This salad dish has a refreshing taste on a nice sunny day. My family loves it. Found this recipe on the back of the bag of shells. I added a bit more to it.

2 cups shell pasta, cooked and drained
1 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon fresh lemon juice
1 teaspoon dill weed
1/4 teaspoon salt
1 cup diced cucumber
1 cup diced carrot
12 ounces freshly cooked baby shrimp

Steps:

  • Cook shells as it is directed on pkg.
  • Rinse and drain well.
  • In a large bowl combine mayonnaise,mustard,lemon juice,dill weed and salt.
  • Mix well.
  • Add cumcumbers,carrots, shrimp and shells.
  • Mix well Cover and chill in ref.
  • for 2-4hours or overnight.

This is the perfect picnic dish - no mayo!! Very easy to prepare and a nice change from the usual covered dish take along. I've been making this for 20 years (and I'm still young)!

1 (1 lb) box of medium sea shell macaroni or 1 (1 lb) box large sea shell macaroni
1 can tomato soup
1 medium chopped green bell pepper
1 medium chopped onion
1 (4 ounce) jar pimientos
3/4 cup sugar
3/4 cup cooking oil
3/4 cup cider vinegar
salt and pepper

Steps:

  • Mix all ingredients EXCEPT macaroni in a 3 quart glass covered dish.
  • Chill in refrigerator overnight to blend flavors.
  • Cook macaroni according to package directions and drain.
  • Add to liquid mixture stirring well and refrigerate at least 2-3 hours before serving.

1 lb cleaned cooked shrimp, chopped
1 lb small shell pasta, cooked and cooled
1/4 cup mayonnaise or 1/4 cup light mayonnaise
1 dash lemon juice
2 tablespoons sugar (or sweeten, to taste)
3 tablespoons horseradish
add parsley
salt and pepper

Steps:

  • Mix tog shells and shrimp.
  • Mix tog next 4 ingredients and add to shell mixiture.
  • Chill for at least 3 hours and then serve.
  • (cooking time is the chilling time).

3 cups uncooked medium pasta shells
2/3 cup shredded carrots
2/3 cup frozen peas, thawed
4 turkey bacon strips, diced and cooked
4 ounces reduced-fat cream cheese
1/2 cup reduced-fat sour cream
3/4 cup fat-free milk
1 envelope ranch salad dressing mix

Steps:

  • Cook shells according to package directions. Meanwhile, in a large bowl, combine the carrots, peas and bacon. In a small bowl, beat cream cheese and sour cream. Add milk and dressing mix; beat until combined., Drain pasta and rinse in cold water; add to vegetable mixture. Add dressing mixture; toss to coat. Chill until serving.

This salad is from my mom Libby. We love to make this for family gatherings and to take to pitch in gatherings. The taste is fantastic and the extra crunch from the veggies is just the perfect combination.

SALAD
7 oz small shell pasta cooked and cooled
8 oz cheddar cheese, shredded
3 hard boiled eggs
1 c celery sliced
1/2 green pepper diced
DRESSING
3/4 c miracle whip
1/2 c sweet pickle relish

Steps:

  • 1. Toss salad ingredients in large bowl.
  • 2. In small bowl mix dressing ingredients. Add dressing to macaroni mixture. Refrigerate 1 hour or more to let flavors blend.

8 ounces small shell macaroni, uncooked
1 cup shredded carrot
3/4 cup diced green pepper
2/3 cup sliced celery
1/2 cup minced green onions
1 (6 1/8-ounce) can tuna in water, drained and flaked
1/4 cup plus 2 Teaspoons plain low-fat yogurt
1/4 cup reduced-calorie mayonnaise
1/4 teaspoon celery seeds
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • 1) Cook macaroni according to package directions, omitting salt; drain. Rinse with cold water, and drain well. 2) Combine macaroni, carrot, and next 4 ingredients; toss gently. Combine yogurt and next 4 ingredients; stir well. Add to pasta mixture, tossing gently. Cover and chill thoroughly. Note: Variations; Substitute 8 ounces elbow or corkscrew macaroni instead of shells. Add diced sweet red or yellow pepper instead of green, or use all three. 1 - 16 oz can kidney beans - drained and rinsed
½ cup chopped celery
½ small red onion, thinly sliced
2 Tbsp. chopped parsley
½ cup light Italian dressing
½ head romaine lettuce
1 can tuna, drained
4 medium carrots, peeled, sliced
2 tomatoes cut into wedges
1 bell pepper cut into strips

Steps:

  • Cook pasta, drain. Toss with beans, celery, onion, parsley and 1/3 cup dressing. Let marinate for awhile. Arrange lettuce on plates. Add above mix. Surround with remaining ingredients. Drizzle with remaining dressing.
