SCOTCH SHORTBREAD
My best friend in high school's mom made this for me when I had my first overnight stay in a hospital. I loved it so much that I made it whenever I got the chance. When we lived overseas, my mom had to limit the number of times I could make it because butter was so expensive. Now it's part of my Christmas baking. Very rich and good!

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Mix flour, butter, and 1/2 cup sugar together in a bowl using your hands until dough is well combined. Press dough into an ungreased 11 1/2x 7 1/2-inch pan or jelly roll pan. Sprinkle with 1 tablespoon sugar.
- Bake in the preheated oven until edges are light brown, 20 to 30 minutes. Cut shortbread into squares in the pan while still warm. Cool completely before removing squares from pan.

KITTENCAL'S SCOTCH SHORTBREAD BARS
These shortbread bars is one of my all-time favorite recipes... I find that baking shortbread in a baking pan somehow produces a flakier, richer cookie...I'm sure you will enjoy these as much as we do.

Steps:
- Set oven to 350 degrees F.
- Prepare an ungreased 11 x 7-inch baking pan.
- In a mixing bowl cream butter and sugar well.
- Combine flour, baking powder and salt; gradually add to creamed mixture.
- Spread into a prepared ungreased baking pan.
- Prick well several times with a fork.
- Bake for 20-22 minutes, or until the edges just begin to brown.
- Remove from oven the dust with more icing sugar.
- Cool on wire rack.
- Cut into bars.

This recipe uses rice flour.

Steps:
- Sift dry ingredients over unsalted, softened butter. Cut in butter until completely incorporated.
- Knead dough on floured surface until soft, about 2 minutes. Roll dough into 2 cylinders and cover with plastic wrap. Chill one hour.
- Preheat oven to 350 degrees F (180 degrees C).
- Knead dough to soften a bit then roll 1/4 inch thick and cut with a cookie cutter. Bake for 5 minutes on ungreased cookie sheet.

- Sift together the flour, salt and baking powder. In a large bowl, beat the butter and sugar together until light and fluffy. Add the sifted dry ingredients and mix to combine. Chill until dough is easy to handle, about 10 minutes.
- On a lightly floured surface roll dough out to 1/4 inch thick. Cut into desired shapes and place on ungreased baking sheets.
- Bake at 325 degrees F (165 degrees C) for 10 to 15 minutes.

UNCLE BILL'S SCOTCH SHORTBREAD COOKIES
I have been making these cookies for over 50 years. The recipe was given to me by my Nana who came to Canada from England just after the First World War.

Steps:
- Preheat oven to 350°F.
- In a large mixing bowl, sift flour with baking powder and salt.
- In a separate mixing bowl, mix together butter, sugar and almond extract; beat until very light and fluffy.
- Combine butter mixture with flour and mix by hand until dough is very smooth.
- If dough is too hard to handle, refrigerate for about 1/2 hour to chill.
- Form dough into 1 inch balls.
- Place dough balls on ungreased cookie sheets.
- Flatten to desired thickness, about 1/4 inch thick using the bottom of a drinking glass preferably with a pattern on the bottom.
- Bake in preheated 350 F oven for 20 minutes or until light golden brown.
- DO NOT OVERBAKE.
- Store cookies in a container with lid.

- Preheat oven to 300 degrees. Sift the flour, sugar and salt together. Add the butter and use your hands or a pastry cutter to combine until the mixture is crumbly. Work into a ball and knead briefly. Pat into a 1/4-inch sheet on an ungreased cookie sheet. Cut the dough into 2-inch diamonds.
- Bake for 45 minutes. Remove from the oven. Immediately recut the cookies. Separate carefully and cool on a rack. Cookies can be frozen in an airtight container, with wax paper between each layer for up to 6 months. Defrost 30 minutes before serving.

- 1. Preheat your oven to 325 degrees.
- 2. Cream together the butter and sugar. Add flour and mix until just combined. The dough will be crumbly.
- 3. Press the dough together into a rectangle or circle onto an ungreased cookie sheet. Try to make the dough uniformly thick, even on the edges, roughly 3/4" thick. Prick the dough all over with a fork. I usually prick mine in a grid so I have lines to cut on when then they are baked.
- 4. Bake 1 hour or until just golden. Cut into squares while still warm. Let cool, and enjoy!

- 1. Cut butter into small chunks. 2. Add sugar and mix together thoroughly until very smooth. 3. Add flour gradually. Mix with hands until it makes one smooth ball. 4. Chill for one hour. 5. Roll out on a floures surface until 1/2 to 1/3 inch thick 6. Cut in small circles about 1 1/2 inch. 7. Place on cookie sheet 8. Poke with fork. 9. Bake at 325 for 10 - 15 minutes until golden brown around the edges.
