Seared Scallops with Herb Butter Sauce and Orzo image

Scallops are one of my favorite food items of all time. I just love their slight sweetness and incredibly smooth and firm yet delicate texture.

3/4 cup uncooked orzo
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
2 teaspoons extra-virgin olive oil
1 tablespoon fresh lemon juice
Kosher salt
1 1/2 pounds large sea scallops, patted completely dry
Kosher salt and freshly ground black pepper
1 teaspoon unsalted butter plus 3 tablespoons chilled and cubed butter
1 teaspoon olive oil
1 tablespoon chopped shallots
1/3 cup dry white wine
1 tablespoon white wine vinegar
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 teaspoon chopped fresh thyme

Steps:

  • Prepare the orzo according to the package directions. Drain the orzo and return to the pan. Stir in the parsley, chives, olive oil, lemon juice and a pinch of salt. Keep warm.
  • Sprinkle the scallops evenly with salt and pepper. Add 1 teaspoon of the butter and the olive oil to a 12 to 14-inch sauté pan on high heat. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Remove the scallops from the pan and keep warm.
  • Add the shallots to the pan and sauté for about 1 minute, stirring frequently. Pour the wine into the pan and scrape up any browned bits on the bottom of the pan with a wooden spoon. Add the vinegar and cook for 3 minutes, or until the liquid reduces to about 1 tablespoon. Reduce heat to low and add the remaining 3 tablespoons butter, 1 cube at a time, whisking after each addition until the butter is fully incorporated. Stir in the parsley, chives, thyme, and salt and pepper to taste. Serve scallops with sauce and orzo.

LEMON ORZO WITH SCALLOPS

1 cup orzo
5 tablespoons unsalted butter
Grated zest and juice of 1 lemon
Freshly ground pepper
1 pound medium sea scallops, "foot" muscles removed
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1/2 cup dry white wine
1 to 2 tablespoons capers, drained
2 tablespoons chopped fresh parsley
2 cups baby arugula
1 cup cherry tomatoes, halved or quartered if large

Steps:

  • Bring a medium saucepan of salted water to a boil. Add the orzo and cook as the label directs. Reserve 1/4 cup cooking water, then drain. Transfer the orzo to a large bowl and add 2 tablespoons butter, the lemon zest, half of the lemon juice and 2 tablespoons of the reserved pasta cooking water. Season with salt and pepper; toss, adding more pasta cooking water as needed to loosen. Cover to keep warm.
  • Pat the scallops dry and season with salt and pepper. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the scallops and cook until browned on the bottom, about 3 minutes. Flip and cook until just cooked through, 1 to 2 more minutes. Transfer to a plate; cover to keep warm.
  • Add the garlic to the skillet. Cook, stirring, until golden, about 10 seconds. Add the wine, 1/4 cup water and the remaining lemon juice. Cook until reduced by half, about 3 minutes. Add the capers and the remaining 3 tablespoons butter; swirl to melt. Stir in the parsley.
  • Add the arugula and tomatoes to the orzo; toss. Serve with the scallops and pan sauce.

½ lemon, juiced

  • Pat sea scallops dry with paper towels. Season with some lemon juice, salt, and pepper on one side.

SEARED SCALLOPS WITH PUMPKIN BROTH AND ROASTED HAZELNUTS



Seared Scallops with Pumpkin Broth and Roasted Hazelnuts image

10 tablespoons butter
1 onion, diced
1 clove garlic
2 pounds pumpkin, diced small
3 ounces honey
2 cups chicken stock
3 tablespoons olive oil
16 large scallops, cleaned
8 ounces whole hazelnuts, roasted to golden brown, and coarsely chopped
4 ounces hazelnut oil
Chopped chives, for garnish

Steps:

  • In a large heavy-bottomed saucepan, melt the butter over medium heat. Add onion, garlic, and pumpkin, and saute until soft, without letting vegetables brown. Add honey and continue to cook until it caramelizes. Add chicken stock and let simmer for 10 minutes. Puree mixture in a food processor or blender, in batches as necessary. (See note.)
  • In a large nonstick skillet, heat olive oil over medium-high heat. Add scallops, in batches if necessary, and sear until golden brown on 1 side, turn, and continue cooking until just cooked through in the middle.
  • Place 4 scallops, seared side up, in the bottom of 4 deep bowls. Pour the pumpkin broth into the bowl. Sprinkle chopped hazelnuts over top. Drizzle with hazelnut oil and garnish with chopped chives.

½ cup all-purpose flour
2 teaspoons seasoning salt
½ teaspoon dried oregano
½ teaspoon dried thyme
2 tablespoons lemon pepper
16 sea scallops, rinsed and drained
2 tablespoons olive oil
4 tablespoons chopped fresh parsley, divided
4 teaspoons lemon juice, divided

Steps:

  • In a large bowl, mix together flour, salt, oregano, thyme and lemon pepper. Roll scallops in flour mixture until lightly coated on all sides.
  • Heat olive oil in a skillet or frying pan over high heat. Add 4 scallops to the pan and sear on all sides (about 2 minutes for each side). After turning scallops, add 1 tablespoon parsley and 1 teaspoon lemon juice. Remove scallops from pan and place on a plate in the oven to keep warm until ready to serve.

1 cup orzo pasta, uncooked
1 cup fat-free low-sodium chicken broth
1/2 cup dry white wine
1/4 teaspoon dried thyme
2 tablespoons fresh chives, chopped
2 tablespoons fresh lemon juice
2 teaspoons olive oil
1 1/2 lbs sea scallops
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Heat a medium saucepan over medium-high heat.
  • Coat pan with cooking spray.
  • Add onion to pan; saute 3 minutes.
  • Stir in pasta, broth, wine, and thyme; bring to a boil.
  • Cover, reduce heat, and simmer 15 minutes or until liquid is absorbed and pasta is al dente.
