1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 tablespoons canola oil, divided
2 packages (8 ounces each) frozen breaded fish sticks

Steps:

  • In a small bowl, combine the first six ingredients; mix well. Transfer half of the seasoning mix to a large resealable plastic bag; set aside. Place 1 tablespoon oil in a large resealable plastic bag; add half of fish sticks and shake to coat. , Transfer fish to resealable bag with seasonings and shake to coat. Place in a single layer in an ungreased baking sheet. Repeat with remaining ingredients. , Bake at 400° for 18-22 minutes or until golden brown.

Number Of Ingredients 7

Nonstick vegetable oil spray
6 tablespoons all purpose flour
3 tablespoons yellow cornmeal
1 3/4 teaspoons chili powder
1/3 cup mayonnaise
2 tablespoons fresh lemon juice
12 ounces firm white fish fillets (such as orange roughy or halibut), cut crosswise into 3/4-inch-wide strips

Steps:

  • Position rack in top third of oven and preheat to 500°F. Spray small baking sheet with nonstick vegetable oil spray. Whisk all purpose flour, yellow cornmeal and chili powder in shallow dish to blend. Stir mayonnaise and fresh lemon juice in another shallow dish to blend. Sprinkle fish fillets on all sides with salt and pepper. Dip fish fillets into mayonnaise mixture, then into flour mixture to coat completely. Arrange fish on prepared sheet. Bake until coating is crisp and golden and fish is cooked through, about 10 minutes.
