Turkey-Baked Potato Soup image

All the flavor of a baked potato (including bacon) in a satisfying 30-minute soup.

5 slices bacon
1 medium sweet onion, chopped
2 carrots, chopped
3 cloves garlic, finely chopped
7 cups turkey or chicken broth
2 baked potatoes, chopped
3 cups shredded cooked turkey or chicken
1 can (15 oz) great northern beans, drained, rinsed
2 teaspoons ground coriander
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon freshly ground pepper
Chopped fresh cilantro or parsley, if desired

Steps:

  • In 10-inch skillet, cook bacon until crisp; drain on paper towels, reserving 2 tablespoons drippings in skillet. Crumble bacon; set aside.
  • Cook onion, carrots and garlic in hot drippings 6 minutes, stirring frequently, until tender. Stir in remaining ingredients except cilantro. Heat to boiling; reduce heat. Cover; simmer 10 minutes. Stir in crumbled bacon. Garnish individual servings with cilantro.
