Ingredients
2 tablespoons butter
1/2 cup yellow onion, chopped
1/4 cup red bellpepper, chopped
1 teaspoon garlic, minced
1/4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon creole seasoning
1 pound crawfish tails, thawed
1 cup shredded Monterey Jack cheese (plus more for topping)
1- 8 ounce package cream cheese, softened
2 green onions, chopped (plus more for topping)

Steps:

  • Instructions Preheat the oven to 350, spray a 2-quart baking dish with non-stick cooking spray and set aside. In a medium-sized pan, melt the butter over medium heat. Once melted, add the onions, bell pepper, and garlic and cook until the vegetables are translucent and wilted. Add the salt, pepper and creole seasoning. Add the crawfish; cook for 2 minutes longer. In a large bowl combine the Monterey Jack, cream cheese, and green onions; mix well. Add the crawfish mixture to the cheese mixture, combine well. Pour the entire contents into the prepared baking dish. Sprinkle the top of the baking dish with a bit more cheese. Bake until the mixture is bubbly and beginning to brown on top, about 25 minutes. Switch the oven to medium heat BROIL, watch closely, and remove as the top of the dip becomes golden brown. Top with chopped green onions and serve immediately.

This crowd-pleasing cheese dip is ultra-simple to make and easy to upgrade with toppings. Try the fresh cilantro-jalapeno mixture suggested here, or get creative. For a meaty version, sprinkle the queso with your favorite sausage (cooked and crumbed), or chopped pepperoni.

1/2 cup packed fresh cilantro leaves
1/2 small red onion, roughly chopped
2 tablespoons chopped pickled jalapeno, optional
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
One 12-ounce domestic lager beer, such as Budweiser
1/4 cup whole milk
4 cups shredded Monterey Jack cheese
Sprinkle of chipotle powder, optional
Tortilla chips, for serving

Steps:

  • Put the cilantro, onions and pickled jalapeno if using on a cutting board, and chop them into a rough mixture.
  • Melt the butter in a large saucepan over medium heat. Add the flour, and stir until it is absorbed. Pour in the beer and milk; whisk constantly until the mixture comes to a simmer and thickens enough to coat the back of a spoon, about 5 minutes. Remove from the heat, and stir in the Monterey Jack until completely melted and smooth.
  • Transfer the queso dip to a warmed serving dish, a fondue pot or a small slow cooker set to warm or low. Sprinkle the cilantro mixture on top, and sprinkle with a little chipotle powder if using. Serve with tortilla chips.

2 cans (6 ounces each) lump crabmeat, drained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 cup frozen cooked salad shrimp, thawed
French bread baguette, sliced and toasted and assorted fresh vegetables

Steps:

  • In a greased 3-qt. slow cooker, combine the cheese, crab, tomatoes and shrimp. Cover and cook on low until cheese is melted, stirring occasionally, 1-1/2 to 2 hours. Serve with baguette slices and vegetables.

¾ cup half-and-half
¼ cup diced pickled jalapeno peppers
1 teaspoon pickled jalapeno pepper juice
⅛ teaspoon ground cumin
⅛ teaspoon cayenne pepper

Steps:

  • Combine American cheese and half-and-half in a medium microwave-safe bowl. Microwave on high power in 1 1/2 minute intervals, stirring in between each interval, until melted and creamy, 5 to 7 minutes.

1 (32 ounce) package Velveeta cheese
1 (8 ounce) package cream cheese
1 (10 3/4 ounce) can cream of shrimp soup, undiluted
2 (10 ounce) cans tomatoes and green chilies (I like Rotel)
2 tablespoons dried onion flakes
1/2 teaspoon garlic powder
2 tablespoons cumin
1 teaspoon basil
1/2 teaspoon hot pepper sauce (or more to taste)
2 tablespoons Worcestershire sauce
1 lb frozen tiny baby shrimp, thawed (about 2 cups)

Steps:

  • Combine all ingredients except shrimp in top of large double boiler. Heat, stirring frequently, until cheese is melted and mixture is well blended. Add shrimp to cheese mixture. Pour into chafing dish. Serve with large corn chips. Makes approximately 11 cups.
  • Dip may be frozen for up to 6 weeks.
