A very "upper-crust" savoury scrambled eggs recipe which dates back to Victorian times; this dish would have been served at the END of a large five or six course meal! Nowadays, it is more likely - one assumes - that it will be served at breakfast, brunch or as a light snack! This uses Gentleman's Relish, I have the "secret" recipe posted on Zaar! Recipe #228778

2 slices whole meal bread
butter
gentleman's relish
4 -6 tablespoons milk
cayenne pepper
2 eggs
6 drained anchovies
1 teaspoon capers

Steps:

  • Remove the crusts, if you wish and toast the slices of bread.
  • Spread with butter and Gentleman's Relish.
  • Cut each slice in half.
  • Melt a small piece of butter in a saucepan.
  • Put the milk, eggs and a pinch of cayenne pepper into a bowl and whisk well.
  • Pour this onto the butter in the pan and stir over a low heat until it begins to thicken.
  • Remove from heat and keep stirring, then add the capers.
  • The mixture will become creamy.
  • Place the toast onto two plates and divide the mixture between them.
  • Cut the anchovies into thin strips and decorate the toasts by making a criss-cross pattern with them.

This is a gorgeous version of the traditional Scrambled Eggs that we love in our house. Sunday mornings under the patio with lots of juice, coffee, hot buttered toast and our eggs.

1 ripe tomatoes, chopped
3 slices bacon, rind removed, chopped
1 brown onion, chopped
4 large field mushrooms, chopped (or a handful of small ones)
1 tablespoon fresh parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1 pinch black pepper (freshly cracked is best)
8 eggs

Steps:

  • In a large frypan over medium heat, saute onion and bacon until soft.
  • Add tomato and mushrooms, and cook, stirring a further 2 minutes.
  • Add herbs and stir through.
  • crack eggs into a jug and whisk until just combined, add to frypan with other ingredients.
  • Let eggs rest for 30 seconds, then scrape bottom of pan, lifting eggs. This forms the egg mix into curds. Continue doing this until the eggs are firm and cooked to your liking.
  • Serve with hot buttered toast.

4 large eggs
4 large egg whites
fresh ground pepper, to taste
1 teaspoon canola oil
2 scallions, green tops only, thinly sliced (green onions)
1 ounce smoked salmon, thinly sliced

Steps:

  • Whisk eggs, egg whites and pepper in a small bowl until well blended.
  • Heat oil in a nonstick skillet over medium-low heat. Add onion greens and cook, stirring, until softened, about 30 seconds.
  • Pour the eggs into the pan and cook until they just begin to set, about 10 seconds; stir in salmon. Cook, stirring gently from time to time, until the eggs have thickened into soft, creamy curds, 3 to 5 minutes.
  • Serve immediately.

1 lb potato
1/2 pint milk
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon Tabasco sauce
1/8 teaspoon nutmeg
10 eggs
2 ounces butter
2 onions (finely chopped)
1 lb ground pork
2 tablespoons flour
1/2 cucumber (thinly sliced)
3 tomatoes (halved & seeded)
2 tablespoons fresh parsley (chopped)
1/4 teaspoon pepper

Steps:

  • Preheat oven to 325°F (160°C).
  • Peel potatoes & cook in boiling salted water for 15-20 min till tender. Drain & mash w/4 tbsp of the milk, half the salt, the paprika, Tobasco & nutmeg. Set aside.
  • Hard boil 6 of the eggs, drain of hot water & cover w/cold water to cool. When cool - shell, halve & set aside.
  • Melt butter in a pan & fry the onion & pork till the pork is browned. Sprinkle w/the flour, stir well & cook for 3 minutes.
  • Spread the mashed potato mix in a 10-in rd greased ovenproof dish, cover w/the pork mixture & layer the cucumber slices atop the pork mix.
  • Place the tomato halves (cut side down) at 6 equal intervals along the outside edge of the dish. Then place 2 egg halves (cut side down) in front of ea tomato half to create 6 pie-like portions.
  • Whisk the remaining 4 eggs, milk & salt w/the parsley & pepper. Pour this mixture over the dish & bake for 40 min or till it tests done using the knife method. (If it becomes well-browned & does not test done, tent w/aluminum foil till done).
  • TO SERVE: Allow to sit for a few minutes to become well-set, cut in 6 wedge-cut slices & serve.
  • TIMESAVER HINT: Boil potatoes in a pot lrg enough to also hold the eggs so they can be hard-boiled & cooling while the potato & meat mixtures are being prepared.

1 onion
1 apple
1 slice bacon
2 teaspoons oil
salt
pepper
1/4 teaspoon sugar
2 eggs

Steps:

  • Peel and slice the onion. Wash, core, and slice the apple. De-rind the bacon and cut into 1/2 in (1.25cm) pieces. Heat the oil or butter in a frying pan over a moderate heat. Add the bacon, onion and apple, and fry, stirring occasionally, until soft (about 5 minutes). Stir in the salt, pepper and sugar.
  • Remove from the heat. Break the eggs into a cup, one at a time, and pour on top of the onion mixture. Cover the pan with a lid, and cook for a further 3-5 minutes over a very low heat, until the eggs are as firm as you like them.
