1/3 cup egg substitute or 1 large egg
1 tablespoon prepared mustard
1 garlic clove, minced
3/4 cup dry bread crumbs
2 teaspoons dried basil
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound chicken tenderloins

Steps:

  • Preheat oven to 400°. In a shallow bowl, whisk together egg substitute, mustard and garlic. In another shallow bowl, toss bread crumbs with seasonings. Dip chicken in egg mixture, then coat with crumb mixture., Place on a baking sheet coated with cooking spray. Bake until golden brown and chicken is no longer pink, 10-15 minutes.

I made these tasty chicken strips for the kids, but are good enough to serve to company. the tender strips are moist and juicy and will also go great on a salad.

1/3 c egg substitute or 2 eggs
1 Tbsp prepared mustard
1 garlic clove minced
3/4 c dry bread crumbs
2 tsp dried basil
1 tsp paprika
1/2 tsp salt
1/4 tsp pepper
1 lb chicked breast cut into strips

Steps:

  • 1. In a shallow bowl, combinethe eggs, mustard, and garlic. In another bowl combine the bread crumbs, basil, salt, and pepper. Dip the chicken into the egg mixture, then roll in the bread crumbs.
  • 2. Place on a baking sheet coated with cooking spray. Babe at 400 for 15-20 minutes or until golden brown, and juices run clear.
