Yield 6 servings

Number Of Ingredients 28

1 bay leaf
1 large fresh rosemary sprig
1 tablespoon fennel seeds, coarsely crushed
3 tablespoons olive oil
1 fennel bulb, chopped
3 large shallots, chopped
1 (28-ounce) can diced tomatoes in juice
1 1/4 cups dry white wine
3 cups fish broth or bottled clam juice
1/4 cup tomato paste
8 small littleneck clams, scrubbed
1 pound mussels, scrubbed, debearded
1 russet potato, about 8 ounces, peeled, cut into 3/4-inch cubes
1 1/2 pounds assorted firm-fleshed fish filets such as halibut, salmon, or tuna, cut into 1 1/4 inch chunks
1 pound uncooked large shrimp, peeled, deveined
2 corn cobs, quartered crosswise
2 tablespoons chopped fresh Italian parsley leaves
Garlic Toasts with Red Pepper Aioli, recipe follows
Garlic Bread:
2 tablespoons olive oil
12 (1/2-inch thick) slices ciabatta bread
Salt and freshly ground black pepper
2 garlic cloves
2 garlic cloves
1/2 cup roasted red bell peppers, drained, patted dry
1/3 cup mayonnaise
2 tablespoons olive oil
Salt and freshly ground black pepper

Steps:

  • Wrap the bay leaf, rosemary, and fennel seeds in a cheesecloth bag. Set the sachet aside. Heat the oil in a very large pot over medium heat. Add the chopped fennel and shallots and saute until the fennel is tender, about 6 minutes. Season with salt and pepper. Add the tomatoes with their juices, the wine and fish broth. Stir in the tomato paste. Add the sachet. Bring to a boil. Reduce the heat to medium-low. Cover and simmer until the flavors blend, about 10 minutes.
  • Add the clams to the cooking liquid. Cover and cook until the clams open, about 6-8 minutes (discard any clams that do not open). Using tongs, transfer the clams to a bowl. Repeat with the mussels. Add the potatoes to the cooking liquid and simmer until they are almost tender, about 10 minutes. Add the fish, shrimp, and corn. Simmer until the fish and shrimp are just cooked through, and the corn is heated through, about 5 minutes. Return the clams and mussels to the soup. Stir in the parsley. Season the soup to taste with salt and pepper.
  • Ladle the soup into bowls and serve with the Garlic Toasts with Red Pepper Aioli.
  • Aioli:
  • To make the garlic bread: Preheat the oven to 400 degrees F.
  • Drizzle the oil over the bread slices. Arrange the bread on a baking sheet. Sprinkle with salt and pepper. Bake until the bread is crisp and golden, about 5 minutes. Immediately rub the garlic cloves over the hot toasts.
  • To make the aioli: Finely chop the garlic in the food processor. Add the peppers and blend until almost smooth. Blend in the mayonnaise. With the machine running, blend in the oil. Season the aioli, to taste, with salt and pepper. Transfer the aioli to a small bowl. (The aioli can be made 2 days ahead. Cover and refrigerate.)
  • Spread the aioli over the toasts and serve.

SEAFOOD BOIL & GRILLED ROSEMARY BREAD WITH OLIVE OILS FROM SPAIN

Seafood Boil & Grilled Rosemary Bread with Olive Oils From Spain image

This summertime seafood boil is a go-to when feeding a hungry crew. For this version, we're taking it to the next level, and cooking it with Extra Virgin Olive Oil from Spain. Fragrant, delicious, and perfect for drizzling, dipping, and just about everything else under the sun.

Provided by Dennis Prescott

Yield 6-8 servings

Number Of Ingredients 32

Summer Herb Vinaigrette
1 shallot, roughly chopped
1 garlic clove, roughly chopped
1 cup fresh basil leaves
1 cup fresh flat-leaf parsley leaves
½ teaspoon red chili flakes
2 tablespoons red wine vinegar
½ cup Hojiblanca Extra Virgin Olive Oil from Spain
½ teaspoon sea salt
¼ teaspoon freshly cracked black pepper
Seafood Boil
2 pound baby (new) potatoes
2 large onions, quartered
1 garlic head, halved crosswise
4 cups dry white wine
2 tablespoons Old Bay seasoning
¼ cup sea salt
6 fresh thyme sprigs
1 bay leaf
1 pound kielbasa sausage, cut into 1-inch chunks
6 ears of corn, shucked and cut into thirds
4, 1 ¼ pounds live lobsters
2 pounds fresh soft-shell clams
2 pounds fresh mussels, cleaned and scrubbed
2 pounds jumbo shrimp
4 lemons, halved
Rosemary Olive Oil Grilled Bread
1 rustic loaf of bread, sliced
¼ cup Hojiblanca Extra Virgin Olive Oil from Spain, plus more for drizzling
1 tablespoon chopped fresh rosemary leaves
1 garlic clove, peeled
Sea salt and freshly cracked black pepper

Steps:

  • Instructions
  • First, prepare the summer herb vinaigrette. Combine the shallot, garlic, fresh herbs, and red chili flakes in the bowl of a food processor, and pulse until finely chopped. Add the red wine vinegar and season with sea salt and pepper. With the food processor running on low, pour in the Extra Virgin Olive Oil from Spain in a slow and steady stream until the oil is incorporated and the vinaigrette is smooth and beautiful. Chill in the fridge while you crack on with the seafood boil.
  • Combine the potatoes, onions, and garlic in a very large stockpot. Pour in the wine and 4 cups of water, then add the Old Bay, sea salt, thyme, bay leaf, and sausage. Bring the mixture to a boil over medium-high heat, cover, and cook for 15 minutes.
  • Add a layer of corn, then the lobsters, then the clams and mussels. Cover and cook until the lobsters have turned bright red and the clams have opened, about 15 minutes. When there are 5 minutes of cooking time remaining, add the shrimp to the top of the seafood mixture. Using a large colander, carefully drain the liquid from the pot, reserving the broth.
  • While the seafood boil is cooking away, heat a grill (or grill pan) over medium heat. Brush both sides of the bread slices with Extra Virgin Olive Oil from Spain, then sprinkle over the rosemary, sea salt, and pepper. Grill until toasted with beautiful grill marks on each side, about 5 minutes.
  • Pour the seafood, potatoes, and corn onto a large picnic table covered with newspaper (or the paper of your choice). Spoon over a few tablespoons of the summer herb vinaigrette, then drizzle over an extra hit of Olive Oil from Spain. Serve with remaining vinaigrette, lemons, the reserved broth, and that incredible grilled bread.
  • This recipe created by Dennis Prescott is in partnership with Olive Oils from Spain.

SHRIMP BATHED IN OLIVE OIL AND LEMON

Shrimp Bathed in Olive Oil and Lemon image

A simple but lavish bath of olive oil and lemon juice is the Italian way of showing off superfresh seafood. The key, according to Marcella Hazan, is that the dish should never see the inside of a refrigerator, which changes the texture of the seafood and the flavor of the olive oil. She calls for shrimp in this recipe, but the formula also works with squid, clams and meaty fish fillets.

Time 20m

Yield 8 to 10 servings as an appetizer, 4 to 6 servings as an entree

Number Of Ingredients 6

3/4 cup extra-virgin olive oil, plus more as needed
1/4 cup freshly squeezed lemon juice (from 1 to 2 lemons)
2 pounds medium-large shrimp (about 26-30 per pound), peeled and deveined (tails optional)
Flaky sea salt and coarsely ground black pepper
1 large pinch freshly chopped flat-leaf parsley
Torn or sliced crusty bread, for serving

Steps:

  • Bring a pot of water to a boil, preferably not too deep, so you can watch the shrimp as they cook. Pour the olive oil and lemon juice into a baking or serving dish, preferably a white one to show off the colors of the finished dish.
  • Working in a few batches to prevent overcooking, boil the shrimp over high until just firm and opaque, 2 to 3 minutes, removing them to a colander with a slotted spoon. When all the shrimp are cooked, transfer them to the olive oil-lemon bath and gently mix to coat. Sprinkle generously with salt and pepper. The shrimp should be just covered with liquid; pour in more oil as needed. Set aside to cool to room temperature.
  • Just before serving, taste and adjust the seasonings with salt and pepper. Sprinkle with parsley and serve with bread, spooning some liquid over each serving.

ROSEMARY OLIVE OIL BREAD

Rosemary Olive Oil Bread image

A healthy dose of olive oil gives this rosemary-infused bread from Mark Bittman's How to Bake Everything a rich, moist crumb and pale golden hue. Among other things, this is a wonderful and unconventional loaf for sandwiches.

Provided by Mark Bittman

Categories     Bake     Bread     Rosemary

Yield Makes 1 large boule

Number Of Ingredients 5

3 cups all-purpose or bread flour, plus more as needed
2 teaspoons instant yeast
2 teaspoons coarse kosher or sea salt
1/3 cup olive oil
1 tablespoon fresh rosemary leaves

Steps:

  • Combine the flour, yeast, and salt in a food processor. Turn on the machine and add the olive oil through the feed tube, followed by 3/4 cup water. Process for about 30 seconds, adding more water, 1 tablespoon at a time, until the mixture forms a ball and is slightly sticky to the touch.
  • Turn the dough onto a floured work surface and, by hand, knead in the rosemary until the dough feels smooth. Put it in a bowl, cover with plastic wrap, and let rise until the dough doubles in size, about 2 hours. (You can cut this rising time as short as 1 hour if you are in a hurry, or you can let the dough rise more slowly, in the refrigerator, for up to 8 hours. At this point, you may also wrap the dough tightly in plastic and freeze for up to a month; defrost in a covered bowl in the refrigerator or at room temperature.)
  • Lightly dust a work surface with flour. Shape the dough into a boule, sprinkling with flour as necessary but keeping it to a minimum. Line a colander or large bowl with a well-floured kitchen towel, set the loaf in the bowl, and cover with another towel (this keeps it from spreading too much). Let the dough rise for at least an hour and preferably longer, up to 2 hours.
  • About 45 minutes before the dough has risen, heat the oven to 425°F. Put an ovenproof skillet (preferably cast iron) on the floor or the lowest rack while the oven heats. If you're using a baking stone, put it on the rack above the skillet while the oven heats; if not, line a baking sheet with parchment paper.
  • Once you're ready to bake, slide or turn the dough out onto a lightly floured peel or flexible cutting board, seam side down, or just transfer it to the prepared baking sheet. Rub the loaf with a little flour (this helps prevent scorching) and slash the top with a sharp knife or razor blade. Use the peel or cutting board to slide the loaf onto the baking stone or slide the baking sheet into the oven. Partially pull out the rack with the heated skillet and very carefully pour 1 cup hot water into the skillet (it will create a lot of steam). Slide the rack back in and immediately close the oven door
  • Bake for 45 to 50 minutes, turning the bread or the baking sheet halfway through, until the crust is golden brown, the bottom sounds hollow when tapped, and the internal temperature reaches 200°F on a quick-read thermometer. If the bread is browning too quickly, lower the temperature to 400°F. Remove and cool on a wire rack.
  • Variations:
  • Rosemary Olive Oil Bread With Olives or Tomatoes: In Step 2, knead 1 cup halved pitted oil-cured olives, roughly chopped dried tomatoes, or a combination into the dough along with the rosemary.
  • Olive Oil Bread With Onions and Mint: A nice combo; you can make this with olives too (see the preceding variation), but omit the rosemary. In Step 2, knead 1 large onion, chopped, into the dough in place of or along with the olives. Add 1 tablespoon chopped fresh mint if you like.
  • Pancetta and Black Pepper Bread: Rich, savory, and packed with flavor: You can use olive oil here if you'd rather not use the pancetta pan drippings: Omit the rosemary. Chop 1 pound pancetta (or bacon) and cook until it's crisp. Drain the meat and set it aside, reserving 1/3 cup of the rendered fat. If you don't have enough, add olive oil or good-quality lard to make up the balance. Proceed with the recipe, using the reserved fat in place of the oil. In Step 2, knead in the pancetta pieces and 2 tablespoons coarsely ground black pepper.
