pan and place on wire rack to finish cooling for at least 2 hours. Do not cut the bread before it is completely cooled or the texture will change.
  • Bread should be wrapped tightly and store at room temperature. If it's humid/hot, store bread in the fridge. Cut into slices with a serrated knife. Makes 15 slices.
