Barramundi Recipe: Seared Fish with Mustard Sauce image

2 tablespoons butter ((high quality butter suggested))
2 fillets barramundi (3 1/2oz each), brought to room temperature
1/4 teaspoon sea salt
1/8 teaspoon pepper
1/4 cup whole milk plain yogurt
1 tablespoon whole grain mustard (prepared)
1 tablespoon capers
fresh chopped flat-leaf parsley or green onions

Steps:

  • Heat butter in a heavy bottom pan over medium-high heat until it begins to brown. Meanwhile, pat barramundi dry. Dry it again. (Wet fish won't sear well). Sprinkle both sides of the fish with salt and pepper.
  • Set fillets on hot pan, and don't touch them. Allow fillets to cook 3-4 minutes, depending on the thickness of your fish. As the fish cooks, the translucent flesh will become opaque from the bottom up. The fish is ready to flip when it has cooked about 2/3 of the way through. (If the fish sticks to the pan, give it about 30 seconds more-- it will release when it's ready.)
  • Next, use a thin metal spatula to flip the fish over. Cook them approximately one minute, and then remove them from the pan.
  • Mix all the yogurt, mustard, and capers together. Taste, and add a little caper brine if desired.
  • Serve fish immediately with sauce and optional garnish.

4 (8-ounce) fish fillets such as red snapper
Kosher salt and freshly ground black pepper
8 ounces creme fraiche
3 tablespoons Dijon mustard
1 tablespoon whole-grain mustard
2 tablespoons minced shallots
2 teaspoons drained capers

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a sheet pan with parchment paper. (You can also use an ovenproof baking dish.) Place the fish fillets skin side down on the sheet pan. Sprinkle generously with salt and pepper.
  • Combine the creme fraiche, 2 mustards, shallots, capers, 1 teaspoon salt, and 1/2 teaspoon pepper in a small bowl. Spoon the sauce evenly over the fish fillets, making sure the fish is completely covered. Bake for 10 to 15 minutes, depending on the thickness of the fish, until it's barely done. (The fish will flake easily at the thickest part when it's done.) Be sure not to overcook it! Serve hot or at room temperature with the sauce from the pan spooned over the top.

King Fish is a popular NZ game fish. Mostly cooked as steaks. I made this sauce up, as sometimes King Fish can be dry if not fresh enough. The sauce is also great with Tuna or Steak.

6 good sized king fish steaks
4 cloves garlic
2 teaspoons lemon pepper
1 small lime
1 teaspoon chicken stock powder
300 ml fresh cream
3 cloves garlic
1 teaspoon chicken stock powder
1 medium red onion, diced finely
1 heaped teaspoon lemon pepper
2 teaspoons whole grain mustard
1 heaping tablespoon capers
little olive oil (for frying)

Steps:

  • To prepare Sauce.
  • Crush garlic and mix with chicken stock and lemon pepper.
  • Fry onion, garlic, chicken stock and lemon pepper untill onion is clear and spices are fragrant.
  • Pour in cream and simmer untill reduced and thick.
  • Add capers and mustard and stir in lightly.
  • To prepare King Fish Steaks.
  • Crush garlic.
  • Mix with lemon pepper, chicken stock and lime juice.
  • Pat steaks dry with a paper towel.
  • Rub garlic mixture into steaks and then sear on a hot grill or barbeque for 5 mins each side (Less if steak is less than 2cm thick).
  • Lay out on a platter and pour creamy mustard sauce over the top.
  • Serve hot with a side salad or vegetables.

6 slices white bread, crusts removed
1 pound lump crabmeat, picked over for shells
1/2 cup mayonnaise
1 large egg yolk
1 stalk celery, finely chopped
1/4 cup finely chopped dill pickles
1 tablespoon unsalted butter, for frying
1 tablespoon olive oil, for frying
2 tablespoons unsalted butter
1 tablespoon all-purpose flour
2 teaspoons curry powder
1 teaspoon paprika
1/2 cup low-sodium chicken broth
1 cup milk
3 tablespoons whole-grain mustard
2 teaspoons yellow mustard seeds
Kosher salt and freshly ground pepper

Steps:

  • Prepare the crab cakes: Pulse the bread in a food processor to make coarse crumbs; spread out the crumbs on a sheet pan. In a large bowl, mix the crab, mayonnaise, egg yolk, celery and pickles. Form into 8 oval-shaped cakes. Dredge each crab cake in the breadcrumbs, coating them all over; place on a plate and refrigerate at least 1 hour.
  • Make the sauce: In a small saucepan, melt 1 tablespoon butter. Stir in the flour, curry powder and paprika; cook until the flour and spices lose their raw smell, 1 to 2 minutes. Add the chicken broth and milk. Bring to a simmer and cook, stirring, until thickened, 5 minutes. Stir in the mustard and mustard seeds; simmer to develop the flavors, about 5 more minutes. Whisk in the remaining 1 tablespoon butter; add 1/2 teaspoon salt, and pepper to taste. Keep warm until ready to serve.
  • Fry the crab cakes: Melt the 1 tablespoon butter with 1 tablespoon olive oil in a large skillet. Add the crab cakes; cook until browned on the bottom, 2 to 3 minutes. Turn and cook until evenly browned on all sides. Serve with the mustard sauce.
