I adapted this rich treat from a friend's seafood enchilada dish. The thick creamy cheese sauce is an ideal match for the scallops, shrimp and imitation crabmeat. Plus, it's special enough for guests and can be made in a hurry.

1 package (6-1/2 ounces) pizza crust mix
3 tablespoons butter, divided
2 tablespoons all-purpose flour
3/4 cup whole milk
1/4 cup chicken broth
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded Swiss cheese
1/4 pound uncooked bay scallops, chopped
1/4 pound peeled and deveined cooked shrimp, chopped
1/4 pound imitation crabmeat, chopped
2 cups shredded part-skim mozzarella cheese
Paprika, optional

Steps:

  • Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

1 package regular active dry yeast
1/2 cup warm water (105°F to 115°F)
1 1/4 to 1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon sugar
12 uncooked medium fresh shrimp, in shells
1 cup pizza sauce
1 cup shredded mozzarella cheese (4 oz)
1/2 cup shredded provolone cheese (2 oz)
8 anchovy fillets in oil
1/2 lb bay scallops
1/2 cup chopped fresh basil leaves
1/2 teaspoon pepper
4 cloves garlic, finely chopped

Steps:

  • In large bowl, dissolve yeast in warm water. Stir in half of the flour, the oil, salt and sugar. Stir in enough remaining flour to make dough easy enough to handle.
  • Turn dough onto lightly floured surface; knead about 10 minutes or until smooth and elastic. Place dough in large bowl greased with shortening, turning dough to grease all sides. Cover and let rise in warm place 20 minutes.
  • Gently push fist into dough to deflate. Cover and refrigerate at least 2 hours but no longer than 48 hours, deflating dough occasionally.
  • Move oven rack to lowest position. Heat oven to 500°F. On lightly floured surface, press or roll dough into 12-inch round. Place on ungreased pizza screen or in 12-inch perforated pizza pan. Press dough from center to edge so edge is thicker than center.
  • Peel shrimp, leaving tails intact. Spread pizza sauce over dough to within 1/2 inch of edge. Sprinkle cheeses over sauce. Arrange shrimp, anchovies and scallops on cheeses. Sprinkle basil, pepper and garlic over seafood. Bake about 10 minutes or until shrimp are pink and firm, scallops are white and cheeses are melted.

2 1/2 cups mornay sauce
1 teaspoon olive oil
1 teaspoon clarified butter
1/2 cup red onion, finely chopped
1/2 cup red pepper, finely chopped
3 large garlic cloves, pressed
2 cups mozzarella cheese, grated
1 cup crabmeat
12 large prawns, deveined, rinsed and halved
12 large scallops, halved
1/2 cup grana padano, grated
1/2 teaspoon hot paprika, to sprinkle on top

Steps:

  • Preheat oven to 450ºF. Transfer dough to pizza pan. Cover bottom with mozzarella cheese. Place evenly crab meat, prawns and scallops on top. Sprinkle vegetable mixture and then ladle Mornay sauce over. Sprinkle parmesan cheese and some hot paprika.
  • Transfer to the preheated oven and bake for 22 minutes or until seafood are cooked. Let it sits for 15 minutes before slicing.

3/4 pound medium shrimp, deveined with tails removed
1/2 teaspoon oregano
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
3 tablespoons all-purpose flour, plus more for rolling dough
2 cloves garlic, grated
1 1/2 cups milk
1/2 cup grated Parmesan
1 pound frozen pizza dough, thawed
All-purpose flour, for dusting
1 cup deli mozzarella (part-skim, low-moisture), grated
Red pepper flakes, for sprinkling
3 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill pan over medium-high heat.
  • Sprinkle the shrimp in a bowl with the oregano, 1 tablespoon olive oil, 1/2 teaspoon salt and a pinch of pepper.
  • Heat a skillet over medium-high heat, then add the butter and let melt. Add the flour and cook, 1 minute. Add the garlic and continue to cook, whisking, 1 minute more. Whisk in the milk and cook until very thick, 2 to 3 minutes. Stir in 1/4 cup Parmesan and remove from the heat. Season with a pinch of salt and pepper.
  • Preheat the broiler to high.
  • Roll out the pizza dough on a lightly-floured work surface into two 10-inch ovals. Brush the grill pan with the remaining tablespoon olive oil. Grill the dough on both sides until there are grill marks, 2 to 3 minutes per side. Remove the crusts to a sheet tray. Add the shrimp to the grill pan and grill on both sides until fully cooked, pink and opaque, about 4 minutes total. Spread the white sauce on the dough in an even layer. Scatter the shrimp over the sauce. Sprinkle with the mozzarella and the remaining 1/4 cup Parmesan. Place under the broiler until the cheese is melted and bubbly, keeping a close eye so it doesn't burn, 2 to 7 minutes. Sprinkle the red pepper flakes and parsley on top before serving.

1 (10 ounce) package refrigerated pizza dough
3 tablespoons crushed dried rosemary
2 teaspoons cornmeal for dusting
1 teaspoon butter
1 teaspoon all-purpose flour
¼ cup half-and-half
¼ cup white cooking wine
2 tablespoons grated Parmesan cheese
hot sauce
12 ounces imitation crabmeat, flaked
2 cups shredded mozzarella cheese
½ cup shredded zucchini
½ cup sliced fresh mushrooms
10 pitted black olives, halved

Steps:

  • Spray a large bowl with cooking spray. Coat pizza dough with spray and rosemary; place into the bowl. Cover with a towel and let rise in a warm place until doubled in volume, about 1 hour.
  • Spray a baking sheet with cooking spray; lightly dust with cornmeal. Stretch the dough onto the sheet until it covers the bottom and dangles over the edge.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Melt butter in a small saucepan over medium heat. Mix in flour until creamy. Add half-and-half; cook, stirring constantly, until thickened, about 3 minutes. Add wine, Parmesan cheese, and hot sauce; cook and stir until thick and creamy, about 5 minutes. Remove sauce from heat; cool until just slightly warm, at least 8 minutes.

I realize these are recipes and I do not actually make my dough, so feel free to substitute your personal favorite dough recipe for this one.

1 large pizza dough ball from your local pizzaria or gourmet market
1/2 lb shelled and deveined shrimp (uncooked)
1 stick salted butter
1 1/2 Tbsp minced garlic
1/4 jullienne sliced yellow bell pepper
2 c shredded raw spinach
1 lg bag shredded itallian 5 cheese blend 16oz.
1/4 small (pearl onion size) fresh buffalo mozarella cheese balls
4 tsp raw sesame seeds
2 Tbsp garlic powder with parsley
2 Tbsp fresh corn meal
flour for dusting

Steps:

  • 1. Pick up your doughballs from local gourmet market or pizzaria (or make your own) let stand well floured under platic and covered with towel
  • 2. preheat oven to 500 with pizza stone in place 425 if using a pan (baking times will be longer)
  • 3. peel tails of of shrimp and chop into chunks as long as they are wide.
  • 4. put 3/4 of the stick of butter in microwave safe bowl with minced garlic and shrimp and little bit of the spinach chopped fine (for color). cover and nuke for 2 mins.
  • 5. flour counter top and roll out dough to fit stone and peel. sprinkle with cornmeal and sesame seeds and flip onto your pizza peel (or pan if not using a pizza stone)** suggestion use a mix of olive oil and butter on dough before sprinkling ingredients, if using a pan)
  • 6. pour shrimp-butter mix onto center of dough and spread it out to 1" from edge. use brush for the edges
  • 7. use remaining butter (melted), sprinkle garlic powder and sesame seeds along edges, spread out 1/2 of the chopped spinach and cover center with shredded cheese then space out cheeseballs and sliced pepper and remaining spinach (reserve 2 tbs for garnish)
  • 8. step back and open oven, sprinkle corn meal onto stone and slide pizza onto stone using your peel.
  • 9. bake 5-12 minutes, or until crust is golden brown and cheese is bubbly
  • 10. garnish with spinach, slice up and enjoy!!

Steps:

  • Preheat oven to 200 degrees F (95 degrees C).
  • Place garlic in a small stainless steel bowl; drizzle with 1 tablespoon olive oil and cover with aluminum foil.
  • Bake in the preheated oven until tender and browned, about 1 hour. Remove and chop garlic. Increase oven temperature to 375 degrees F (190 degrees C).
  • Grease a 10x12-inch pan with the remaining olive oil; sprinkle lightly with garlic salt. Place crust onto the pan.
  • Mix spinach, mayonnaise, and Parmesan cheese together in a bowl. Spread mixture over the pizza crust.

This calls for common store-bought ingredients, but you can easily tweak the recipe. For example, sometimes I use 3 personal-size pizza crusts instead of one large pizza crust, and you can easily just use shrimp if you can't find the frozen seafood mix.

I made this up for our weekly Photo Club competition & IMHO it is very good - hope you think so too. Use any mix of seafood that you like, make it hotter, more garlic etc etc - that's what a pizza is all about. This one suits my taste buds. To bake it I used the type of pizza pan that has holes in the bottom to allow heat in to crisp the bottom. Make up ahead and keep in the fridge for several hours then pop it in the oven 20-25 minutes before serving..

1 package refrigerated crescent dinner roll
1 package cream cheese, softened
1 teaspoon dried dill weed
1 teaspoon lemon, zest of
1/2 cup seafood cocktail sauce
1/2 medium cucumber, seeded and chopped
1/4 cup red bell pepper, seeded and chopped
4 ounces flaked crabmeat (can substitute imitation)
1 tablespoon fresh parsley, snipped
lemon slice (to garnish)

Steps:

  • Pre heat oven to 350 degrees.
  • Unroll crescent roll dough and divide into triangles.
  • Arrange triangles in a circle on a 13 inch baking stone.
  • Arrange triangles with narrow ends towards the center.
  • Roll dough into a 12 inch circle using a lightly floured rolling pin to seal the seams.
  • Bake 12 to 15 minutes or until light golden brown.
  • Cool completely.
  • In a 1 qt.
  • bowl, combine cream cheese and dill weed.

Steps:

  • Pizza dough: In a bowl of a stand mixer, combine warm water, yeast and honey; sits for 15 minutes.
  • In a medium bowl, combine flour, rosemary, garlic powder and sea salt; whisk.
  • Add olive oil and 2 cups flour to yeast mixture. With the dough hook attachment, process for 2 minutes on speed 2. Scrape the sides of the bowl, increase speed to 3 and process until it forms a ball clinging to the hook and cleaning the sides of the bowl while adding more flour to it. Increase speed to 4 and knead for 4 minutes until smooth.
  • Remove from bowl and form a ball by folding under. Place dough in a lightly oiled bowl, coating it. Cover with a tea towel and let it rise for 1 to 1:30 hours or until it doubles in size.
  • When time's up, punch dough, form a ball again, cover and rise for another hour. Prep pizza pan by greasing it with butter and sprinkling corn meal; set aside.
  • Transfer onto a lightly floured work surface. Sprinkle lightly dough and rolling pin with flour; roll down to 16-inch diameter (pizza pan 14"). Meanwhile, make Mornay sauce.
  • Mornay sauce; On medium heat, add butter and when melted add flour; whisk and cook until blond roux, 5 minutes. Add warm milk; whisk again. Add the rest of the ingredients, whisk and cook for 10 minutes. If not ready to use it, place wax paper on top, touching sauce to prevent skin formation.
  • Prep veggies; in a small skillet over medium heat, add oil and butter. When hot, sauté onion and red peppers, about 3 minutes. Add garlic and sauté for 1 minute; remove from heat. Preheat oven to 450ºF.
  • Transfer dough to pizza pan dusted with corn meal. Cover the bottom of pizza with mozzarella cheese. Place evenly crab meat, prawns and scallops on top. Sprinkle vegetable mixture and then ladle Mornay sauce over. Sprinkle parmesan cheese and some hot paprika. Transfer to the preheated oven and bake for 22 minutes or until seafood are cooked. Let it sits for 15 minutes before slicing.

12 mussels
1/2 cup dry white wine
14 sun-dried tomatoes, chopped
4 large garlic cloves
1 large shallot
1 cup canned crushed tomatoes
1/2 teaspoon grated lemon peel
1/4 teaspoon dry crushed red pepper
10 large raw shrimp
5 ounces bay scallops
salt
fresh ground pepper
12 inches baked prepared pizza crust
1 tablespoon garlic oil
3/4 cup mozzarella cheese
1 tablespoon fresh basil, minced
2 tablespoons fresh grated parmesan cheese

Steps:

  • Mussels: Scrub and debeard.
  • Sun dried tomatoes: NOT packed in oil.
  • Garlic and shallots: Mince.
  • Canned Crushed tomatoes: with puree added.
  • Shrimp: Raw. Peel. Devein. Cut in half lengthwise.
  • Pizza crust: Boboli or the like.
  • Combine first 5 ingredients in heavy skillet over med high heat. Cover. Boil until mussels open, shake pan occasionally. Use tongs and move mussels to work surface. Throw out unopened ones. NO you cannot open them and use them.
  • Add crushed tomatoes, lemon peel and dried red pepper to same skillet. Stir over med high heat until sauce is thick.
  • Remove mussels from shells and discard shells. Place mussels in small bowl.
  • Preheat oven to 450°F Bring sauce to simmer over med high heat.
  • Add shrimp and scallops and cook until almost cooked through. About 3 minutes. Remove from heat and cool for 10 minutes. Stir in mussels. Season with salt and pepper.
  • Place crust on large baking sheet. Brush with garlic oil. Bake until golden brown and crust edges begin to crisp. [10 minutes or so]
  • Stir Mozzarella and basil into seafood mix. Spoon over crust. Sprinkle on parmesan.
  • Bake until shrimp and scallops are cooked through and mozzarella melt. Transfer to cutting board. Cool 5 minutes. Cut.

1 package regular active dry yeast
1/2 cup warm water (105°F to 115°F)
1 1/4 to 1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon sugar
12 uncooked medium fresh shrimp, in shells
1 cup pizza sauce
1 cup shredded mozzarella cheese (4 oz)
1/2 cup shredded provolone cheese (2 oz)
8 anchovy fillets in oil
1/2 lb bay scallops
1/2 cup chopped fresh basil leaves
1/2 teaspoon pepper
4 cloves garlic, finely chopped

Steps:

  • In large bowl, dissolve yeast in warm water. Stir in half of the flour, the oil, salt and sugar. Stir in enough remaining flour to make dough easy enough to handle.
  • Turn dough onto lightly floured surface; knead about 10 minutes or until smooth and elastic. Place dough in large bowl greased with shortening, turning dough to grease all sides. Cover and let rise in warm place 20 minutes.
  • Gently push fist into dough to deflate. Cover and refrigerate at least 2 hours but no longer than 48 hours, deflating dough occasionally.
  • Move oven rack to lowest position. Heat oven to 500°F. On lightly floured surface, press or roll dough into 12-inch round. Place on ungreased pizza screen or in 12-inch perforated pizza pan. Press dough from center to edge so edge is thicker than center.
  • Peel shrimp, leaving tails intact. Spread pizza sauce over dough to within 1/2 inch of edge. Sprinkle cheeses over sauce. Arrange shrimp, anchovies and scallops on cheeses. Sprinkle basil, pepper and garlic over seafood. Bake about 10 minutes or until shrimp are pink and firm, scallops are white and cheeses are melted.

  • Combine salt, sugar and yeast into the warm water and mix well. Let it stand for about 10 mins)
  • Pour in the yeast mixture little by little into the flour and using a mixer combine the ingredients well.
  • Add in a few drops of olive oil while the mixer is running and add in the yeast mixture as needed.
  • The dough will form to be a soft ball.
  • I divided the dough into two and placed it into two separate large bowls. (Lightly grease the bowl before using)
  • Cover the bowl with damp cloth and set aside to rise.
  • Mix the tuna with a little salt, dried basil leave and ground black pepper. Set aside.
  • On to the baked pizza base, spread some mayonnaise + dijon mustard sauce.
  • Sprinkle a thin layer of mozarella cheese (this is to ensure that the topping doesn't fall off) and followed by the tuna mixture.
  • Arrange the crabsticks and sprinkle some corn kernels.
  • Top it with some chilly sauce and thousand island sauce. (Use moderately)
  • Another layer of cheese and back to the oven for 10 mins or until crust gets browned. ENJOY!!!

I recommend using the fake crab rather than canned, but fresh crab would be best. It's rich and delicious. I love to dip it in cocktail sauce. YUMMY!!

1 cup crabmeat (can be fresh or imitation)
1 1/2 cups shredded mozzarella cheese
