TAMARI AND HONEY-GLAZED SCALLOPS



Tamari and Honey-Glazed Scallops image

Sweet honey, salty tamari, tangy rice wine vinegar and hot red pepper flakes combine to make a delectable glaze for scallops. Try a robust honey in this recipe, such as buckwheat, eucalyptus or avocado to balance the strongly flavored tamari. Serve with wilted kale and brown rice.

1 1/2 tablespoon gluten-free tamari
1 1/2 tablespoon honey
1 tablespoon Dijon mustard
1/2 tablespoon rice wine vinegar
1/4 teaspoon crushed red chile flakes
1 pound large sea scallops, tough muscles removed from the side of each
1 tablespoon extra-virgin olive oil, divided
1 teaspoon toasted sesame seeds

Steps:

  • In a small bowl, whisk together tamari, honey, mustard, vinegar and red pepper flakes; set aside.
  • Pat scallops dry with paper towels then heat 1 tablespoon oil in a large skillet over medium high heat.
  • Cook scallops in a single layer, flipping once, until golden brown and just cooked through, about 2 minutes per side. (Work in batches, if necessary, adding the remaining 1 tablespoon oil when needed.)
  • Transfer scallops to a large plate as done.
  • Reduce heat to medium low and allow skillet to cool off a bit, then carefully add tamari-honey mixture to skillet and simmer briefly until reduced to a glaze.
  • Return scallops to skillet and toss well to coat. Sprinkle with sesame seeds and serve.

Number Of Ingredients 8

2 and 1/2 tablespoons low-sodium soy sauce
1 and 1/2 teaspoons sriracha sauce
3 tablespoon honey
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 and 1/2 pounds large sea scallops, muscles removed
2 tablespoons unsalted butter (or ghee), divided
Chopped scallions and cilantro, for garnish, optional

Steps:

  • In a small mixing bowl combine the low-sodium soy sauce, sriracha, honey, Dijon mustard, and vinegar; mix well to combine then set aside.
  • Vigorously pat scallops dry using a double layer of paper towels; set aside. Heat 1 tablespoon of butter (or ghee) in a large skillet over medium-high heat. Cook scallops, in a single layer, until golden brown and just cooked through, about 2 minutes per side. Cook scallops in batches, if needed, adding the remaining butter or ghee when the pan begins to look dry. Transfer cooked scallops to a large plate and set aside.
  • Using the same skillet you cooked the scallops in, reduce the heat to medium-low and carefully add in the honey mixture. Simmer for 2 to 3 minutes, or until it's reduced to a glaze. Quickly return scallops to skillet and toss well to coat. Sprinkle with cilantro and scallions, if desired, and serve at once. I love serving these scallops with brown rice and broccoli!

¼ cup soy sauce
3 cloves garlic (minced)
juice of one small lemon
1 Pound Large Scallops
2 Tablespoons butter
green onions (for garnish)

Steps:

  • In a small bowl whisk honey, soy sauce, garlic and lemon. Add half of the sauce to the scallops and let marinate for 30 minutes.
  • In a medium sized skillet at the butter. Add the scallops and discard marinade. Season with salt and pepper. Turn the heat to medium high. Sear scallops for 3- 3½ minutes on each side until they are golden brown on each side. Add the reserved marinade to the skillet. Cook until the sauce starts to thicken and add scallops back in to coat. Garnish with green onions.

¼ teaspoon seafood seasoning (such as Old Bay®)
¼ teaspoon salt

1 teaspoon Dijon mustard
1 tablespoon chopped fresh tarragon

1/2 cup finely diced shallots
1 large or 2 medium oranges, zested
Olive oil
3/4 cup orange juice
1 3/4 cups chicken broth
2/3 cup dry white wine
2 habanero peppers, cut into quarters, stems and veins removed
1/4 cup orange liqueur (recommended: Grand Marnier)
9 large sea scallops rinsed and dried
Salt and freshly ground black pepper
Chopped chives and orange slices, for garnish

Steps:

  • Cook shallots and zest in 2 tablespoons olive oil over medium-high heat until they begin to brown. Add orange juice, broth, wine and habanero slices. Cook over high heat to reduce. Taste often and remove and discard habaneros when desired heat is achieved. When habaneros are removed, add the liqueur.
  • Brush scallops with olive oil and season with salt and pepper. Sear scallops on a grill pan to a slightly under-cooked state, about 3 1/2 minutes per side but watch them closely. Remove from grill pan and add scallops to the thickened orange glaze, tossing to coat well until scallops are cooked to desired doneness.
  • Smear a clean plate with orange glaze top with 3 scallops. Drizzle scallops with more glaze and garnish with chives and orange slice.

  • Whisk soy sauce, sesame oil, and remaining 1 teaspoon ginger in medium bowl to blend. Add scallops and stir to coat. Let stand 30 minutes at room temperature, turning occasionally.
  • Prepare barbecue (medium-high heat). Whisk honey and remaining 1 tablespoon lime juice in another small bowl. Thread 4 scallops on each of 4 metal skewers. Sprinkle with salt and pepper. Grill scallops until just opaque in centers, brushing occasionally with honey glaze, about 2 minutes per side.
  • Spoon salsa into center of platter. Remove scallops from skewers and arrange atop salsa. Sprinkle with cilantro leaves and serve.
