8 (6 to 8-inch) bamboo skewers
16 jumbo deveined, peeled shrimp
16 sea scallops
Salt and pepper
1 teaspoon sweet paprika, 1/3 palmful
1/2 teaspoon crushed red pepper flakes, eyeball it
1 lemon zested and juiced
2 tablespoons chopped flat leaf parsley, a handful
1 tablespoon extra virgin olive oil, 1 turn of the pan

Steps:

  • Preheat a large nonstick skillet over medium high to high heat.
  • On bamboo skewers, thread 4 shrimp on 4 skewers, 4 scallops on each of 4 skewers. Season both shrimp and scallop skewers with salt and pepper on both sides. Combine paprika, crushed pepper, lemon zest and parsley in a small dish. Sprinkle combined herbs and spices over shrimp and rub. Add a 1/2 a turn of the pan of extra virgin olive oil, (1 1/2 teaspoons), to the hot skillet and sear the shrimps 3 minutes on each side or until curled and pink. Squeeze the juice of 1/2 lemon over the pan and remove to a warm platter. Return pan to the heat and add remaining oil. Cook scallops 3 to 4 minutes on each side or until caramel in color. Squeeze the juice of 1/2 lemon over the pan and transfer skewers to serving platter along side shrimp.

1/2 cup mayonnaise
1/4 cup hot cherry peppers, chopped
3 tablespoons red wine vinegar
3 tablespoons finely chopped fresh flat-leaf parsley
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
4 tablespoons olive oil, divided
2 teaspoons finely chopped fresh thyme
3 cloves garlic, finely chopped
Salt and freshly ground black pepper
4 slices good white bread, crusts removed and finely processed
1 teaspoon finely grated lemon zest
16 to 20 large sea scallops, patted dry
Special equipment: 6-inch wooden skewers, soaked in water

Steps:

  • Put the mayonnaise, cherry peppers, vinegar, 2 tablespoons parsley, mustard, lemon juice, 2 tablespoons olive oil, thyme and garlic in a blender. Season with salt and pepper and puree until fairly smooth. Set aside.
  • Heat the remaining 2 tablespoons oil in a medium saute pan over high heat. Add the breadcrumbs and cook until lightly golden brown. Remove from the heat and stir in the remaining 1 tablespoon parsley and the lemon zest. Season with salt and pepper.
  • Preheat the grill for high heat direct grilling.
  • Skewer 2 or 3 scallops onto 2 skewers so that the scallops lay flat. Brush both sides with oil and sprinkle with salt and pepper. Grill the scallops until well caramelized on one side, about 3 minutes. Flip and cook another 30 seconds or so. Remove to a platter, drizzle with the vinaigrette and sprinkle with the breadcrumbs.

2-inch finger of fresh ginger, peeled and minced
1/2-cup rice wine vinegar
1/4-cup soy sauce
1/4-cup light miso
15 clean scallions cut into 2-inch lengths, using only the pale green and white sections of the onion

Steps:

  • In small bowl, mix first five ingredients to make sauce. Assemble skewers by placing one scallop (or two-three bay scallops) and one piece of scallion on each skewer. (These skewers can be prepped a day ahead and kept chilled in the fridge, then grilled a few hours before party time and kept warm until serving.)
  • Brush with ginger soy sauce and cook about two minutes per side or until just opaque. Be careful not to overcook scallops or they'll get a rubbery texture. Continue to brush with sauce throughout cooking.

2 pounds large sea scallops, rinsed
1/4 cup fresh orange juice
2 tablespoons fresh lime juice
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
1 large bunch fresh thyme
5 small oranges, cut into eighths
20 fresh bay leaves

Steps:

  • Remove small muscle from sides of scallops, and discard. Combine juices, oil, and salt and pepper to taste. Crush a few sprigs of thyme, and add to marinade. Stir in scallops. Marinate in the refrigerator for 1 to 3 hours.
  • Heat a grill or grill pan to medium hot, and place grid 4 inches above coals. Double-skewer scallops, alternating with orange sections. Tuck a sprig of thyme or skewer a bay leaf between each scallop and orange. Lay skewers in a pan, and pour remaining marinade over them.
  • Grill for 2 to 3 minutes on each side, until scallops are opaque and lightly charred. Serve immediately.

1/3 cup lime juice

1/3 cup mayonnaise
1 1/2 teaspoons salt

1 large or 2 small jicama, peeled and shredded
1/2 bunch cilantro, leaves picked and chopped coarsely
2 Italian Roma tomatoes, cut crosswise 1/4-inch thick
1 ripe avocado, peeled and diced

Steps:

  • Preheat grill. Place scallops in large bowl Whisk together lime juice and olive oil in small bowl. Drizzle 3 tablespoons lime/oil mixture over scallops and let marinate 5 minutes. Combine rest of lime/oil mixture with mayonnaise. Place jicama in a medium bowl and pour dressing over; season with 1 teaspoon salt and 1/4 teaspoon pepper.
  • Thread 67 scallops on one skewer then take another skewer and insert it into scallop skewer about 1/2-inch away from and parallel to the first one. Repeat with remaining scallops to form 4 skewers. Season skewers with remaining salt and pepper and place on the hot grill. 2 tablespoons pre-mixed jerk seasoning
1/2 red pepper, large dice
1/2 red onion, large dice
1/2 pablano pepper, diced large
1 packages pre-made polenta, sliced into large batons
1/2 cup all-purpose flour, for dredging
1 red pepper, roasted and peeled
1 tablespoon almonds
1/4 cup olive oil
1/4 cup cherry tomatoes, roasted
2 cloves garlic
1 tablespoon sherry vinegar
Kosher salt
Freshly ground black pepper
2 quarts canola oil, for frying

Steps:

  • Soak skewers in water for 30 minutes to 1 hour.
  • Preheat the grill. Preheat frying oil to 375 degrees F.
  • Marinate the scallops and beef in jerk seasoning. Let sit for 10 minutes refrigerated.
  • In a blender add in the roasted peppers, tomatoes, almonds, garlic, oil and vinegar. Blend well and season with salt and pepper. Set aside.

  • Sprinkle combined herbs and spices over skewers and rub.
  • Spray heated pan with cooking spray and sear shrimps 3 minutes on each side or until curled and pink.
  • Squeese the juice of 1/2 lemon over the pant and remove to a warm platter.
  • Return pan to heat and spray again with cooking spray.
  • Cook scallops 3 to 4 minutes on each side or until carmel in color.

The tangy mango sauce makes a great addition to this Australian seafood celebration.

1/2 c mango chutney
1/2 c orange juice
1/4 c sweet and tangy barbecue sauce
8 pineapple chunks, each about 1-inch square
12 large prawns, peeled and deveined
12 large sea scallops
8 cherry tomatoes
8 pearl onions, blanched, peeled

Steps:

  • 1. In a food processor or blender purée chutney, orange juice, and barbecue sauce until smooth.
  • 2. Thread four 12-inch skewers in the following order; pineapple, prawn, scallop, tomato, onion, prawn, scallop, tomato, onion, prawn, scallop, pineapple.
  • 3. Brush skewers liberally with sauce and place in center of cooking grate. Grill 6 to 8 minutes or until prawns are pink and scallops are opaque, turning and brushing liberally with sauce again halfway through grilling time.
  • 4. Serve with remaining sauce for dipping.

3 Tbsp. rice vinegar, divided
1 tsp. plus 2 Tbsp finely chopped lemongrass, * tough outer stalks removed
½ tsp. oriental sesame oil
4 Tbsp. canola oil, divided
10 asparagus spears
2 cups mixed baby greens
6 large sea scallops (about 8 oz), side muscles removed
2 Tbsp. rice flour**
2 8-inch wooden skewers

Steps:

  • Whisk 1 Tbsp. rice vinegar, 1 tsp. lemongrass, and sesame oil in small bowl. Gradually whisk 3 Tbsp. canola oil into dressing. Cook asparagus in large pot of boiling salted water until crisp-tender, about 2 minutes. Drain; pat dry. Fan out 5 asparagus spears on each of 2 plates, with tips spread across plate. Place greens over bottom ends of asparagus. Sprinkle scallops with salt and pepper. Place 1 Tbsp. lemongrass in small bowl. Place rice flour in another small bowl. Press scallops into lemongrass to adhere, then dredge in flour. Thread 3 scallops on each skewer, leaving ½-inch space between each. Heat remaining 1 Tbsp. canola oil in heavy large skillet over medium-high heat. Add scallops and cook until just opaque in center and browned on both sides, about 2 minutes per side. Place 1 scallop skewer across tips of asparagus. Add remaining 2 Tbsp. rice vinegar and 1 Tbsp. lemongrass to skillet. Boil until reduced to 2 tsp., about 1 minute. Drizzle over scallops. Drizzle dressing over greens and asparagus and serve.

MUSHROOM-SCALLOP SKEWERS



Mushroom-Scallop Skewers image

Smoky bacon and earthy mushrooms complement tender scallops in an appetizer that's ready in 25 minutes.

1/4 cup orange juice
2 tablespoons packed brown sugar
1 teaspoon grated orange peel
1/2 teaspoon ground ginger
1 clove garlic, finely chopped
14 bay scallops (1/4 to 1/3 lb)
14 baby portabella mushrooms (1 1/2 to 2 inches), stems removed
14 slices packaged precooked bacon (from 2.1-oz package)
Fresh orange curls, if desired

Steps:

  • Heat oven to 425°F. Line 15x10x1-inch pan with cooking parchment paper. In medium bowl, mix orange juice, brown sugar, orange peel, ginger and garlic. Add scallops; toss to coat.
  • Place 1 scallop in each mushroom cap. Wrap each with 1 bacon slice, enclosing scallop. Secure with toothpick. Dip in orange juice mixture; place in pan.
  • Bake 8 to 10 minutes or until mushrooms are tender and scallops are opaque. If desired, replace each toothpick with 4-inch wooden skewer.
